2 cups lemon balm leaves
1 tablespoon minced garlic
1/4 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1/4 cup lemon juice
1/2 teaspoon garlic powder
1 tablespoon molasses (preferably dark)
1/4-1/2 cup good quality olive oil

Steps:

  • Put all the ingredients (except the olive oil) in the blender. With the machine turned on, slowly pour the olive oil into the blender until desired consistency. Taste and adjust seasonings as necessary. Best when made at least 1 hour before serving, as flavors need time to meld.

2 tablespoons lemon balm, leaves finely minced (NOT bee balm!)
1/2 teaspoon lemon zest
6 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
4 tablespoons white wine vinegar
1 teaspoon brown sugar
8 tablespoons oil (olive, grape seed, walnut, etc.)

Steps:

  • Mix all ingredients except for oil in a non-reactive bowl.
  • Slowly whisk in the oil.
  • Best prepared 1 hour in advance.
  • Yield a little over 1 cup.

¼ cup red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon dried oregano
1 clove garlic, minced
½ teaspoon kosher salt
¼ teaspoon ground black pepper
½ cup olive oil
2 tablespoons fresh lemon juice

Steps:

  • Whisk red wine vinegar, Dijon mustard, oregano, garlic, salt, and black pepper together in a small bowl. Slowly stream olive oil into the vinegar mixture while whisking briskly. Beat lemon juice into the mixture.
  • Pour dressing into a sealable jar or bottle, seal, and shake until emulsified.
