This drink captures the flavors of Mexican-style hot chocolate; the Goldschlager adds a subtly cinnamony undertone and the burnt caramel adds a sweet richness not unlike piloncillo. Cheers --V

3/4 cup sugar
1/4 cup water, plus
2 tablespoons water
8 ounces finely chopped milk chocolate or 8 ounces semisweet chocolate
6 cups milk
6 ounces cinnamon schnapps, see Cook's note (recommended Goldschlager)
3 ounces golden rum

Steps:

  • Stir the sugar and 2 tablespoons of the water together in a heavy-bottomed saucepan. Cover and bring to a boil over medium heat. Uncover and continue to cook, swirling the pan but not stirring, until the sugar is a dark golden caramel, 7 to 10 minutes. (It should smell slightly burnt.).
  • Pull pan from the heat and carefully pour the 1/4 cup water into the caramel. Take care; it may spatter a lot. Whisk until smooth and allow to cool. (The burnt caramel can be held for up to 2 weeks at room temperature.)
  • When ready to serve: Put 3 tablespoons of the burnt caramel into 4 mugs or cups and top evenly with the chopped chocolate. Bring the milk to a simmer in a medium pan over medium heat. Pull pan from the heat and add the Goldschlager and rum; pour over the chocolate. Serve El Dorado Hot Chocolates with a spoon to stir the layers together.
  • Cook's Note: Goldschlager is a cinnamon flavored liqueur with small flecks of edible gold.

1/4 cup sea salt
1/4 cup freshly ground black pepper
One 5- to 7-pound brisket flat (use Choice or a higher grade)
One 2-pound block fast-melting white American cheese, such as Land O Lakes Extra Melt, cut into 1/2-inch cubes
Three 10-ounce cans diced tomatoes and green chiles
2 cups whole milk
2 white onions, julienne-cut
2 green peppers, julienne-cut
2 red peppers, julienne-cut
1/4 cup canola oil
1 tablespoon freshly ground black pepper
1 tablespoon sea salt
1/2 tablespoon granulated garlic
12 to 15 buns, such as challah or jalapeno-Cheddar buns
Your favorite BBQ sauce, warmed, for serving
Pickled jalapenos, for serving
Corn chips, such as Fritos, for serving, optional

Steps:

  • For the brisket: Preheat a smoker for smoking at 275 degrees F. (Don't beat yourself up trying to maintain the exact temperature. Stay within 25 degrees of your target, and you should be good.)
  • Mix together the salt and pepper in a bowl, then rub it all over the brisket. Smoke brisket until it reaches 165 degrees F, about 8 hours. Wrap with foil and continue to smoke until internal temperature reaches 203 degrees F and the thermometer slides in and out of the brisket like it was butter, about 2 hours more.
  • Let rest for at least 1 hour.
  • Chop the brisket.
  • For the queso: Set up a double boiler. Add the cheese, diced tomatoes and chiles and milk to the upper pan of the double boiler. Cook over medium-high heat, stirring continuously, until cheese is fully melted.
  • For the veggies: Mix the onions and peppers in a bowl. Toss with oil, pepper, salt and granulated garlic. Cook veggies in a saute pan, stirring continuously, over medium-high heat until veggies are translucent.
  • For the sandwiches: Toast buns. Add BBQ sauce to each half. Add nice handfuls of the chopped brisket to bottom buns. Add a little more of the BBQ sauce on top of the meat. Add queso, veggies and jalapenos to your desired heat. Add corn chips for a crunchy treat, if desired. Top with top buns.

GINGERBREAD HOT CHOCOLATE

Whisk in the chopped chocolate a little at a time until smooth. Divide among 6 to 8 mugs and garnish with whipped cream and mini marshmallows.

2 tablespoons unsalted butter
2 tablespoons vegetable shortening
1/4 cup plus 1 tablespoon granulated sugar
1/2 teaspoon kosher salt
1 cup cake flour (not self-rising)
Vegetable oil, for frying
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
For the hot chocolate:
2 1/2 cups milk
2 ounces semisweet chocolate, chopped
1 cup dulce de leche, plus more for topping
1 cinnamon stick, broken in half
Whipped cream, for topping

Steps:

  • Make the churros: Line a baking sheet with parchment paper and fit a pastry bag with a 1/2-inch star tip; set aside. Combine 1 cup water, the butter, shortening, 1 tablespoon granulated sugar and the salt in a medium saucepan and bring to a boil. Stir in the flour with a wooden spoon, then reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Let cool slightly, then transfer the dough to the pastry bag. Pipe 1-inch logs onto the prepared baking sheet, using kitchen shears to snip off each piece (you should have 26 to 28 churros). Let rest at room temperature, about 20 minutes.
  • Meanwhile, make the hot chocolate: Bring the milk to a simmer in a saucepan over medium heat. Add the chocolate, dulce de leche and cinnamon stick. Cook, stirring, until the chocolate melts and the mixture is combined, about 2 minutes. Cover and keep warm over low heat.
  • Fry the churros: Heat about 2 inches of vegetable oil in a Dutch oven or large pot until a deep-fry thermometer registers 360 degrees F. Combine the remaining 1/4 cup granulated sugar, the brown sugar and ground cinnamon in a large bowl. Working in three batches, fry the churros until golden and crisp, 4 to 5 minutes. Remove with a slotted spoon and transfer to a rack set over a baking sheet. Let cool about 5 minutes, then add to the cinnamon sugar and toss to coat.
  • Remove the cinnamon stick from the hot chocolate and divide among mugs. Top with whipped cream and drizzle with dulce de leche. Serve with the churros.
