1/2 cup shortening
1/2 cup sugar
1/3 cup sorghum molasses
1 egg, beaten
3 1/2 cups flour
1/2 cup buttermilk
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon vanilla
3 -4 cups applesauce, homemade is best (sweet, thick, chunky, spiced)
1 cup raisins (optional)

Steps:

  • Cream shortening with molasses in very large bowl, then add in one beaten egg.
  • Mix all dry ingredients adding milk in as you mix. Add Vanilla. Beat to a stiff dough.
  • Flour your counter and lightly flour your rolling pin. Roll out to thickness of pie dough. (VERY THIN) This dough will make 9-10 layers.
  • Cut out your circles with a scalloped pie pan. Place rounds of dough on a cookie sheet (I line it with wax paper) 2 at a time. And bake 12 minutes at 350°F.
  • After all rounds are baked, put layers together with a homemade or sweet flavored applesauce.
  • Let set before serving. Great also warm with vanilla ice cream.
  • My time chart is if you also made your own applesauce (peeling coring etc.).

3/4 cup old-fashioned rolled oats
1 1/2 cups all-purpose flour
3/4 cup packed light-brown sugar
3/4 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
3/4 cup (1 1/2 sticks) cold unsalted butter, cut into small pieces
3 to 4 tablespoons cold water
Flaky sea salt (such as Maldon), for sprinkling

Steps:

  • Preheat oven to 350 degrees. Spread 1/2 cup rolled oats on a rimmed baking sheet and bake until light golden and fragrant, 8 to 10 minutes. Cool then transfer to a food processor; process until finely ground. Add flour, sugar, coarse salt, and pepper; pulse until combined. Add butter, and pulse until mixture resembles coarse meal, about 10 seconds. Add 3 tablespoons cold water and pulse until dough just comes together, adding up to an additional tablespoon as needed.
  • Turn dough out onto plastic wrap, shape into a rectangle and wrap in plastic. Chill for 45 minutes. Transfer chilled dough to a sheet of parchment paper. Sprinkle with remaining ¼ cup oats and roll into a 10-by-12-inch rectangle. Using a fluted pastry wheel, cut into thirty-two 2 1/2-by-1 1/2-inch rectangles. Sprinkle with flaky sea salt. If dough becomes soft, chill for 15 minutes.
  • Arrange bars an-inch apart on two parchment-lined baking sheets. Bake until golden, 28 to 30 minutes. Transfer to a wire rack to cool.

Number Of Ingredients 7

2 cups old-fashioned rolled oats
2 sticks (1 cup) unsalted butter
2 cups whole-wheat flour
2 teaspoons baking powder
1 1/2 tablespoons packed light brown sugar
1 teaspoon salt
1/2 cup milk

Steps:

  • Preheat oven to 350° F. and butter 2 large baking sheets.
  • In a food processor pulse oats until finely chopped. Cut butter into bits. Add butter to oats with all remaining ingredients except milk and pulse until mixture resembles coarse meal. Add milk and pulse until mixture just forms a dough.
  • On a lightly floured surface halve dough and wrap 1 half in plastic wrap. Roll out remaining dough 1/8 inch thick (about a 14-inch round) and with a 3-inch fluted round cutter cut out about 18 oatcakes.
  • On baking sheets arrange oatcakes about 3/4 inch apart and bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until pale golden, about 20 minutes. Transfer oatcakes to a rack to cool completely. Make more oatcakes with remaining dough in same manner. Oatcakes may be made 1 week ahead and kept in an airtight container at room temperature.

2 cups rolled oats
1/2 lb. lard (1 cup)
1 tsp salt

Steps:

  • Mix as for pastry, then add 1 tsp. soda in 3/4 cup warm water. Roll THIN, and bake at 350F.

I am sure there are similar cake recipes out there with other names but this one is from a lady, Ethel Mae Creasy Kirk, that I worked with in 1965 and I have always called it Effie' s cake. Simply delicious.

1 large angel food cake, broken in small pieces
45 - marshmallows
1 medium can of pineapple, crushed, drained, save juice
1 small jar of green maraschino cherries, cut up fine
1 small jar of red maraschino cherries, cut up fine
1 cup(s) chopped nuts
1-1/2 teaspoon(s) vanilla
1 can(s) bakers coconut
1 pint(s) whipping cream

Steps:

  • Melt marshmallows in pineapple juice and set aside to cool. Add vanilla to mixture
  • break up cake and put in large dish. I use 9 x 13. Mix cherries, nuts and pineapple together and add to cooled marshmallow mixture. Whip cream and fold in the marshmallow mixture. Mix about 1-1/2 cups of mixture into cake and the rest of mixture on top of cake and top with coconut. Refrigerate
