Buffalo Chicken Bites image

This is always in demand at any football get together. You can make the bites and use any type of sauce you want. Me personally, I like to take a quarter cup of Sweet Baby Ray's® barbecue sauce and a quarter cup of Franks Red Hot® sauce and mix it together.

1 cup all-purpose flour
2 tablespoons cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
2 eggs
1 cup vegetable oil
1 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
¼ cup hot sauce
1 tablespoon chopped garlic
1 teaspoon butter

Steps:

  • Whisk flour, cayenne pepper, salt, and pepper together in a bowl. Beat eggs together in a separate bowl. Dip chicken pieces in the egg; transfer chicken to flour mixture and coat completely.
  • Heat oil in a saucepan over medium heat.
  • Fry coated chicken pieces in the hot oil, working in batches, until no longer pink in the center, about 3 minutes per side; drain on a paper towel-lined plate.
  • Combine hot sauce, garlic, and butter in a microwave-safe bowl; heat in the microwave until butter is melted and sauce is warm, about 1 minute. Serve hot sauce mixture as a dipping sauce or pour over buffalo chicken bites.

Easy Peasy Appetizer - Buffalo Chicken Bites image

This is a very easy appetizer to put together. Not only do they have great presentation, but also they taste good, to boot. If you really want to save time, you can pick up some precooked shredded chicken, and some bottled blue cheese dip. But that homemade blue cheese dip, just can't be beat. So, you ready... Let's get into the kitchen.

BLUE CHEESE DIP
1 clove(s) garlic, chopped
1 teaspoon(s) red wine vinegar
1 teaspoon(s) fresh thyme
1/2 cup(s) sour cream
1/3 cup(s) mayonnaise
- salt, kosher variety, to taste
- black pepper, freshly ground, to taste
1/4 cup(s) blue cheese, crumbled
BUFFALO BITES
1 medium chicken breast, skinless, boneless
1 tablespoon(s) sweet butter, unsalted
1 tablespoon(s) olive oil, extra virgin
4 ounce(s) cream cheese, at room temperature
1/4 cup(s) ranch dressing
1/4 cup(s) hot sauce, frank's is the best for this recipe
1/4 cup(s) sharp cheddar cheese, or pepper jack, freshly shredded
15 - wonton wrappers

Steps:

  • PREP/PREPARE
  • BLUE CHEESE DIP
  • Gather your ingredients.
  • Add all the dip ingredients, except the blue cheese, to the bowl of a small prep food processor.
  • Chef's Note: Season with salt & pepper, to taste.
  • Pulse until the ingredients are mixed and smooth.
  • Chef's Note: Check the seasoning, and add a bit more salt and pepper, if needed.
  • Remove from the prep bowl, place into a small mixing bowl, and add the blue cheese.
  • Carefully fold the mixture together, and then reserve.
  • Chef's Tip: This dip benefits from spending some time in the fridge. If you can make the dip the day before, that would be excellent.
  • BUFFALO BITES
  • Gather your ingredients.
  • Add the butter and oil to a small sauté pan over medium low heat.
  • When the butter has melted swirl the pan to mix with the butter with the oil, and then add the chicken breast.
  • Chef's Note: Season the chicken with a bit of salt & pepper.
  • Cover and allow the chicken to slowly cook, until no longer pink, about 15 to 20 minutes.
  • Remove from the sauté pan, allow to cool, and then shred and reserve.
  • Add the cream cheese, ranch dressing, and hot sauce to a mixing bowl, and thoroughly combine.
  • Add the shredded cheddar, or pepper jack, and chicken to the mix and fold together.
  • THE ASSEMBLY
  • Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Add a tablespoon of the buffalo mixture in the middle of a wonton wrapper.
  • Pick up the opposite corners of the wonton wrapper, and pinch together.
  • Chef's Note: Use a bit of water to seal the two corners.
  • Put the wantons on a parchment-lined baking sheet.
  • Place in the preheated oven until they become crispy, about 4 - 5 minutes.
  • Chef's Note: This whole thing boils down to timing. Leave them in the oven for too long and the wanton will harden and have the consistency of a dough cracker (not a good thing). The difference can be as little as 60 seconds or less, so keep an eye on the oven.
  • PLATE/PRESENT
  • Serve with the blue cheese dip, and watch them disappear. Enjoy.
  • Keep the faith, and keep cooking.

1/3 cup honey
1/3 cup chili sauce
4 teaspoons soy sauce
2 teaspoons Frank's™ RedHot™ Original cayenne pepper sauce
1 teaspoon cider vinegar
1/8 teaspoon ground ginger
1/8 teaspoon ground cumin
4 boneless skinless chicken breasts (1 lb), each cut crosswise into 1/2-inch-wide strips
1/2 cup blue cheese dressing
1/4 cup sour cream
2 tablespoons chopped fresh parsley
2 tablespoons crumbled blue cheese, if desired

Steps:

  • In medium bowl, mix all chicken ingredients except chicken. Add chicken; toss to coat well. Cover; refrigerate at least 30 minutes to marinate.
  • Meanwhile, in small bowl, mix dressing and sour cream until well blended. Refrigerate until serving time.
  • Heat 12-inch nonstick skillet over medium-high heat. With slotted spoon, remove chicken from marinade; reserve marinade. Add chicken to skillet; cook and stir 4 minutes. Add reserved marinade; cook over medium-high heat 6 to 7 minutes, stirring occasionally, until sauce thickens and chicken is no longer pink in center.
  • Spoon dipping sauce into small serving bowl; sprinkle with parsley and blue cheese. Place bowl on serving platter; arrange warm chicken around bowl. Serve with cocktail toothpicks.
