2 medium eggplants (1 1/2 pounds total), cut into 1/4-inch rounds
Coarse salt and pepper
2 cans (28 ounces each) whole peeled tomatoes, pureed
3 cloves garlic, smashed and peeled
1 1/2 cups plain dried breadcrumbs
1/2 cup grated Parmesan or Pecorino Romano (2 ounces), divided
1 cup all-purpose flour
3 large eggs, lightly beaten
1 cup vegetable oil
1 pound fresh mozzarella, thinly sliced

Steps:

  • In a colander, toss eggplant with 2 teaspoons salt. Let stand 30 minutes. Arrange slices in a single layer on a dish towel and roll up tightly to extract excess water.
  • Meanwhile, in a medium pot, bring tomatoes and garlic to a boil. Reduce heat and cook at a rapid simmer until thickened, 30 minutes.
  • In a shallow dish, combine breadcrumbs and 1/4 cup Parmesan; season with salt and pepper. Put flour and eggs in two more shallow dishes. Coat eggplant in flour, shaking off excess. Dip in egg, letting excess drip off. Coat with breadcrumbs.
  • Preheat oven to 400 degrees. In a large straight-sided skillet, heat oil over medium-high (a few breadcrumbs should sizzle when added). In batches, fry eggplant until golden brown and tender, 2 to 3 minutes per side. Drain on a paper-towel-lined baking sheet.
  • Spread 1 cup tomato sauce in a 9-by-13-inch baking dish. Top with half the eggplant, overlapping slices slightly, 2 cups sauce, and half the mozzarella. Repeat with remaining eggplant, sauce, and mozzarella, then sprinkle with remaining 1/4 cup Parmesan.
  • Bake until sauce is bubbling and cheese is golden, about 30 minutes. Let cool 15 minutes before serving.

1 large eggplant
1 medium onion, grated
1 teaspoon lemon juice
1/4 cup corn oil
salt

Steps:

  • Broil eggplant on all sides until well cooked -- turning frequently as it cooks.
  • Scrape the purple skin off, and discard skin.
  • Mash eggplant well with a wooden spoon,.
  • Add salt and pepper, to taste.
  • Mix grated onions with one tsp of mazola oil.
  • Add to mashed eggplant.
  • Add remaining 1/4 cup of oil to eggplant slowly, stirring constantly.
  • Add lemon juice.
  • Mix well, and serve as an appetizer on crackers or other bread rounds.

2 medium eggplants (about 1 pound)
salt
olive oil or vegetable oil, for pan frying
2 1/2 cups marinara sauce
8 ounces mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese or 1/2 cup romano cheese

Steps:

  • Trim the eggplants and cut them into 1/4 inch thick slices.
  • Layer the slices in a colander, sprinkling each layer with salt.
  • Let drain for 30 minutes.
  • Rinse the eggplant and pat dry.
  • Pour about 1/2 inch oil a large deep skillet and heat over medium heat.
  • Fry the slices, in a single layer, turning once, until browned on both sides.
  • Drain on paper towels.
  • Preheat the oven to 350.
  • Spread a thin layer of tomato sauce in a shallow baking dish.
  • Make a layer of eggplant slices, overlapping them slightly.
  • Top with a layer of mozzarella, another layer of sauce, and a sprinkle of grated cheese.
  • Repeat the layering, ending with eggplant, sauce, and grated cheese.
  • Bake for 45 to 60 minutes, or until the sauce is bubbling and the mozzarella is melted.
  • Let stand for 10 minutes before serving.

Delicious Italian/ Mediterranean-style eggplant rollups filled with a mixture of Ricotta cheese and spinach and topped with tomato sauce. The thinly sliced eggplant itself forms a crepe as opposed to the French batter crepes we are usually familiar with.

1 medium eggplant
1/4 cup seasoned flour
olive oil
1/4 freshly grated parmesan cheese or 1/4 romano cheese
1 cup ricotta cheese
2 whole eggs
1 garlic clove
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) package frozen spinach, defrosted and well drained
grated parmesan cheese or romano cheese
1 small carrot, scraped
1 stalk celery
1 small onion
1/4 medium green pepper
1/4 medium red pepper
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon basil, crushed
1/2 teaspoon oregano, crushed
1/8 teaspoon thyme, crushed
1/2 teaspoon sugar
2 cups whole canned tomatoes, undrained
1/3 cup tomato puree
2 tablespoons dry red wine

