1-1/2 pounds lean ground beef (90% lean)
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 small green pepper, chopped
1 can (4 ounces) chopped green chilies
1/2 cup minced fresh parsley
1 tablespoon chili powder
1 garlic clove, minced
1-1/4 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper
Hot cooked rice or pasta
Optional toppings: shredded cheddar cheese, sour cream and sliced green onions

Steps:

  • Crumble beef into a 3-qt. slow cooker. Add the next 11 ingredients and mix well. Cover and cook on high for 4-6 hours or until meat is no longer pink. Serve with rice or pasta and the toppings of your choice.

1 TBS Olive Oil
1 Pound Ground Meat (Beef, Turkey or Sausage) ( - at room temperature & gently patted dry (SEE NOTES))
Kosher Salt & Ground Black Pepper
1 small Yellow Onion ( - small dice( about 1 ½ cups))
1 small Bell Pepper ( - small dice (about 1 cup))
2 cloves Garlic ( - minced)
1 TBS Chili Powder
2 tsp EACH: Ground Cumin, Smoked Paprika & Dried Oregano
2 TBS Tomato Paste
1 Cup Beer OR Beef Broth
1 (14 ounce) Can Fire Roasted Diced Tomatoes
1 (8 ounce) Can Tomato Sauce
1 ½ tsp EACH: Dark Brown Sugar & Worcestershire Sauce
1 Bay Leaf

Steps:

  • Brown beef: In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with a ½ teaspoon of salt and a ¼ teaspoon of pepper. Use a spatula to flip the beef over and use the back of a wooden spoon to break up the beef into large crumbles. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes. Use a large slotted spoon to transfer the beef to a plate or bowl. Drain off all but 1 tablespoon of oil from the pan, or if the pan seems dry, add a splash of oil (SEE NOTES).
  • Sauté vegetables: Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
  • Add the liquids: Add in the beer (or broth), using the back of a spoon to scrape of any brown bits stuck on the bottom of the pan. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
  • Simmer: Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Use tongs to remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
  • Serve: Ladle warm chili into individual bowls and garnish with optional toppings. Enjoy!

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

2 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon hot pepper sauce
1 (28 ounce) can crushed tomatoes
¼ cup red wine vinegar

Steps:

  • Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.
  • Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

Perfect for people who love using their slow cookers. I've tried many chili recipes but this one is the best ever! You can substitute beans for the cornmeal, but I think it takes away from the taste and the smooth texture. I recommend opening a second bottle of porter beer and drink it while cooking this tasty dish! Yum!

1 cup strong brewed coffee
1 (14.5 ounce) can diced tomatoes
1 (12 fluid ounce) can or bottle porter-style beer
2 (6 ounce) cans tomato paste
1 cup beef broth
½ cup brown sugar
¼ cup ketchup-style chili sauce (such as Heinz®)
¼ cup chopped jalapeno peppers
1 tablespoon ground cumin
1 tablespoon cocoa powder
2 teaspoons ground ancho chile powder
1 teaspoon oregano
1 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
2 teaspoons vegetable oil
2 pounds extra lean ground beef
2 onions, chopped
3 cloves garlic, minced
½ cup cornmeal

Steps:

  • Pour coffee into a slow cooker and set slow cooker to High; add diced tomatoes, beer, tomato paste, beef broth, brown sugar, chili sauce, jalapeno peppers, cumin, cocoa powder, chile powder, oregano, cayenne pepper, coriander, and salt.
  • Heat oil in a large skillet over medium heat. Cook and stir ground beef, onions, and garlic in the skillet until the beef is browned completely, 7 to 10 minutes; add to mixture in the slow cooker.
  • Slowly pour cornmeal into the slow cooker while stirring to assure no lumps.
  • Reduce heat to Low and cook for 2 hours.

1 tablespoon bacon grease
1 ½ pounds ground beef, preferably chuck
½ medium white onion, minced
8 cloves garlic, or to taste
3 tablespoons chili powder
1 tablespoon ground paprika
2 teaspoons dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 (28 ounce) can tomato puree
1 cup water
3 tablespoons tomato paste
2 teaspoons white sugar
1 cube beef bouillon

Steps:

  • Heat bacon grease in a large pot over medium-high heat. Cook and stir ground beef in the hot pot until almost browned, about 5 minutes. Reduce heat to medium and add onion; cook, stirring occasionally, until the onion has softened and turned translucent, about 5 minutes.
  • Add garlic, chili powder, paprika, oregano, salt, and pepper; cook and stir until fragrant, 2 to 3 minutes. Add tomato puree, water, tomato paste, sugar, and bouillon cube. Reduce heat to low. Cover and simmer, stirring occasionally, for 30 to 60 minutes.
