Citrus dressing:
1/4 cup Champagne vinegar or white wine vinegar
1/4 cup fresh orange juice
1 1/2 teaspoons fresh lemon juice
1 teaspoon fresh lime juice
1 teaspoon finely grated lemon peel
1 teaspoon finely grated lime peel
1 teaspoon finely grated orange peel
1/2 cup grapeseed oil or olive oil
Salad:
1 large head of escarole, coarsely torn
1 head of butter lettuce, coarsely torn
1 Granny Smith apple, quartered, cored, thinly sliced
1 cup fresh pomegranate seeds
2/3 cup hazelnuts, toasted , husked

Steps:

  • Citrus dressing:
  • Combine vinegar and next 6 ingredients in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper.
  • Salad:
  • Mix all ingredients in very large bowl. Toss with enough dressing to coat.

2 sliced garlic cloves
1 tablespoon olive oil
roughly chopped escarole
2 tablespoons oline oil
pinch red pepper flakes
pinch or salt
zest of 1/2 lemon juice
chopped toasted hazelnuts
grated parmesan

Steps:

  • Cook 2 sliced garlic cloves in 1 tablespoon olive oil in a skillet over medium heat until golden, 1 minute. Add 1 bunch roughly chopped escarole and toss. Cover and cook until just wilted, 2 minutes. Combine 2 tablespoons olive oil with a pinch each of red pepper flakes and salt; add the zest of 1/2 lemon and the juice of the whole lemon. Toss with the escarole and season with salt. Top with chopped toasted hazelnuts and grated parmesan.

2 cups cubed country bread (about 1-inch dice)
2 tablespoons olive oil
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large or 2 small heads escarole
5 tablespoons extra-virgin olive oil
1 large shallot, finely chopped
2 olive oil-packed anchovy fillets, chopped
Pinch red pepper flakes
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • For the croutons: Preheat the oven to 350 degrees F; position an oven rack in the middle of the oven.
  • In a large bowl, toss the bread cubes with the olive oil, salt and pepper. Spread the bread cubes on a rimmed baking sheet and bake until golden brown, 8 to 10 minutes. Let cool. (The croutons will keep in an airtight container for up to 3 days.)
  • For the escarole: Preheat a grill on medium heat.
  • Cut the escarole head in half, then wash and dry. Grill the escarole cut-side down to give it a little char, about 3 minutes. (Do not flip and cook the other side. We are looking for just some of the escarole to be charred.) Set aside and let cool.
  • For the warm anchovy vinaigrette: In a small saucepot, heat 1 tablespoon olive oil over low heat until shimmering. Add the shallots and anchovies and cook, stirring, until the shallots have softened and the anchovies fall apart and dissolve in the oil, 2 to 3 minutes. Stir in the red pepper flakes. Add the vinegar and cook, stirring, until it has reduced slightly, about 1 minute. Whisk in the remaining 4 tablespoons oil.
  • Cut the escarole into 1-inch pieces and put in a large bowl. Add the vinaigrette and croutons and toss to combine. Season with salt and pepper.

1 tablespoon cider vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
2 heads escarole (2 lb), dark outer leaves removed and pale green and yellow inner leaves torn into bite-size pieces (16 cups)
1/4 cup fresh flat-leaf parsley leaves
1/3 cup hazelnuts, toasted and chopped

Steps:

  • Cook garlic in oil in an 8-inch nonstick skillet over moderate heat, stirring, until fragrant, about 30 seconds. Add currants and cook, stirring, 20 seconds, then whisk in vinegar, salt, and pepper.
  • Toss escarole, parsley, and nuts with warm dressing in a large bowl and serve immediately.

  • Make lemon-basil oil:
  • Mix 1/3 cup olive oil, a strip of lemon zest, 8 torn basil leaves and a pinch of salt; infuse 2 hours. Soak 1/2 thinly sliced red onion in water for 10 minutes to mellow the bite. When ready to serve, toss 1 head chopped escarole, the onion slices, 2 sliced celery stalks, 3/4 cup chopped green olives and a few tablespoons olive juice, 2 segmented lemons and 1/4 cup each toasted pine nuts and golden raisins in a serving bowl. Discard the zest from the infused oil, drizzle over the salad and season with salt and pepper.

1 head radicchio, thinly sliced

1/4 cup grated Parmesan, plus several shavings

Steps:

  • Combine the escarole and radicchio in a large salad bowl. Toss in the dates.
  • In a jar with a tight-fitting lid, combine the lemon juice, mustard, grated Parmesan cheese, olive oil, and black pepper. Shake well to combine. Pour over the salad and toss.
  • Grate more Parmesan on top and serve.