Steps:

  • Cut eggplant lengthwise into thin slices.
  • Sprinkle each side lightly with salt.
  • Place in a colander weighted with a heavy plate and let stand one hour.
  • Dip each slice on both sides in seasoned flour.
  • Sauté lightly on both sides until golden.
  • Add oil as needed.
  • Keep warm.
  • Mean while grate parmesan or romano cheese in food processor with steel blade.
  • Combine with ricotta, eggs, garlic, salt and pepper.
  • Add spinach and blend.
  • Place several tablespoons of spinach mixture in center of crepe.
  • Roll up and place seam sides down in a 13x9 inch baking pan.
  • Top with tomato sauce.
  • Sprinkle with grated cheese and bake in a preheated 375°F oven for 15 minutes or until hot and bubbling.
  • To prepare tomato sauce for eggplant crepes: Place vegetables in a food processor with steel blade.
  • Process until finely chopped.
  • In large saucepan, sauté vegetables in olive oil with garlic, basil, oregano and thyme until tender.
  • Add remaining ingredients and simmer 20 minutes.
  • Transfer to food processor or blender and process until smooth.
  • Pour over eggplant crepes before heating in oven.
  • Makes 2+1/2 cups sauce.
  • Notes: When I'm in a hurry I will use one of the good home style Italian sauces with peppers and vegetables on the grocery shelf like Aunt Millie's or Classico, instead of making this sauce.

Steps:

  • Preheat oven to 350 degrees F.
  • In a heavy bottomed skillet, cook eggplant in olive oil until tender.
  • Drain.
  • Mix tomato (sauce) with garlic and oregano.
  • Add chives to ricotta.
  • Mix crumbs with Romano.
  • In greased 12 X 8 baking dish, place half the eggplant.
  • Top with 1/2 the ricotta.
  • Top with 1/2 the tomato mixture.
  • Top with 1/2 the crumb mixture.
  • Repeat.
  • Bake for 30 minutes or until bubbly.

this is a recipe i never thought i would like. but i LOVE it! it is so easy to make. sometimes i serve it over pasta, sometimes not. it's up to you. i have added meat to my spaghetti sauce before, but that really isn't necessary either because the eggplant is a meat substitute.

1 eggplant, washed and sliced into 8 1/2 inch slices, i use the nicer ones from the center and work my way out
2 cups mozzarella-parmesan cheese blend
1 egg
1/2 cup milk
1 1/2 cups breadcrumbs, seasoned with garlic powder
salt
pepper
1 cup olive oil
2 cups spaghetti sauce
cooked pasta

Steps:

  • preheat oven to 350 degrees.
  • mix egg and milk together in bowl, blend.
  • heat olive oil in med frying pan.
  • dip eggplant slices into egg/milk mixture.
  • dip eggplant into breadcrumbs.
  • place 4 slices at a time, into olive oil in frying pan.
  • fry eggplant on each side, until each side is golden brown (you want them crispy, not mushy).
  • remove eggplant from skillet, and place on paper towels to drain excess oil.
  • repeat dipping and frying proces with other 4 eggplant slices.
  • place 1/2 cup spaghetti sauce into 9x13 casserole dish.
  • place eggplant into bottom of cassserole.
  • pour spaghetti sauce over top of eggplant.
  • sprinkle mozzarella/parmesan cheese over top of spaghetti sauce.
  • bake in 350 degree oven for 30 minutes or until cheese is melted.
  • serve over pasta if desired.

EGGPLANT ROMANO

I don't eat dairy as a rule, but sometimes you need a little to enhance a dish. Today I'm using Pecorino Romano cheese in stead of Parmesan. Romano is sheep cheese, not cow cheese which I prefer. This recipe takes a bit of time to do so set aside a few hours as there are a few steps.

