1 pound skinless, boneless chicken breast halves - cut into bite size pieces
4 tablespoons butter, melted
1 ¼ cups Italian seasoned bread crumbs

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Roll chicken pieces in the melted butter or margarine, then roll in the breadcrumbs
  • Bake the chicken fingers in the preheated oven for about 10 minutes. Turn them over and cook for another 10 minutes or until they are brown and pierce easily with a fork. Ready to serve!

3/4 teaspoon hot pepper sauce
1 pound chicken tenderloins

2 tablespoons sour cream
1 tablespoon lemon juice
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
3/4 cup seasoned bread crumbs

Steps:

  • In a large resealable plastic bag, combine 1/2 cup buttermilk and pepper sauce; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes., For dipping sauce, in a small bowl, combine 2 tablespoons cheese, mayonnaise, sour cream, lemon juice, onion powder, garlic powder and remaining buttermilk until blended. Cover and refrigerate until serving., In another resealable plastic bag, combine bread crumbs and remaining cheese. Drain and discard marinade. Add chicken to crumb mixture; seal bag and shake to coat. , Place chicken in a greased 15x10x1-in. baking pan. Bake at 450° for 15 minutes or until no longer pink. Serve with dipping sauce.

4 large boneless chicken breasts
1/3 cup olive oil
1/2 cup plain breadcrumbs
1/3 cup flour
2 tablespoons dried oregano
2 tablespoons dried basil
1 teaspoon black pepper
1/2 teaspoon sea salt
1 tablespoon garlic powder
2 cups marinara sauce
1/3 cup dry red wine
3/4 cup shredded mozzarella cheese

Steps:

  • Heat oven to 400 degrees. Drizzle olive oil in 9″ X 13″ baking dish. Set aside.
  • Rinse the chicken breasts under cold water and dry with paper towels. Set aside.
  • In a large bowl, combine the bread crumbs, flour, oregano, basil, pepper, salt and garlic powder. Mix well.
  • Bread chicken breasts in flour mixture and arrange in olive oil coated baking dish. Bake at 400 degrees for 20 to 25 minutes or until browned. Remove from oven.
  • Top with marinara sauce, red wine and cheese. Cover and continue baking for 20 minutes. Remove cover and bake an additional 10 minutes.
  • Serve with pasta and tossed green salad.
  • Serves 4. Can be doubled.

3 skinless, boneless chicken breasts, cut into strips
salt and ground black pepper to taste
½ cup all-purpose flour
2 teaspoons Italian seasoning
1 teaspoon ground paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
3 eggs
1 cup bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Season chicken strips with salt and pepper.

Adding Parmesan cheese and tangy Dijon mustard to crunchy Japanese-style breadcrumbs (panko) gives these easy-to-prepare chicken fingers a sophisticated coating the whole family will enjoy. Look for panko breadcrumbs in the Asian section of your market. For even more kid appeal, serve the chicken fingers with a homemade honey mustard sauce, or a sweet-and-sour sauce made from apricot jam, cider vinegar, salt and pepper and a drop of hot sauce.

2/3 cup panko breadcrumbs (Japanese style breadcrumbs)
1/4 cup parmesan cheese, grated

1 lb chicken tenders

  • Place a rack in the top third of the oven. Heat oven to 425°F Set a wire rack on a baking sheet and coat rack lightly with cooking spray.
  • In a shallow bowl, stir together breadcrumbs, Parmesan cheese, parsley (if using), and pepper. In another shallow bowl, whisk together mustard and egg whites until frothy and opaque.
