This is THE only cheese dip you will ever want or need. It tastes just like your local Mexican restaurant cheese dip.

1/2 pound White American Cheese
2 tablespoons of diced green chiles, chopped super fine
1/4 tsp garlic powder (optional)
3/4 cup to 1 cup milk
salt and pepper to taste

Steps:

  • Cube the cheese and place in a saucepan with green chiles, garlic powder and milk.
  • Heat on medium heat for 10-12 minutes until the cheese has melted.
  • Once it is all melted together, if the cheese is still too thick, you can add more milk to thin it out to your desired consistency
  • Season with salt and pepper to taste and enjoy

16 oz cottage cheese, small curd
16 oz sour cream
8 oz monterey jack cheese, shredded
1-2 bunch green onions, chopped
1 medium jalapeno, chopped
2 tsp worcestershire sauce
1/2-3/4 pkg lipton onion soup mix

Steps:

  • 1. Mix all ingredients together and refrigerate several hours, preferably overnight. Serve with tortilla chips, refried beans and salsa (see note). Use leftovers to spice up plain bean and cheese burritos.
  • 2. Alternate Recipe: Makes yummy cheesy enchiladas! Fill flour or corn tortillas with cheese dip, roll up, and lay in baking dish sprayed with non-stick cooking spray. Cover with verde enchilada sauce and queso cheese. Cover dish with foil and bake at 350° for 20-30 minutes. Serve with rice and/or refried beans.
  • 3. Play with the ingredients and amounts until you get the flavor and consistency you like. You can also lighten this dish by using low fat (not fat free) sour cream, cottage cheese, etc.

This dip is similar to white cheese sauces served in many Mexican restaurants. The amount of heat can be adjusted by adding your favorite chili pepper or crushed cayenne pepper to taste. As is, it is kid-friendly, quick, and delicious! It can be used as a dip for tortilla chips or a sauce for many Mexican dishes.

1 pound white American cheese, cubed
½ cup milk, or as needed
1 tablespoon butter or margarine
2 (4 ounce) cans chopped green chilies
2 teaspoons cumin
2 teaspoons garlic powder
2 teaspoons onion powder
cayenne pepper to taste

Steps:

  • Place cheese, milk, and butter in a medium saucepan over low heat. Cook until cheese has melted, stirring frequently. Stir in green chilies, cumin, garlic powder, onion powder, and cayenne pepper to taste. Add more milk if dip is too thick. Heat through and serve immediately.

I got this recipe off the internet after searching and searching, I kept coming up with only the cheese dip that contains rotel, velveeta and sausage or hamburger meat. I was looking for the real mexican cheese dip like they serve in resturants here in Oklahoma. I think I finally found it!

Number Of Ingredients 7

1 1/2 cups chopped onions
1 tablespoon shortening
2 cups fresh tomatoes
1 (4 ounce) can green chili peppers (chopped)
1 teaspoon salt
1 lb grated American cheese
jalapeno pepper (IF YOU LIKE IT HOT)

Steps:

  • Saute chopped onion in shortening.
  • Add fresh tomatoes and chopped green chili peppers.
  • Add 1 tsp salt and 1/2 tsp pepper.
  • Simmer until well blended.
  • Add 1 lb grated American cheese.
  • Heat only until cheese melts.
  • Serve with tortilla chips.
  • Can add hot jalapeno peppers in addition to chili peppers if you like it HOT.
  • Makes 1 quart.
  • Freezes well.
