Make this frittata even easier by using cooked bacon from the freezer. It's a wonderful dish to serve at brunch or to take as leftovers for lunch.

5 slices bacon
6 eggs
1 cup milk
2 tablespoons butter, melted
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped green onions
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.
  • Beat eggs, milk, butter, salt, and ground pepper in a bowl; pour into prepared baking dish. Sprinkle with onions, bacon, and Cheddar cheese.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 25 to 30 minutes.

1 Tbsp. oil
2 cups ORE-IDA Shredded Hash Brown Potatoes
6 eggs
1 pkg. (2.1 oz.) OSCAR MAYER Fully Cooked Bacon, cut into 1/2-inch pieces
2 green onions, sliced
1/4 tsp. pepper
1/3 cup KRAFT Shredded Sharp Cheddar Cheese
1 small tomatoes, chopped

Steps:

  • Heat oil in medium nonstick skillet on medium-high heat. Add hash browns; cook 8 to 10 min. or browned, stirring occasionally. Spread hash browns to evenly cover bottom of skillet.
  • Whisk eggs in medium bowl until blended. Stir in bacon, onions and pepper; pour over hash browns. Cover; cook on medium-low heat 10 min. or until center is set.
  • Top with cheese and tomatoes.

Easy breakfast frittatas for all! While you refrigerate your egg mixture, fry up bacon, tomatoes, spinach, and onion - or really, whatever vegetables you have in the pantry or are in season. Mix everything together in an oven-safe pan, sprinkle with cheese, and bake for 15 minutes. Top this super simple meal with some chopped green onions and pair with a salad, some fruit, or (better yet!) a mimosa.

6 eggs
½ cup heavy cream
1 teaspoon salt
½ teaspoon black pepper
4 strips bacon, diced
1 cup onion, diced
½ cup tomato, diced
4 cups spinach
½ cup shredded cheddar cheese
green onion, for topping

Steps:

  • Preheat oven to 350°F (180°C).
  • In a large bowl, whisk the eggs, heavy cream, salt, and pepper. Refrigerate until read to use.
  • In an oven-safe pan, cook bacon. Once fully cooked, take out the bacon and set aside.
  • Add onions to the same pan and cook until translucent.
  • Add tomatoes and spinach ,and cook for a couple minutes until spinach is slightly wilted.
  • Add the bacon back into the pan. Blend together.
  • Add the eggs and cheese into the pan.
  • Give it a good stir, then bake for 15 minutes, or until the eggs do not jiggle in the middle.
  • Top off with green onions, if desired.
  • Enjoy!

1/4 cup minced fresh parsley
3 tablespoons 2% milk
1/4 teaspoon salt
1/8 teaspoon pepper
8 bacon strips, chopped
2 medium potatoes, peeled and thinly sliced
2 green onions, finely chopped
4 fresh sage leaves, thinly sliced
1 cup shredded pepper Jack cheese
2 plum tomatoes, sliced

Steps:

  • Preheat oven to 400°. In a large bowl, whisk eggs, parsley, milk, salt and pepper; set aside. Here's a tasty little number that doesn't require any special ingredients. You'll feel like you're out for breakfast while cooking at home. I substituted sausage in place of bacon because it's what I had. Recipe from Taste of Home Quick Cooking July/August 1999, courtesy of Diana Bullock who likes to prepare this for overnight guests. She keeps cooked bacon in the freezer to cut down on preparation time.