2 tablespoon(s) sangria (or red wine)
1 medium onion, chopped
3-5 large cloves garlic, minced or pressed
1 medium bell pepper, chopped
- fresh ground black pepper, to taste
1-28 oz can(s) diced fire roasted tomatoes
1/2-6 oz. can(s) tomato paste
1 pinch(es) course salt
2 teaspoon(s) dried basil
2 teaspoon(s) dried oregano
1/4 tablespoon(s) dried thyme
2 teaspoon(s) dried parsley
1 large eggplant
- additional salt to salt the eggplant
1/4-1/2 cup(s) chicken broth
1 cup(s) home made breadcrumbs
3/4 cup(s) almond mozzarella cheese, coursely grated
1/2 cup(s) fresh grated romano cheese

Steps:

  • Heat the wine in a large pot and cook the onion over medium heat for about 6-8 minutes. Stir is several times through out the cooking process until the onions are soft. Add in the garlic and bell pepper and cook, stir until tender.
  • Add the black pepper and canned tomatoes and tomato paste. Cover and cook over low heat for 5-10 minutes. Stir in the salt and simmer gently uncovered until the sauce gets thick. This can take about 1 hour. Add the dried herbs and simmer for a few more minutes. Season with additional salt and then remove from the heat.
  • Peel the eggplant. Cut into 1/2" slices. Salt both sides of the peeled egg plant and then put into a colander and press. I used a dinner plate and a brick, it worked very well. Do this for at least 30 minutes or longer. I let mine sit for longer. Put a dish under it and let the moisture seep out. I got a a fair amount of liquid out of eggplant.
  • When the eggplant is drained run cold water over it and then put on a paper towel and pat dry top and bottom.
  • At this point preheat your oven to 350'F. Spray a large baking sheet with non-stick oil spray and. Dip the dried eggplant into the chicken broth then coat both sides with the breadcrumbs. Put on your baking sheet and bake for 30 minutes until the crumbs are golden brown and the eggplant is tender, about 30 minutes.
  • Get an 8x8" casserole dish and spray it with the non-stick spray and spread a thin layer of the sauce on the bottom. Arrange 1/2 the eggplant slices on top of the sauce. Sprinkle about 1/3 of the mozzarella over the eggplant. Top with a thicker layer of sauce then the first layer and sprinkle on 1/2 the Romano cheese on that. Repeat until you use up all the ingredients ending with the Romano Cheese.
  • Bake, covered for about 30 minutes or until bubbling. Uncover and scatter more cheese on top if you wish, I just left it as is and baked it for 10 minutes. Remove from the oven and let it sit for a few minutes before serving.
  • Enjoy!

3 medium eggplants, washed and sliced into rounds
1 tablespoon olive oil or 1 tablespoon peanut oil, which will not absorb as much into the eggplant when frying
2 medium onions, cut into quarters
3 garlic cloves, chopped
7 fresh peeled tomatoes, quartered
2 green bell peppers, seeded and chopped
3 red bell peppers, seeded and chopped
1 scotch bonnet pepper, seeded and finely chopped
1 stalk celery, chopped
1/4 cup chopped fresh Italian parsley
1 tablespoon olive oil
3 tablespoons tomato paste
1/2 cup warm water
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste
1/4 cup grated cheddar cheese
1/4 cup grated romano cheese

Steps:

  • Wash and slice the eggplant.
  • Sprinkle well with some salt in a strainer and let sit for 30 minutes.
  • Rinse salt off well, and pat dry on towelling.
  • Heat the first amount of oil in a fry pan and saute each slice of eggplant just until golden with brown colourings.
  • Arrange eggplant in the bottom of a 9 x 13 baking pan.
  • Hint: sometimes I brush oil on my eggplant and place on a cookie sheet, and bake in the oven turning once to brown each side, maybe a total of 12 minutes, instead of the frying.
  • Also with the pan frying you might have to add more oil, as the eggplant will absorb the oil.
  • (or use peanut oil which does not get too absorbed into vegie.).
  • After layering into your baking dish set oven to 350 degrees F.
  • Heat the second tablespoon on olive oil in a skillet and saute onion, peppers, and celery for 5 minutes.
  • Add the tomatoes and cook two minutes.
  • Add the paste, and water and spices.
  • Cook until thickened.
  • Pour over the eggplant evenly.
  • Sprinkle with the romano cheese.
  • Sprinkle with the cheddar cheese.
  • Sprinkle with the black pepper freshly ground.
  • Bake in the oven until cheese is melted and browned and all is heated thru.
  • approximately 15 to 20 minutes.
  • As you can tell from this recipe each item is already cooked to your preference before going into the oven for final 15 minutes.
  • So the thickness of the sauce and doness of the eggplant is already almost to its peak.
  • Alternative topping.
  • 3 whole eggs, a quarter cup of cheese grated and 1 cup bread crumbs, make a paste and smear over the top evenly (like a pie crust) then place in oven to bake the 20 minutes.

