After testing many apple cake recipes with fresh apples, this old-fashioned cake is moist, dense and down-home delicious. Steps:
- Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

Steps:
- Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
- In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
- Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

- Preheat oven to 325°F.
- Grease and flour two 8x8-inch square pans.
- Mix first 7 ingredients with mixer on low.
- Beat 3 more minutes.
- Stir in apples, nuts and raisins.
- Spread in pans, bake 1 hour.
- Cool.
- Place paper doily on top of cake.
- Sprinkle with confectioner's sugar.
- Remove doily.

- Mix together first seven ingredients in mixer.
- Mix 2 minutes at medium speed.
- Fold in chopped nuts.
- Coat bundt pan with cooking spray and flour.
- Bake at 350 degrees 35-40 minutes.

- Cool 5 mins in pan, invert to plate.
- Cool, dust with powered sugar.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt or tube pan. In a medium bowl, combine the diced apples, 1 tablespoon white sugar and 1 teaspoon cinnamon; set aside. Sift together the flour, baking powder and salt; set aside.
- In a large bowl, combine 2 cups white sugar, oil, orange juice, vanilla and eggs. Beat at high speed until smooth. Stir in flour mixture. Fold in chopped walnuts.
- Pour 1/3 of the batter into prepared pan. Sprinkle with 1/2 of the apple mixture. Alternate layers of batter and filling, ending with batter.
- Bake in preheated oven for 55 to 60 minutes, or until the top springs back when lightly touched. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Sprinkle with confectioners' sugar.

- Prepare cake batter according to box directions. Fold in the apples, walnuts, pecans, raisins, golden raisins and dried cranberries. Distribute the batter evenly between the two prepared pans.
- Bake in preheated oven for 50-55 minutes, rotating pans halfway through baking. Remove from oven and cool on wire rack for 20 minutes. Remove from pans and cool on racks to room temperature.
- Place paper doily on top of cake and sift confectioners' sugar directly over the doily. Carefully remove doily, shake excess into sink and repeat for second cake.
