EGGPLANT CASSEROLE WITH CHEESE AND BREAD
Steps:
- Butter a 1 1/2 quart baking dish. Heat oven to 350°F. Steam the diced eggplant just little tender, about 5 minutes.
- Heat oil in a large skillet over medium heat. Add the onion and bell pepper and saute, stirring, until onion is tender. Add the garlic and saute for about 2 minutes longer. Remove from heat.
- Spread bread slices with the butter and cut into cubes. Stir the eggplant and bread cubes into the onion mixture. Let the mixture cool slightly.
- Stir in the beaten eggs, salt, pepper, thyme and marjoram. Stir in the half of the Kraft Shredded Cheese. Spoon the mixture into the prepared baking dish and cover with the remaining Kraft Shredded Cheese.
- Bake for 20-25 minutes, until lightly browned. Serve hot.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large saucepan of water to a boil. Add eggplant and cook until tender, 10 to 15 minutes. Drain and pour eggplant into an 8-inch square baking dish.
- Melt butter in a 3-quart saucepan on medium heat. Add flour and mix to create a paste. Add tomatoes, bell pepper, onion, brown sugar, and salt and cook over medium to medium-high heat. Stir occasionally until mixture bubbles and thickens, 5 to 10 minutes. Pour mixture over the eggplant in the baking dish.
- Cover the vegetables in the baking dish with Cheddar cheese and bread crumbs.
- Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.

- In a saucepan, bring the water to a boil; add eggplant. Boil for 5-8 minutes or until tender;drain and set aside. , In a skillet, cook beef, onion and green pepper over medium heat until the meat is no longer pink; drain. Add the tomatoes, salt and pepper. Cook and stir for 5 minutes or until tomato is tender. Remove from the heat. Stir in milk, egg and eggplant; mix well., Transfer to a greased 13-in. x 9-in. baking dish. Toss bread crumbs and butter; sprinkle over top. - Preheat oven to 325°F
- Spray a 9-inch baking dish with nonstick cooking spray.
- In a large saucepan over medium heat, boil the 4 cups salted water.
- Add eggplant (and onion, if using it) and continue to boil for 3 minutes; drain.