2 tablespoons olive oil
1 large onion, chopped
6 garlic cloves, chopped
1 large bell pepper, chopped
2 lbs eggplants, peeled & cubed
8 cups tomatoes, peeled & cubed
1 (6 ounce) can tomato paste
4 tablespoons fresh basil
2 teaspoons dry oregano
1/3 cup sugar
1/8 cup salt
1 teaspoon pepper
1 cup dry red wine

Steps:

  • In a very large kettle, heat olive oil over medium heat.
  • Add onion and garlic; cook until the onion is soft.
  • Add tomatoes, eggplant, bell pepper, tomato paste, basil, oregano, sugar, salt, pepper, and wine; stir.
  • Bring to boil; reduce heat, cover and simmer for 30 minutes, stirring occasionally.
  • Put into hot jars and seal.
  • Makes 7 pints or 4 quarts.
  • Process in hot water bath for 40 minutes.
  • This is very good served over pasta with Mozzarella cheese.

18 ounces whole milk ricotta cheese
olive oil, to coat pans
2 large eggplants, peeled
6 eggs
salt & freshly ground black pepper
all-purpose flour, for dredging
2 -3 cups seasoned bread crumbs
2 -3 garlic cloves, finely chopped if you have time try a whole bulb of roasted garlic
3/4 cup grated romano cheese or 3/4 cup parmesan cheese
1/4 cup chopped fresh basil
1/8 cup chopped fresh parsley
4 cups jarred tomato sauce
1 lb shredded mozzarella cheese

Steps:

  • Spoon the ricotta into a fine strainer placed over a bowl in the refrigerator for several hours. Discard the excess liquid. Preheat the oven to 350 degrees F.
  • Spread thin coating of olive oil on 3-4 baking or cookie sheet pans, or reuse the same pan several times.
  • Put the flat end of the eggplant down onto the cutting board. Slice the eggplants lengthwise into 1/4-inch thick slices, to make about 15 slices. Beat 4 of the eggs. Add salt and pepper to season eggs. Coat each eggplant slice with flour, then dip into the beaten eggs, drain any excess egg mixture, then coat with bread crumbs and lay flat on baking sheet.
  • Bake until golden brown, about 15 minutes.
  • You may have to bake them in batches. Remove from the oven and cool to room temperature.
  • Combine ricotta, remaining egg, garlic, basil, parsley, 3/4 of the mozzeralla cheese and 1/2 cup of the grated Romano or Parmesan in a bowl. Mix well. Add salt and pepper, to taste.
  • Spoon 1 cup of tomato sauce onto the bottom of a small baking dish. Spoon 1 to 2 tablespoons of filling onto the wide end of each piece of eggplant. Then, roll up each piece and place into the baking dish.
  • Top with remaining tomato sauce, mozzarella, and grated Parmesan. Cover with foil and bake for 45 minutes, until the tomato sauce is bubbling and the filling is hot. Let them rest for 15 minutes before serving.

GRILLED EGGPLANT ROMANO



Grilled Eggplant Romano image

At the moment, my kitchens smells like an Italian restaurant. We bought some soft ball sized Rosa Bianca eggplants at our local farmer's market on the weekend and my DH requested I do Eggplant Parmesan. The eggplants are grilled without any oil in this recipe. This should make 3 layers. Rosa Bianca are our favorites. They are round eggplants that are purple and white and very mild.

6 large eggplants (I used Rosa Bianca)
2 (25 ounce) jars roasted garlic pasta sauce
1 cup breadcrumbs (you can use more if you like)
3 tablespoons garlic powder (one tbsp. for each layer)
3 cups grated cheese (I used Romano but Parmesan will do)
olive oil

Steps:

  • Turn your barbecue on to high.
  • Cut the eggplants into 1/2 inch pieces.
  • Grill them until they are lightly charred. Remove from the grill and set aside.
  • If you can't grill them all at once, remove the first batch and do the second.
  • Once they are cook do the following:.
  • In a 9x2x13 inch ceramic dish coat the bottom with a good layer of the pasta sauce.
  • Lay the eggplant in a single layer over the sauce.
  • Sprinkle with 1 cup of the cheese over the eggplants. Then sprinkle 1 tablespoons of the garlic powder over top of that. Repeat ending with the cheese and garlic powder.
  • Sprinkle the bread crumbs on top and drizzle with a little olive oil if you like.
  • Cook in a 375'F oven for about 45 minutes or until the bread crumbs are a golden brown and the eggplant is bubbling around the edges.
