1/2 pound frozen shelled edamame (green soy beans), about 1 1/2 cups
1/4 cup tahini
1/4 cup water
1/2 teaspoon freshly grated lemon zest
1 lemon (about 3 tablespoons), juiced
1 clove garlic, smashed
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
Suggested serving: Sliced cucumbers, celery, and olives

Steps:

  • Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.
  • In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until smooth. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.
  • Transfer to a small bowl, stir in the parsley and drizzle with remaining oil. Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.

1 (12 ounce) package frozen shelled edamame (green soybeans)
2 cloves garlic
½ cup tahini
½ cup water
½ cup packed cilantro leaves
¼ cup lemon juice
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
¾ teaspoon ground cumin
⅛ teaspoon cayenne pepper

Steps:

  • Place edamame into a large pot and cover with salted water. Place over medium-low heat, bring to a simmer, and cook until tender, about 5 minutes; drain.
  • Puree garlic in food processor until minced. Add edamame, tahini, water, cilantro, lemon juice, olive oil, kosher salt, cumin, and cayenne pepper; blend until smooth.

1 package (16 ounces) frozen shelled edamame, thawed
1/2 cup tahini
1/2 cup water
1/3 to 1/2 cup lemon juice
2 garlic cloves, minced
1 teaspoon sea salt
1/4 cup olive oil
1/4 cup minced fresh mint
2 jalapeno peppers, seeded and chopped
Assorted fresh vegetables
Rice crackers

Steps:

  • Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add the next 8 ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh vegetables and rice crackers.

1 bag (12 ounces) frozen shelled edamame
3 whole-wheat pocket pitas, cut into 8 triangles each
2 cloves garlic
2 tablespoons tahini
3 tablespoons fresh lemon juice
2 tablespoons olive oil
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
2 large red bell peppers, cored, seeded and cut into 24 strips

Steps:

  • Heat oven to 450°F. Bring edamame to a boil in a medium saucepan with enough water to cover; cook, stirring occasionally, about 3 minutes. Drain in a colander and run under cold water. Bake pita triangles on a baking sheet until golden, 3 to 5 minutes. Pulse edamame, garlic, tahini, juice, oil, salt, cumin and pepper in a food processor until mixture is the consistency of guacamole; add water 1 tablespoon at a time if too thick. Cover; refrigerate until party time. Serve with pita toasts and peppers for dipping.

1/4 cup fresh lemon juice (from 2 lemons)
2 tablespoons tahini
2 medium garlic cloves, smashed
Coarse salt

Steps:

  • Steam edamame in a basket insert set over a pan of simmering water until tender, 8 to 10 minutes. Let cool completely.
  • Puree edamame, 3/4 cup water, lemon juice, tahini, garlic, and 1 tablespoon plus 1 teaspoon salt in a food processor until smooth (mixture will be slightly grainy). Transfer to a bowl, and refrigerate for at least 30 minutes.
