BREAKFAST QUICHE
I enjoy preparing hearty country breakfasts for the guests at my bed-and-breakfast. This fluffy golden pie, which has lots of cheese and bacon, is a most satisfying entree.-Mark Clark, Twin Mountain, New Hampshire

- Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

QUICHE LORRAINE
The first quiche to come to the attention of the American public was the quiche Lorraine in the 1950s. Since then we have gone through what has amounted to the quiching of America. Like ice cream, the quiche appears in all flavors -- from asparagus to zucchini. This recipe makes enough filling for a pie dish. If you use a tart pan, expect to have extra custard.

- Preheat the oven to 400 degrees.
- Line a nine-inch pie plate with the pastry. By all means build a rim with the pastry and flute it. This is essential for the amount of custard indicated in this recipe.
- Cover the bottom of the pastry with a round of parchment paper and add enough dried beans or peas to partly fill the shell. Bake 10 minutes.
- Reduce the oven heat to 375 degrees. Remove and discard the beans and parchment paper and set the pastry-lined pie plate aside.
- Cook the bacon until crisp and remove it from skillet. Pour off all but one tablespoon of the fat remaining in the skillet. Cook the onion in the remaining fat until the onion is transparent.
- Crumble the bacon and sprinkle the bacon, onion and cheeses over the inside of the partly baked pastry.
- Combine the eggs, cream, nutmeg, salt, pepper and Tabasco sauce to taste. Strain the mixture over the onion-cheese mixture. Slide the pie onto a baking sheet.
- Bake the pie until a knife inserted one inch from the pastry edge comes out clean, about 25 minutes. Remove to a wire rack. Let stand five or 10 minutes before serving.

- Spread sausage evenly in bottom of prepared pie shell.
- Sprinkle cheese, potatoes and onion over sausage.
- Pour eggs over all.
- Bake for 5 minutes, reduce heat to 375F and bake 45-55 minutes, until lightly browned and well set.
ENGLISH QUICHE LORRAINE
Growing up in the U.K. we used to make this all the time. Our guests have asked so many times for this recipe. Well here it is. I bake this quiche for friends at Christmas. Just wrap up in aluminum and voila! A tasty Christmas breakfast that they can wake up to.

- Preheat the oven to 450 degrees F (220 degrees C). Press the puff pastry into the bottom and up the sides of a shallow casserole dish or 8 inch pie plate.
- In a small bowl, beat eggs and milk with a fork until blended. Season with salt and pepper. Sprinkle a thin layer of Swiss cheese in the bottom of the pastry crust. Sprinkle crumbled bacon over the cheese. Pour the egg mixture into the pastry and sprinkle with the rest of the cheese. Arrange slices of tomato on top.
- Bake in the preheated oven for 20 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C). Continue to bake for an additional 30 minutes, or until crust is browned.

- Preheat the oven to gas 6, 200C, fan 180°C Put the flour, butter and salt in a food processor and pulse until the mixture resembles breadcrumbs. Add the yolk and 4tbsp cold water, pulse until the dough comes together (add a little more water if needed). Turn onto a floured work surface and knead gently. Roll out to roughly 1/2 cm (1/4 in) thick.
- Line a 25cm (10in) loose-bottomed tart tin evenly with the pastry, leaving an overhang. Prick the base all over with a fork, then transfer the tin to a baking tray and chill for 10 minutes.
- Take the pastry case out of the fridge and line it with nonstick baking paper, then fill with baking beans and blind bake for 15 minutes. Remove the beans and the paper, then return to the oven for a further 8-10 minutes, or until golden in colour. When the pastry is cool to the touch, trim the edges with a knife.
- Meanwhile, heat 1tbsp of oil in a nonstick frying pan and fry the bacon for 2-3 minutes each side, or until golden, then remove and set aside. Add the remaining oil to the pan and cook the whole mushrooms for 3 minutes, until softened. Set aside.
- Spread the ketchup over the base of the quiche, then top with the tomato halves, cut side up, the mushrooms, and the bacon.
- Beat the eggs together with the double cream and then season with salt and pepper. Pour the mixture into the case and bake for 25-30 minutes until the egg is set and the top is golden in places.
