This came from a "light" cook book and makes a great sustitute for heavy cream in dessert recipes. Do not overmix, it will cause it to become too liquidy. Cooking time reflects set time.

1 1/2 cups ricotta cheese or 1 1/2 cups cottage cheese
1 1/2 cups vanilla yogurt

Steps:

  • Combine the ingredients and mix until well blended and smooth.
  • Let stand at room temperature for 1 hour.
  • For best results, refridgerate at least 10 hours before using.
  • Use as needed.
