2 tablespoons butter, softened
8 slices white bread
1/2 cup smooth peanut butter
1 large, ripe banana, sliced
1/4 cup honey
12 slices bacon, Sauteed until crispy (optional)

Steps:

  • Spread the butter on 1 side of each slice of bread. On the other side of half of the slices spread peanut butter. Place banana slices on top of peanut butter. Drizzle honey over bananas. Place 3 bacon slices on top of the banana, then place the remaining buttered bread slices on top, butter-side-out.
  • Place sandwiches on a preheated grill pan or griddle. Flip them over when they become golden brown and crispy. When the sandwiches are browned on both sides, remove to plates. Slice in half and serve immediately.

2 cups buttermilk
2 eggs
2 teaspoons baking powder
2 teaspoons sugar
1 teaspoon salt
6 tablespoons butter, melted
1 cup all purpose flour
1 cup buckwheat flour
2 tablespoons butter, cold plus more as needed
Peanut butter, for topping
Sliced bananas, for topping
Honey, for topping

Steps:

  • In a large bowl, whisk together buttermilk, eggs, baking powder, sugar, salt and butter.
  • In another large bowl mix together all-purpose flour and buckwheat flour.
  • Slowly add flour into the wet ingredients mixing with a whisk. Mix until there are no lumps and the batter is smooth and velvety.
  • In a large cast iron skillet or flat grill pan over medium-high heat, melt a tablespoon of butter. Ladle pancake batter onto skillet to desired size. Using the ladle, form pancake into circular shape. Cook on each side for 2 to 3 minutes or until golden brown. Set pancakes aside and keep warm. Repeat with remaining ingredients.
  • Once completed, spread peanut butter on a pancake, layer it with sliced bananas and drizzle it with honey. Top the pancake with another pancake to form a sandwich. Repeat with remaining pancakes and serve with extra honey.

6 ounces fat-free strawberry yogurt
1/2 cup chopped strawberries
1/4 cup peanut butter cereal (with less than 3g fat per serving), lightly crushed
1 teaspoon peanut butter chips, chopped*
Fresh strawberries, as an accompaniment, optional

Steps:

  • Spoon 1/2 the yogurt into a parfait glass or any glass.
  • Top with 1/2 the strawberries, followed by 1/2 the cereal and 1/2 the chips.
  • Continue layering with remaining yogurt, strawberries, cereal, and chips. Serve with strawberries, if using. Dig in!

CINNAMON-SUGAR ENGLISH MUFFINS

3 slices bacon
1/2 cup (1 stick) salted butter, softened
1/2 cup sugar
1 mounded teaspoon ground cinnamon
Splash of vanilla extract
3 English muffins, split
1/4 cup peanut butter
1 Granny Smith apple, sliced thin

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the bacon to a skillet over medium heat and fry until crisp, 10 to 12 minutes.
  • Meanwhile, add the butter, sugar, cinnamon and vanilla to a bowl. Using a fork, mash everything together until completely combined. Spread the mixture onto the split side of each English muffin half, completely covering the surface to the edges.
  • Place the English muffins on a baking sheet and bake for 10 minutes, then remove from the oven. Turn the oven to the broiler setting and broil until golden brown and bubbling, about 2 minutes. Watch carefully so they do not burn.
  • While the bacon and muffins cook, add the peanut butter to a microwave-safe bowl. Microwave until heated through and pourable, about 30 seconds.
  • Assemble by topping the muffin halves with a layer of sliced apples and drizzling the warm peanut butter over the top in a thin stream. Cut or tear the bacon rashers in half and place 1/2 piece of bacon onto each muffin half, then serve.

2 bananas
1/4 cup all-natural peanut butter
2 large eggs
1 teaspoon pure vanilla extact
1 3/4 cups unsweetened almond milk
2 cups all-purpose flour
2 tablespoons brown sugar
2 teaspoons baking soda
1/2 teaspoon kosher salt
Olive oil spray

Steps:

  • Preheat a waffle maker. Preheat the oven to 200˚F
  • In a medium bowl, use the back of a fork to smash the bananas with the peanut butter. Add the eggs, vanilla, and almond milk and whisk to combine. Set aside.
  • In a large bowl, combine the flour, brown sugar, baking soda, and salt. Fold the wet mixture into the dry mixture and mix until just combined.
  • Spray the waffle maker with olive oil spray. Spoon 1/3 cup batter into the waffle maker and cook until lightly browned, according to the manufacturer's instructions. As the waffles are done, transfer them to a baking sheet and place the sheet in the oven to keep warm. Repeat to make the rest of the waffles, spraying the waffle maker with olive oil spray before adding the batter each time.
  • If you like a crispy waffle, pop it in the toaster for a minute before serving and it will crisp up to perfection.
