RESTAURANT STYLE SALSA

Restaurant Style Salsa image

Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

Time 5m

Number Of Ingredients 11

1/4 cup chopped onion ((white, brown or yellow))
1 tbsp jalapeño pepper (, seeds removed, roughly chopped (fresh best, canned ok))
400g / 14 oz canned crushed tomato (, best quality)
4 oz / 120g canned diced green chiles ((Note 1))
1/4 cup (packed) cilantro/coriander (, roughly chopped)
1/2 tbsp+ lime juice
1 clove garlic (, minced)
1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/4 teaspoon ground cumin

Steps:

  • Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
  • Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
  • Taste test with corn chip for salt and lime. Adjust if necessary.
  • Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

CROCK POT CABRITO EN SALSA (GOAT IN SAUCE)

Crock Pot Cabrito en Salsa (Goat in Sauce) image

This is my version of Cabrito en Salsa Monterrey style. Hope you enjoy my crock pot recipe. I am always looking for ways to make meals in a crock pot. This is my husband's favorite. I prefer roasted/grilled Cabrito. This is a great way to have your meal waiting for you when you come home at the end of the day!

Number Of Ingredients 14

3 pound(s) young goat (hind and leg portion are the meatiest) cut into medium size pieces
1 small onion diced
1 small bell pepper diced
1 stalk(s) celery with leaves diced
2 medium bay leaves
2 can(s) diced tomatoes
3 clove(s) garlic finely minced
2 - serrano chiles whole (adjust for heat)
1/2 teaspoon(s) mexican oregano dried
1 teaspoon(s) ground cumin
1 teaspoon(s) ground black pepper
1 teaspoon(s) salt (adjust to your taste)
2 tablespoon(s) oil for braising goat pieces
32 ounce(s) chicken broth to de-glaze pan and enough to cover goat and veggies in crock pot.

Steps:

  • Turn on crock pot to high and cover. Sprinkle goat pieces liberally with Salt and Pepper. Heat oil in pan. Place pieces in pan and brown on each side. This should take about 4-6 minutes each side Remove browned pieces and place in the crock pot
  • Add diced onion, bell pepper, celery, garlic, cumin and oregano to the pan with 1/2 cup of chicken broth to cook veggies and de-glaze the pan. When onions are translucent and other veggies are soft.
  • Add whole serranos to crock pot nestled in goat pieces. Add diced tomatoes with juices poured directly over the goat pieces to crock pot. Add sauteed veggies and any liquids in pan directly over tomatoes and goat pieces. Add enough chicken broth JUST to cover goat pieces. Save any extra chicken broth for another recipe. Place bay leaves on top and cover Cook on high for two hours and turn down to low for 2 or more hours OR cook on low for 6 - 8 hours. The meat should be very tender and will easily fall off the bone.
  • Remove bay leaves. Serve in bowls with fresh corn tortillas. Hope you enjoy!

EL TORITO SALSA (VERSION OF)

El Torito Salsa (Version Of) image

After searching and searching, I found a recipe for their salsa. This is the one I find is the closest. I wanted to share it since I have not found a recipe for this on Recipezaar. I am open to all feedback to make it better or more like the original. I love chips and salsa so as long as its good I'll eat it :) For a more milder salsa, cut the jalapenos and serranos portions in half. To give credit where it is due: original recipe by : Norma Kelley, updated by me.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 11

2 cups tomatoes (finely diced)
1/4 cup yellow onion (finely chopped)
2 green onions (finely chopped)
1 tablespoon jalapeno, seeded and diced
2 serrano chilies
2 teaspoons fresh lime juice
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 cup fresh cilantro
1/2 cup canned crushed tomatoes in puree

Steps:

  • Remove seeds and stems from jalapenos and serrano chilies.
  • Combine all ingredients in a large bowl, except the last two.
  • Put the last two in a blender/food processor and blend until chunky or to the consistency you prefer. If it is too thick add water a tablespoon at a time.
  • Add blended mixture to fresh ingredients and mix well.
  • Refrigerate until cold. The longer you refrigerate the better it will taste since the flavors will have time to marinate together.

Categories     Recipes

Number Of Ingredients 7

23 units tomatoes
1 units jalapeno
1 units serrano chili
0.5 units red onion
1 units lime
0.5 cups cilantro
1 units salt and pepper

Steps:

  • Start with chopping up 2 medium sized fresh tomatoes. Prepare the chilies. Be very careful while handling these hot peppers. If you can, avoid touching them with your hands. Use a fork to cut the chilies over a small plate, or use a paper towel to protect your hands. Wash your hands thoroughly with soap and hot water after handling and avoid touching your eyes for several hours. Set aside some of the seeds from the chilies.
  • Combine all the ingredients in a medium sized bowl. Taste. If too hot add more diced tomatoes. If not hot enough add pepper seeds.
  • Let sit for an hour for the flavors to combine.
