- Preheat oven to 350 degrees. Spray a whoopie pie pan with nonstick cooking spray.
- Break eggs, one at a time, into a bowl and transfer to pan slots.
- Pierce each yolk with a knife to allow yolk to spread. Then season with salt and pepper. Use a butter knife or rubber spatula to run around each egg.
- Toast English Muffins. Add slice of cheese, meat of choice and egg circle.

- Toast bread and cut into cubes. Set aside.
- Spray a large microwave-safe mug lightly with nonstick spray. Add bread cubes, egg substitute, cheese wedge pieces, and ham, and stir. Microwave for about a minute. Stir gently, and then top with shredded cheese. Microwave for another 30 to 45 seconds, until scramble is just set. Stir and enjoy!

Steps:
- Place cheese in freezer until well chilled, about 10 minutes. Meanwhile, place bacon in a large skillet over medium-high heat; cook until crisp. Transfer to a plate lined with paper towels to drain.
- Remove cheese from freezer, cut two slices, and grate remaining cheese on the largest holes of a box grater; set aside.
- Place English muffin split-side down in skillet; cook until toasted. Turn and top both sides with sliced cheese. Reduce heat and cook until cheese is melted. Remove from heat and set aside. Top one half with with bacon.
- Crack egg into bacon fat and season with salt and pepper. Fry egg until the white is set; turn and top egg with grated cheese. Continue cooking until yolk has reached desired degree of doneness.
- Carefully place egg on top of bacon. Sandwich with remaining muffin half; serve immediately.

- Coat a jumbo muffin tin with cooking spray and crack one egg in each well. Lightly whisk each egg with a fork. Season with salt and pepper. Transfer the muffin tin to the oven and bake for 8-10 minutes or until the egg is firm. Remove from the oven and allow to cool.