PORK MILANESE & ESCAROLE SALAD WITH PICKLED RED ONIONS, HAZELNUTS & PECORINO



Pork Milanese & Escarole Salad with Pickled Red Onions, Hazelnuts & Pecorino image

To me, absolutely anything fried is delicious. In this recipe I take a traditional crispy, crunchy, salty, fried preparation for chicken and apply it to pork. I serve the pork with escarole-the unsung hero of the salad world (I'm on a mission to popularize escarole). Then I toss some chopped nuts and pickled onions into the mix. My mouth is so excited it just doesn't know which way to go; there's crispy pork, crunchy escarole, salty sweet nuts, and bright acidic onions. So many different things are going on in this dish that even though it's super-easy to make, it's also incredibly exciting to eat!

Yield serves: 4

Number Of Ingredients 18

3/4 cup red wine vinegar
1 tablespoon kosher salt
1 1/2 teaspoons sugar
2 or 3 shots of Tabasco or other hot sauce
1 red onion, sliced into very thin rings
1 cup all-purpose flour
2 large eggs, beaten with 1 tablespoon water
1 1/2 cups panko (Japanese bread crumbs)
1/2 cup freshly grated Parmigiano
4 thick-cut boneless pork chops, butterflied and lightly pounded
Kosher salt
Extra virgin olive oil
1/2 cup freshly grated Pecorino
1/2 cup hazelnuts, toasted (see page 17)
2 tablespoons fresh Italian parsley, chopped
1 head of escarole, cut into bite-size pieces
Pickled Red Onions (recipe below)
Extra virgin olive oil

Steps:

  • In a medium bowl, combine the vinegar with 1/2 cup cold water. Add the salt, sugar, and Tabasco and stir. Add the sliced onions and let sit for at least 1 hour.
  • Set up your standard breading procedure (see page 51): one bowl with the flour, one with the egg-water mixture, and one with the panko and grated Parmigiano combined. Have a baking sheet handy to hold the pork after breading.
  • Season the pork with salt. Using one hand for dry ingredients and one hand for wet, take each piece of pork through the breading procedure: Dredge it lightly in the flour, shake off the excess, dip it in the egg wash, then pack on the panko. Lay the breaded pork on the baking sheet and refrigerate for at least 1 hour.
  • Preheat the oven to 200°F.
  • Pour 1/2 inch of olive oil into a large sauté pan and bring to medium-high heat. Set up your drying situation next to the stove by lining a baking sheet with a couple layers of paper towels. Test to see if the oil is hot enough by sprinkling a bit of flour or a few bread crumbs into it. It should sizzle; if it doesn't-WAIT. Once the oil is hot, add the pork, working in batches so you don't crowd the pan. Cook the first side of the pork until golden brown and crispy, 3 to 4 minutes; turn and brown the other side. When the pork is done, lay it on the paper towels to drain off the excess oil and sprinkle with salt. Then keep the pork in the oven while you cook the second batch.
  • Put the Pecorino, hazelnuts, and parsley in the food processor and pulse until coarsely chopped.
  • In a large bowl, combine the escarole, hazelnut mix, and some of the pickled red onions; dress this mixture with olive oil and some of the pickling liquid and toss to combine. To serve, place a pork chop on a serving plate and top with the lovely salad.
  • It's good to bread ahead! If you have the time, let the pork sit for about an hour to really set the breading. If you're in a hurry-skip it.

2 cups (packed) basil leaves, torn into bite-sized pieces
Flaky sea salt

Steps:

  • Heat 1 Tbsp. olive oil in a small skillet over medium. Add hazelnuts and toast, stirring occasionally, until golden, 2-3 minutes. Season with 1/8 tsp. kosher salt. Remove from heat; set aside.
  • Finely chop garlic clove. Using the side of a chef's knife, mash garlic with 1/4 tsp. kosher salt to form a paste. Whisk garlic paste, vinegar, mustard, and 1/4 tsp. pepper in a medium bowl. Whisk in 1/2 cup extra-virgin olive oil in a slow and steady stream.
  • Place escarole, pears, Parmesan, basil, and about 1/3 of the reserved hazelnuts in a large bowl and drizzle with vinaigrette. Gently toss until salad is evenly dressed; season with sea salt and pepper. Top with remaining hazelnuts.
  • Do Ahead
  • The dressing can be made up to 1 day ahead. Whisk well before using.
