Steps:
- Preheat your oven to 350 degrees F.
- Mix together the grated Parmesan, thyme, and spices in a medium bowl.
- Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
- Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
- Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.
- Serve immediately as an appetizer with a dipping sauce, or as a side next to your protein of choice.

GREEK ZUCCHINI & FETA BAKE
Steps:
- Preheat oven to 350°. In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Add half of the zucchini, half of the onions and 1/2 teaspoon oregano; cook and stir 8-10 minutes or until zucchini is crisp-tender. Remove from pan. Repeat with remaining vegetables. Return previously cooked vegetables to pan. Stir in salt and pepper. Cool slightly., In a large bowl, whisk eggs and baking powder until blended; whisk in yogurt and flour just until blended. Stir in cheese, parsley and zucchini mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with paprika., Bake, uncovered, 30-35 minutes or until golden brown and set. Let stand 10 minutes before cutting.

Talk about cheating!! I was a waitress for 16 years in New York diners. One of my favorite veggie sides was stewed zucchini, (the Greek chefs made this daily). Well, this is just as good and so easy. This is also my first post. Hope you like it.

Steps:
- Wash and cut zucchini (see above).
- Heat a large fry pan with olive oil and garlic.
- Add zucchini and cook over med/high heat just long enough to toss to coat with oil and add salt and pepper to taste.
- Add jar of salsa, stir, cover and heat on medium/low until just crisp.
- Add mush and feta and cook until heated through but still crispy.
