EDIBLE CLOUDS
A simple and beautiful way to serve eggs. Fundamentally just a 4-ingredient souffle, the outcome makes you feel like you are eating real clouds.

Steps:
- separate egg whites and yolks into two separate bowls.
- beat whites until stiffish.
- add powdered sugar and 1/2 teaspoons vanilla to whites.
- mix until ingredients are blended.

- in separate bowl, beat egg yolks until blended.
- add white sugar and 1/2 teaspoons vanilla to yolks.
- mix until ingredients are blended.
- -.
- pour yolk mixture into loaf pan or ramekins.
- sprinkle cinnamon evenly on top.
- gently spoon whites mixture on top.
- sprinkle with powdered sugar

- bake at 350 for 1/2 hour.

CLOUD MERINGUES
We're on cloud nine! Make these fluffy meringue clouds with the kids and fill them with rainbow sprinkles for a colourful surprise

Steps:
- Heat oven to 120C/100C fan/gas 1. Line 2 baking sheets with parchment paper. Using a pencil, draw 6-8 clouds on each piece of parchment measuring about 10cm across by 8cm in height. Use a template as the left half of the cloud needs to be a mirror image of the right (or they won't match when they are sandwiched together). Then, turn the parchment over so the pencil marks don't come into contact with the meringue.
- Whisk the egg whites until stiff, then gradually whisk in the sugar, a tablespoon at a time, until stiff and glossy. Add in the black food colouring to make a light grey.
- Place the meringue mix in a large piping bag and pipe over the templates. Bake for 20 mins then reduce the heat to 100C/80C fan/gas ¼ and cook for a further hour or until completely dry. Leave to cool thoroughly in the oven.
- To create the storm cloud lollies, pipe stiff royal icing on the meringue, just around the edge, then add a little more to secure the stick. Fill the inside of the piped area with coloured sprinkles of your choice. Add the lolly stick to the cloud, over the icing, then sandwich the other meringue over the top to enclose the sprinkles and the top of the lolly stick. Leave to dry completely for about 3 hours or overnight.

COCONUT CLOUDS
I found this recipe in one of those supplements at the check-out stands at the grocery stores. It was full of cookies and bars. I made this for my cookie trays this year and they were a hit. If you like coconut, these are for you.

Steps:
- Preheat oven to 350 degrees.
- Reserve 1 1/3 cup coconut in a bowl and set aside.
- Combine cake mix, egg, oil, eater and almond extract.
- Beat at low speed until well mixed.
- Stir in remaining 1 1/3 cup coconut.
- Drop by rounded teaspoons into reserved coconut and roll the cookie.
- Place on a ungreased baking sheet.
- Bake at 35o degrees for 10-12 minutes or until light golden brown.
- Cool in pan 1 minute and then transfer to cooling racks.

- Separate eggs, putting whites in 1 large bowl and yolks in 4 separate small bowls.
- Whip whites until stiff peaks form.
- Fold in cheese, chives and bacon.
- Spoon into 4 mounds on parchment-lined baking sheet; make a deep well in center of each.
- Bake at 450 degrees for 3 minutes.
- Then add 1 yolk to each well; season with pepper. Bake until yolks are just set, 2 to 3 minutes.
