I've made so many of these delicious rolls that I think I could make them blindfolded! I always take about 200 of them to the senior citizens dinner at our church. After shaping the rolls, you can freeze them, then just thaw and bake when you need them. -Debbie Johnson, Centertown, Missouri

Number Of Ingredients 9

2 cups quick-cooking oats
2/3 cup packed brown sugar
1/4 cup butter, cubed
1 tablespoon salt
2-1/2 cups boiling water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
5-1/2 to 6 cups all-purpose flour
Additional butter, melted

Steps:

  • In a large bowl, combine the oats, brown sugar, butter and salt; stir in boiling water. Cool to 110°-115°. In a large bowl, dissolve yeast in warm water; let stand for 5 minutes. Add oat mixture and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into 20 pieces. Place in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 45 minutes. , Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to a wire rack; brush with melted butter.

2-1/2 to 2-3/4 cups all-purpose flour
3/4 cup whole wheat flour
1/2 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup water
1/4 cup honey
5 tablespoons butter, divided
1 large egg, room temperature

Steps:

  • In a large bowl, mix 1 cup all-purpose flour, whole wheat flour, oats, yeast and salt. In a small saucepan, heat water, honey and 4 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface; divide and shape into 24 balls. Place in a greased 13x9-in. baking pan. Cover with a kitchen towel; let rise in a warm place until doubled, about 30 minutes. , Preheat oven to 375°. Bake 20-22 minutes or until golden brown. Melt remaining butter; brush over rolls. 2-1/3 cups water, divided
1 cup dry oatmeal
3 tablespoons butter
2 packages (1/4 ounce each) active dry yeast
2/3 cup packed brown sugar

1-1/2 teaspoons salt
5 to 5-3/4 cups all-purpose flour

Steps:

  • In a saucepan, bring 2 cups water to a boil. Add oatmeal and butter; simmer 1 minute. Remove to a large bowl and let cool to 110°-115°., Heat remaining water to 110°-115°; add yeast. To oatmeal mixture, add sugars, salt, yeast mixture and half of flour. Mix well. Add enough remaining flour to make a soft dough., Turn out onto a floured surface; knead 6-8 minutes or until smooth and elastic. Add additional flour if necessary. This is the best dinner roll recipe I have ever found.

3 ¾ cups bread flour, divided
¼ cup white sugar
¼ cup shortening
1 teaspoon salt
1 (.25 ounce) package rapid rise yeast
½ cup warm water (120 to 130 degrees F/50 degrees C)
½ cup warm milk
1 egg
2 tablespoons butter, melted

Steps:

  • In a large bowl, stir together 2 cups flour, sugar, shortening, salt and yeast. Add water, milk and egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Add the remaining flour, 1/4 cup at a time, until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Place in greased bowl and turn greased side up. Cover and let rise in warm place until doubled, about 1 hour. Dough is ready if indention remains when touched.
  • Turn dough out onto a lightly floured surface and divide in half; cut each half into 24 pieces. Form the pieces into rounds. Place the rolls close together in two lightly greased 9 inch round cake pans. Brush with melted butter. Cover and let rise in warm place about 30 minutes or until doubled. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven for 12 to 18 minutes, until golden brown.

1 1/4 cups quick oats (not instant)
1 (1/4 ounce) envelope fleischmann's fast rising yeast
1/4 cup sugar
1 3/4 teaspoons salt
1 cup milk
3/4 cup water
1/4 cup butter or 1/4 cup margarine, cut up

Steps:

  • Combine 2 cups flour, quick oats, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter to very warm (120° to 130°F). Pour into flour mixture. Beat for 30 seconds with electric mixer to combine. Increase speed to medium-high and beat for 3 minutes.
  • Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 6 to 8 minutes. Cover and let rest for 10 minutes.
  • Form into two 12-inch long logs. Slice each into 12 portions using a serrated knife. Place 12 rolls each in greased 13 x 9-inch baking pans. Rolls should be spaced equal distance apart, and should not be touching.
  • Cover and let rise until doubled, about 45 to 55 minutes.
  • Bake at 375°F for 20 to 25 minutes or until done. If desired, brush with additional melted butter.

1/4 cup sugar
1/4 cup shortening

1 package regular or quick active dry yeast
1/2 cup very warm water (120°F to 130°F)
1/2 cup very warm milk (120°F to 130°F)
1 egg
Butter or margarine, melted

Steps:

  • Mix 2 cups of the flour, the sugar, shortening, salt and yeast in medium bowl. Add warm water, warm milk and egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour to make dough easy to handle.
  • Turn dough onto lightly floured surface. Knead about 5 minutes or until smooth and elastic. Place in greased bowl and turn greased side up. Cover and let rise in warm place about 1 hour or until double. Dough is ready if indentation remains when touched.
  • Grease bottoms and sides of 2 round pans, 9x1 1/2 inches.
  • Punch down dough. Cut dough in half; cut each half into 24 pieces. Shape into balls. Place close together in pans. Brush with butter. Cover and let rise in warm place about 30 minutes or until double.
  • Heat oven to 400°F.
  • Bake 12 to 18 minutes or until golden brown.

These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

3 tablespoons margarine, canola oil or 3 tablespoons applesauce

  • Punch down dough and divide in half; shape each portion into 8 balls. (Each pan will hold 8 rolls and you use 2 lightly greased round cake pans).
  • Place evenly into 2 lightly greased round cake pans.
  • Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
  • Bake at 375 for 15 minutes or until golden brown.
  • Makes 16 rolls.
