SALMON MOUSSE
A modest portion of smoked salmon yields a luxurious spread when blended with sour cream and a touch of lemon juice.

Steps:
- Place 3 tablespoons cold water in a small saucepan, and sprinkle with gelatin; let soften, 5 minutes. Gently heat over low, stirring, just until gelatin dissolves; set aside.
- In the bowl of a food processor, combine salmon, sour cream, and lemon juice. Puree until smooth; season with salt. With motor running, add slightly cooled gelatin mixture, and blend until combined.
- Pour into two 8-ounce ramekins or bowls. Without touching surface, cover container with plastic wrap, and refrigerate until firm but spreadable, about 2 hours or up to overnight. Garnish mousse with dill, if desired, and serve with crackers or baguette slices.

SMOKED SALMON MOUSSE

- Cut the butter into cubes and melt it in a saucepan over low heat. Remove from the heat and set aside for a few minutes to cool and to allow the milky solids to sink to the bottom. Carefully pour off the oily part, or clarified butter, leaving the milky solids behind. Let the clarified butter cool to room temperature.
- In 2 or three batches, put the salmon cubes, clarified butter, and cream in the bowl of a food processor, and puree until fluffy and completely smooth. Transfer the salmon puree to a large bowl and stir in the herbs and lemon juice to taste. Chill before serving.

Steps:
- Process the salmon and shallot in a food processor, scraping down the sides of the bowl as necessary, until the mixture is chipped fine, about 10 seconds.
- Add the cream cheese and lemon juice and process until the mixtures forms a ball, scraping down the sides as necessary.
- Add the sour cream and pulse just to incorporate, about 5 seconds.
- Transfer the mousse to a serving bowl and season with salt and pepper to taste.

- Place smoked salmon in a blender or food processor, and blend until smooth. Mix in heavy cream, cream cheese, juice of half of a lemon, dried dill weed, salt and pepper. Blend to desired consistency. Transfer to a medium serving dish, and garnish with salmon roe.

AVOCADO AND SMOKED SALMON MOUSSE

- Line a 4-cup round mold with plastic wrap. Lay about 1/3 of the salmon over the plastic wrap, overlapping each slice slightly and hanging the ends over the edge, to cover the mold. Chop the remaining salmon into 1/2-inch pieces and set aside. In the bowl of an electric mixer, combine the cream cheese and sour cream until creamy and well combined. Add the hot pepper sauce and salt and stir well. In a small saucepan, heat the lemon juice over very low heat. Pour into a 1/2-cup ramekin and sprinkle with the gelatin, stirring until the gelatin is dissolved. Remove from the heat and stir into the cream cheese mixture. Fold in the chopped smoked salmon and scallions. Spoon 1/3 of the mousse into the mold, top with a layer of avocado slices, then gently spread with 1/2 the salmon roe. Spread 1/3 of the mousse on top of the roe, and top with the remaining avocado slices and roe. Spread the remaining mousse over the top and fold the overhanging salmon strips over to completely enclose the mousse. Cover with the plastic wrap and chill until firm, about 3 hours. To unmold, place the mold in a bowl of warm water for 10 seconds. Unwrap the plastic from the bottom of the mold and invert the mold onto a serving plate. Gently shake to release the mold and unwrap completely. Serve with toasted croutons or crackers.
SMOKED SALMON MOUSSE
I have used regular canned salmon and added a little liquid smoke when I was unable to find canned smoked salmon. You could substitute hot smoked flaked salmon for the canned.

Steps:
- Soften the gelatin in cold water in a large mixing bowl. Stir in the boiling water and whisk the mixture slowly until gelatin dissolves. Cool to room temperature.
- Whisk in the mayo, lemon juice, grated onion, Tabasco, paprika, salt and dill.
- Stir to blend completely and refrigerate for about 20 minutes, or until the mixture begins to thicken slightly.
- Remove the skin and cartilage from the salmon and flake.
- Fold in the finely flaked salmon.
- In a separate bowl, whip the cream until it is thickened to peaks and fluffy.
- Fold gently into the salmon mixture.Transfer the mixture to a 6- to 8- cup bowl or decorative mold.
- Cover and chill for at least 4 hours.
- Serve with cracked pepper water crackers, or plain water crackers.

Steps:
- Combine tomato juice and gelatin in small saucepan, let stand for 5 minutes.
- Heat and stir on low until gelatin is dissolved.
- Set aside.
- Process remaining 7 ingredients in food processor, scraping down sides as necessary, until smooth.
- Add gelatin mixture through chute.
- Mix Well.
- Pour into lightly greased plastic lined 2 1/2 cup mold or deep bowl.
- Cover with plastic wrap.
- Chill for several hours until firm.
- To serve, turn out and remove wrap.
