Categories     Main Course

Time 11m

Number Of Ingredients 3

1 recipe Balsamic Steak Marinade
1 tbsp Unsalted butter
4 8-oz Sirloin steaks

Steps:

  • Prepare the steak marinade according to the instructions here. Marinate the steaks for 3-8 hours (but not longer). (Alternatively, you can simply season generously with salt and pepper and skip the marinade, but the marinade makes them so juicy!)
  • Remove the steaks from the fridge about 30 minutes before cooking, to let them come to room temperature. Pat the steaks dry with a paper towel.
  • Preheat the oven to 400 degrees F (204 degrees C). At the same time, preheat a cast iron grill pan on the stovetop over medium-high heat, about 3 minutes.
  • Once the oven is just a few minutes away from being preheated, add the butter and heat until melted. Add the steaks in a single layer. Sear for about 2 minutes, without moving around, until browned with grill marks on the bottom. Flip and sear for 1-2 minutes on the other side.
  • Transfer the pan to the preheated oven. Bake for 2 to 6 minutes, to your desired level of doneness. For a 1.5-inch (4 cm) thick steak, that's usually 2 minutes for rare, 3 minutes for medium rare, 4 minutes for medium, 5 minutes for medium-well and 6 minutes for well done. Use a meat thermometer to be sure - 120 degrees F (49 degrees C) for rare, 130 degrees F (54 degrees C) for medium rare, 140 degrees F (60 degrees C) for medium, 150 degrees F (66 degrees C) for medium well, and 160 degrees F (71 degrees C) for well done. Steak temperature will increase by an additional 5 degrees when resting in the next step.
  • Remove the sirloin steaks from the oven and transfer to a plate. (Do not leave in the pan or they will be overcooked.) Let the steaks rest for 5 minutes before slicing.

ELSWET'S BAKED SIRLOIN

Elswet's Baked Sirloin image

This recipe says 8-ounces of bacon-wrapped sirloin steaks. It indicates 2 of the 4-ounce steaks. We get these beautiful little 4-ounce bacon-wrapped sirloins with our meat order every month. Neither of us [my Wife and I] had any experience with these little delicacies, but in short time, my sweet Wife had the perfect recipe. At least, WE like it. LOL We hope you do, too.

Categories     Steak

Time 9h30m

Yield 2 serving(s)

Number Of Ingredients 10

8 ounces bacon wrapped sirloin steaks
2 garlic cloves, mashed
1 medium onion, quartered and microwaved for 5 minutes
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
1/2 teaspoon ground rosemary
1/2 teaspoon rubbed sage
1/2 teaspoon salt substitute or 1/2 teaspoon lemon juice
1/2 teaspoon pepper
1 teaspoon 100% virgin olive oil

Steps:

  • Preheat oven to 350°F.
  • Line a loaf [bread] pan with aluminum foil. Grease the bottom with the full 1 teaspoon of olive oil, and place your bacon-wrapped sirloin steaks into the pan. Space them well from one another and from the sides, deposit a crushed garlic clove atop each steak, and arrange onion quarters in the corners of the pan.
  • Pour the liquid ingredients equally over both steaks, then sprinkle the dry ingredients evenly.
  • Cover the pan with aluminum foil and marinade overnight (tastes fantastic even when you don't have time for this step).
  • Bake for 45 minutes on 350°F, after which, baste, turn onion quarters, recover, and bake for a additional 45 minutes (a total of 90 minutes baking time).
  • Remove to serving plate, garnish, and serve. Enjoy!

TOP SIRLOIN ROAST

Top Sirloin Roast image

This is a wonderful garlic-infused roast that has replaced my traditional pot roast recipe. Be sure to use a good-quality top sirloin roast for the most tenderness and flavor. I love using the traditional potatoes and carrots but also add the red pepper and mushrooms for more nutritional value. Use an amber beer or a medium slightly-darker beer, such as Yuengling® Black and Tan.

Categories     Main Dish Recipes     Roast Recipes

Time 1h45m

Yield 8

Number Of Ingredients 16

1 (3 pound) beef top-sirloin roast
3 cloves garlic, slivered, or to taste
3 cloves garlic, minced
1 teaspoon ground paprika, or to taste
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
6 Yukon Gold potatoes, quartered
5 carrots, cut into 2-inch pieces
2 large sweet onions, quartered
3 cubes beef bouillon
½ cup hot water
1 cup beef broth
½ cup beer
2 bay leaves, broken, or more to taste
2 large red bell peppers, cut into 2-inch pieces
½ cup mushrooms

Steps:

  • Make small slits in the roast using a sharp knife; tuck slivered garlic into each slit. Rub minced garlic, paprika, salt, and ground black pepper over the entire roast. Set aside until roast comes to room temperature, 15 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange potatoes, carrots, and onions in an even layer in a 9x12-inch roasting pan. Dissolve beef bouillon cubes in hot water in a small bowl and pour over vegetables. Pour in beef broth and beer.
  • Place roast on top of the vegetables, making sure it is not submerged in the broth mixture. Place bay leaf pieces around the roast.
  • Bake roast in the preheated oven until internal temperature reaches 150 degrees F (66 degrees C) for medium, 45 to 60 minutes. Transfer roast to a platter; cover with aluminum foil, and allow to rest until internal temperature reaches 155 degrees (68 degrees C), about 10 minutes.
  • Increase oven temperature to 425 degrees F (220 degrees C). Add red pepper and mushrooms to the roasting pan and return it to the oven. Bake until vegetables are tender and lightly browned, 15 to 20 minutes.
  • Thinly slice the roast crosswise. Serve with vegetables; spoon pan juices over meat and vegetables.

STEAK TIPS IN THE OVEN

Steak Tips in the Oven image

Steak tips in the oven with a very flavorful steak tip marinade that is best suited for a hearty winter dish but can be enjoyed anytime. Feel free to experiment with the ingredients because I don't think you can really go wrong.

Provided by Ed Porter

Time 6h40m

Yield 8

Number Of Ingredients 12

¾ cup soy sauce
¼ cup olive oil
¼ cup balsamic vinegar
2 tablespoons brown mustard
2 tablespoons maple syrup
2 tablespoons molasses
1 tablespoon sesame oil
1 teaspoon ground cinnamon
3 whole cloves
salt and ground black pepper to taste
1 cup beef broth, or as needed
2 pounds sirloin steak tips

Steps:

  • Whisk soy sauce, olive oil, balsamic vinegar, mustard, maple syrup, molasses, sesame oil, cinnamon, cloves, salt, and pepper together in a large glass or ceramic bowl. Add steak tips and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 6 to 24 hours.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove steak tips from the marinade and shake off excess. Discard the remaining marinade. Put steak tips into a baking dish and fill the bottom of the dish with beef broth.
  • Bake in the preheated oven until steak tips are beginning to firm and are hot and slightly pink in the center, about 25 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
