Layered Chocolate Cream Torte image

With a chocolate cookie crust, chocolate mousse and whipped cream, this ethereal dessert is rich and creamy!

9 ounces chocolate wafer cookies (I used one package of Nabisco Famous Wafers)
6 tablespoons butter, melted
12 ounces semisweet chocolate, chopped
6 tablespoons (3/4 stick) butter, cut into pieces
1/2 teaspoon instant coffee powder
1/2 cup sugar
3 tablespoons water
5 egg whites
2 3/4 cups whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 350°. Add cookies to food processor. Process until crumbs form. Set aside 3/4 cup of the crumbs.
  • Add melted butter to remaining crumb mixture and process until well combined
  • Press mixture onto bottom of a 9-inch springform pan Bake crust for 10 minutes, then cool on a wire rack.
  • Add chocolate, butter and coffee powder to a large microwave safe bowl. Microwave for 30 second increments, stopping and stirring until melted and smooth.
  • Set chocolate mixture aside while preparing meringue.
  • Stir 1/2 cup sugar and 3 tablespoons water in small saucepan over low heat until sugar dissolves.
  • Increase heat and boil syrup without stirring until candy thermometer registers 240°, about 4 minutes.
  • Using a stand or hand mixer beat whites in large bowl to soft peaks.
  • Gradually beat the hot syrup into whites. Continue beating until medium-stiff peaks form, about 3 minutes.
  • Fold 1/3 of meringue into the lukewarm chocolate mixture to lighten. Fold in the remaining meringue. Set chocolate meringue aside.
  • Place cream, powdered sugar and vanilla in a large chilled bowl, and beat until firm peaks form.
  • Fold 1 1/2 cups of the whipped cream into chocolate meringue, forming the chocolate mousse.
  • Spoon half of the chocolate mousse over the bottom of crust and spread evenly with an offset spatula.
  • Sprinkle 3 tablespoons reserved crumbs over the mousse. Spoon half of the remaining whipped cream over crumbs, and spread evenly.
  • Sprinkle with 3 tablespoons crumbs. Repeat layering with remaining mousse, crumbs, whipped cream and crumbs.
  • Cover and refrigerate until set, about 4 hours.
  • Run knife around pan sides to loosen torte. Remove pan sides and serve.

Cherry-Glazed Chocolate/Cream Cheese Torte image

One of my husband's co-workers brought this into work. He loved it so much he asked her for the recipe -- it's a quick and easy recipe and I've made it many times to bring to family get-togethers for those with a "sweet tooth". Cooking time does not include chilling time.

1/2 cup butter or 1/2 cup margarine, melted
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
8 ounces cream cheese, softened
1 cup confectioners' sugar
1 cup Cool Whip, thawed
21 ounces cherry pie filling, divided

Steps:

  • Heat oven to 350 degrees. Grease bottom of 9-inch springform pan. In large bowl, stir together butter, sugar and vanilla. Add eggs; using spoon, beat well.
  • In a small bowl, stir together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well-blended. Spread into prepared pan.
  • Bake 25-30 minutes or until cake is set. (Cake will be fudgey; wooden pick inserted in center will not come out clean.) Cool completely in pan on wire rack.
  • Prepare cream layer as follows: In small mixer bowl, beat cream cheese and confectioners' sugar until well-blended. Fold in whipped topping and spread mixture over top of torte. Spread 1 cup cherry pie filling over cream layer; refrigerate 3 hours. With knife, loosen cake from side of pan; remove side of pan. Serve with some remaining pie filling around each slice of the torte, if desired. Cover and refrigerate leftover torte.

1 box Betty Crocker™ Super Moist™ devil's food cake mix
1/2 cup water
1/4 cup vegetable oil
2 tablespoons powdered sugar
3/4 cup plus 2 tablespoons whipping cream
4 oz cream cheese, softened
3 tablespoons powdered sugar
3/4 cup white vanilla baking chips
3 bars (1.4 oz each) chocolate-covered English toffee candy, coarsely chopped
1/2 cup butter, softened (do not use margarine)
3 envelopes (1 oz each) premelted unsweetened baking chocolate
1 1/4 cups powdered sugar

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick pans). Line bottoms only of two 13x9-inch pans with foil or waxed paper; spray with baking spray with flour.
  • In large bowl, beat eggs with electric mixer on high speed about 5 minutes or until thick and lemon colored. Add cake mix, water and oil; beat on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Place half the batter (about 2 1/2 cups) in each pan. Spread batter slightly higher in corners than at the center.
  • Bake 13 to 17 minutes or until cake springs back when lightly touched in center. Run knife around edges of pans to loosen cakes if necessary. Turn each cake upside down onto clean kitchen towel each sprinkled with 1 tablespoon powdered sugar; carefully remove foil. Cool completely, about 45 minutes.
  • In medium bowl, beat 3/4 cup of the whipping cream on high speed until stiff peaks form; set aside. In another medium bowl, beat cream cheese and 3 tablespoons powdered sugar on medium speed until smooth; set aside.
  • In small microwavable bowl, microwave baking chips and 2 tablespoons whipping cream on High 30 seconds; stir. Microwave 15 to 30 seconds longer; stir until chips are melted. Stir melted chips into cream cheese mixture. Add whipped cream and toffee candy to mixture; stir until well blended. Cover; refrigerate at least 1 hour.
  • Trim edges of cakes to make even. Cut each cake in half lengthwise. If necessary, trim top of layers to make flat surface. Place 1 cake piece on serving platter; spread with one-third of the filling (about 3/4 cup). Repeat layers twice. Top with remaining cake piece. Gently press in sides to straighten; if necessary, trim sides until even. Cover; refrigerate 30 minutes.
  • In medium microwavable bowl, beat butter on medium speed until smooth. On low speed, beat in remaining glaze ingredients until well blended. Reserve 3/4 cup of the glaze for garnish; cover and let stand at room temperature about 30 minutes or until thick enough to pipe. Meanwhile, microwave remaining glaze on High about 10 seconds or until slightly warm and spreading consistency. Spread over top of torte, letting some drip down sides. Refrigerate torte about 30 minutes or until glaze is set.
  • Spoon reserved 3/4 cup glaze into decorating bag fitted with small star tip. Pipe decorative border around top edges of torte. Refrigerate at least 2 hours. (Torte can be made 2 days ahead; wrap sides tightly with plastic wrap and refrigerate.) Let cake stand at room temperature 20 minutes before serving. Store covered in refrigerator.

FILLING:
1 cup heavy whipping cream
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar

1/4 cup butter
2 ounces unsweetened chocolate
1/2 cup heavy whipping cream
1 teaspoon vanilla extract
3 cups confectioners' sugar, sifted

Steps:

  • In heavy saucepan or microwave, melt butter and chocolate; stir until smooth. Cool. , In a chilled large bowl, beat cream until soft peaks form. Add the eggs, vanilla and cooled chocolate mixture; beat on low speed just until combine. Combine the flour, sugar, baking powder and salt. With mixer on low speed, add dry ingredients to creamed mixture until just combined. , Pour into three greased and floured 8- or 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For filling, beat cream in a chilled small bowl until soft peaks form; set aside. In a large bowl, beat cream cheese until smooth. Beat in confectioners' sugar and vanilla. Add whipped cream, beat until smooth. , Split each cake into two horizontal layers.
