- Pour 1/3 cup wing sauce into a shallow dish. Add chicken breasts and turn to coat. Let stand 15 minutes or refrigerate, covered, up , to 24 hours. , Preheat oven to 400°. Drain chicken, discarding marinade. In a shallow bowl, mix flour, tarragon and pepper. Place bread crumbs and remaining wing sauce in separate shallow bowls. Dip chicken in flour mixture to coat all sides; shake off excess. Dip in wing sauce, then in bread crumbs, patting to help coating adhere., Place chicken on a rack in a 15x10x1-in. baking pan. Bake 25-30 minutes or until a thermometer reads 165°.

- Preheat oven to 375 degrees. Place rolls in a 9x13 inch baking dish. Place 2 slices of provolone cheese in each roll.
- In a medium skillet, melt butter over medium heat. Add the onion and bell pepper and cook until tender, 3-5 minutes. Stir in the shredded chicken and Buffalo sauce. Season with salt and pepper, to taste.
- Divide chicken mixture between rolls. Sprinkle with blue cheese.
- Bake until cheese is melted and sandwiches are toasty, about 10 minutes. Garnish with additional blue cheese and sliced green onions, if desired.

EASY BAKED BUFFALO CHICKEN SANDWICHES

- 1. Preheat the oven to 350 degrees. Place a rack in a baking pan and spray with nonstick cooking spray; set aside.
- 2. Cut chicken lenghwise into 3 thin sections, making 6 total. Sprinkle with salt and pepper to taste. In a medium bowl combine hot sauce and melted butter; mix. Place cornflake crumbs in another medium bowl. Dip chicken pieces in butter mixture, then in cornflake crumbs, covering both sides. You may have to use a spoon to spread the butter mixture over the surface of the chicken, covering both sides before dipping in crumbs.
- 3. Place onto rack in pan. Cook 30 minutes, checking at 25 minutes to see if chicken is done. Don't overbake.
- 4. Place a lettuce leaf, chicken piece, then ranch dressing on bottom half of a hamburger bun and top with the other half. Makes 6 sandwiches.

- Combine cornflake crumbs, paprika, salt and pepper in a pie dish.
- In a seperate pie dish combine the egg whites and hot suace and beat with a fork until well blended.
- Spray a cookie sheet with a nonstick cooking spray. Arrange an assembly line of chicken, egg mixture and cornflake crumbs. Dip chicken pieces into egg mixture and then into the cornflake mixture. - You will also need: 1 Gallon size storage bag.
- Preheat skillet on stovetop.
- Add enough olive oil to cover the bottom of the skillet.
- Combine flour, paprika, and salt in storage bag.
- Give a good shake to coat pieces.
- Add coated chicken breasts to heated skillet and fry until nicely browned on both sides.
- Remove chicken breasts and place on paper towels to drain off excessive oil.
- Combine melted butter, garlic and cayenne pepper in large bowl.
- To make a mild sauce, use 1/2 teaspoon of cayenne pepper.
- Read next step if wanting a hotter sauce.
- Whisk Frank's Red Hot Sauce with the melted butter combo.
- If dividing the sauce into mild and hot, pour half into another bowl.
- For the hotter sauce, use up to another 1 teaspoon of cayenne pepper.
- Add whatever amount of red pepper flakes you may like.
- I just shake it on to semi cover the buffalo sauce.
- Place cooked chicken breasts inside sauce and coat both sides.
- Make sandwich and enjoy!
- Special Note on wings: Flour coat wings frozen!
- Deep fry frozen wings for about 20-25 minutes.
- Sauce coat right before eating!
- Allowing the sauce to sit on the wings will make them gooey.

- Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side.
- Heat a metal or oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

- Place the chicken in a shallow bowl. Cover with the buttermilk, turning to coat. Combine the ranch dressing and blue cheese in a small bowl and refrigerate. On a large plate, stir together the flour and 1/2 teaspoon each salt and pepper. Pour the Buffalo sauce into a shallow bowl. Line a large plate with a few layers of paper towels.
