INSTANT POT® CUBAN PORK TENDERLOIN WITH RICE AND BEANS



Instant Pot® Cuban Pork Tenderloin with Rice and Beans image

This one-pot Cuban pork and rice meal is a quick and easy dinner, making it perfect for the weeknight rush. The flavors of mojo-a garlic-citrus sauce popular in Cuba-are what bring this dish together.

2 tablespoons vegetable oil
1 pork tenderloin (1 1/4 lb), trimmed, cut in 1-inch pieces
1 1/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup orange juice
1 package (1 oz) Old El Paso™ original taco seasoning mix
5 cloves garlic, finely chopped
1 teaspoon ground cumin
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup uncooked regular long-grain white rice
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro leaves
Old El Paso™ Thick 'n Chunky salsa, as desired

Steps:

  • On 6-quart Instant Pot®, select SAUTE; adjust to normal. Heat oil in insert. Add pork; cook 4 to 6 minutes or until pork releases easily from bottom of insert. Stir. Select CANCEL.
  • Stir in broth, orange juice, taco seasoning mix, garlic and cumin. Stir in beans and rice.
  • Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 12 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure.
  • Stir in lime juice. Top with cilantro. Serve with salsa.

I can't remember where I got this recipe. The Cuban surgeon at the hospital where I worked said it was "almost as good" as his mother's!

1 lb dried black beans
6 cups water
1 cup chopped onion
1 cup chopped bell pepper
1 tablespoon minced garlic
1/2 cup olive oil
2 bay leaves
1 teaspoon salt
1/4 teaspoon pepper
1 slice cooked and crumbled bacon
2 tablespoons red wine vinegar
2 cups cooked long-grain rice
chopped green onion, chopped hard boiled eggs,sour cream

Steps:

  • In a large stockpot cover beans with water and boil for 2 minutes.
  • Remove from heat and let stand for one hour.
  • Drain water and cover with fresh water (6 cups).
  • In a skillet saute the onions, bell pepper and garlic in oil for 5 minutes, until tender.
  • Add onion mixture and all remaining ingredients, except the red wine vinegar, to the beans and bring to a boil.
  • Reduce heat to simmer covered for 2 hours, until beans are tender.
  • Add more water if necessary.
  • At the last minute add the red wine vinegar, just before serving.
  • Serve with 2 cups of cooked rice.
  • Top with chopped green onions, chopped hard boiled eggs or sour cream.

1 tsp. GOYA® Minced Garlic

2 packets Sazon GOYA® without Annatto
1 packet Sazon GOYA® with Coriander and Annatto
1 can (15.5 oz.) GOYA® Small Red Beans
1½ cups Golden CANILLA Rice
½ tsp. sugar

Steps:

  • 1. Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute. 2. Transfer liquid from can red beans to measuring cup; add enough water to measure 3½ cups. Add liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min 3. Remove rice from heat. Let sit until rice becomes tender, 5 minutes. Fluff with fork. Divide evenly among serving bowls.

1/4 white onion, diced small (1/2 cup)
1/4 green bell pepper, diced small (1/2 cup)

Coarse salt and ground pepper

1 tablespoon chopped fresh oregano leaves
1 cup long-grain white rice
1 can (15.5 ounces) red kidney beans, rinsed and drained
2 cups low-sodium chicken broth

Steps:

  • In a medium saucepan, heat oil over medium-high. Add onion, bell pepper, and garlic and cook until onion is soft, 4 minutes. Season with salt and pepper. Add cumin, oregano, and rice; stir, and cook 1 minute. Add beans and broth; stir, then season with salt and pepper. Bring mixture to a boil, then cover. Reduce to a medium simmer and cook until liquid is absorbed and rice is tender, 15 to 20 minutes.

There are so many versions of beans and rice, this one is typical of Cuban cuisine, but using shortcut seasonings.

1 Tbsp olive oil, good quality
2 Tbsp tomato sauce
1 clove garlic, minced
1 Tbsp sofrito -tomato cooking sauce
2 pkg sazon with coriander and annatto
15 oz small red beans
1 1/2 c white rice
1/2 tsp sugar

Steps:

  • 1. Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute.
  • 2. Drain liquid from the can of red beans into measuring cup; add enough water to measure 3½ cups. Add all of the liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min.
  • 3. Remove pot from heat. Let sit until rice becomes tender, about 5 minutes. Fluff with a fork. Serve.

  • Heat a medium saucepan over medium heat and add the pieces of bacon. If you're not using bacon, simply add about one tablespoon of olive oil and skip ahead to the fourth step.
  • Cook the bacon until a lot of the fat has rendered out and the pieces have almost halved in size, but are not crispy. There's no need to crisp the bacon because it just gets soggy again when you simmer it with the beans!
  • Use tongs or a slotted spoon to remove the bacon and set it to drain on paper towels. Leave the bacon fat in the saucepan.
  • Add the onions to the hot bacon fat and stir to coat. Turn heat down to medium-low and cook for about 2 minutes, until they've reduced in size but aren't crisping or caramelized. They should be beginning to turn translucent and soft, but not quite there yet.

  • Place garlic clove on a cutting board and sprinkle with table salt. Let sit for 3 minutes and mince into a paste with knife. Set aside.
  • Place bacon and olive oil in a large heavy pot. Constantly stir over medium high heat until bacon renders fat and turns golden brown, about 6 min. Add onion, green pepper, and garlic paste into the bacon and stir until vegetables are translucent, about 5 min. Add the chicken bouillon powder, the bay leaf, cumin, oregano, and rice. Stir for 1 minute until well mixed and all the rice is coated in oil.
  • Add the beans with their liquid, the water, and vinegar. Mix to combine. Cover and bring to a boil. Immediately reduce to a simmer, and simmer covered for 45 minutes. Do not peek. Keeping pot covered, let it rest off heat another 10 minutes. Fluff rice with a fork and serve. Garnish with chopped cilantro or green onions if desired.
