DUTCH SLAVINKEN WITH MILK GRAVY (GROUND PORK CYLINDERS)
Here is a different way to prepare ground beef. Most of the year this recipe is referred to as Slavinken, except in the spring when It is referred to as "Salad Birds," on menus in hotels in the Netherlands.

Steps:
- FOR THE SLAVINKEN: Crumble bread, pour milk or beer on top and let stand for 10 minutes.
- Squeeze bread to remove excess liquid, if any.
- Place in a bowl.
- Add ground pork, salt, pepper, nutmeg, allspice and onion.
- Knead mixture until well blended.
- Form into 6 cylinders and wrap a slice of bacon around each one.
- Secure with a wooden pick.
- Melt butter in a cast-iron frying pan.
- Fry the slavinken over medium heat, 6 minutes on each side.
- Remove to a hot platter as they become cooked, and keep warm.
- Serves 6.
- FOR THE MILK GRAVY: Stir flour into the remaining fat in the pan used to make the slavinken and cook over medium heat until it becomes a caramel colour.
- Add milk and light cream.
- Stir until creamy.
- Add parsley and season to taste.
- Pour over meat or serve separately.

MY POLISH(EASTER) KIELBASA SOUP
This is the soup we referred to as borscht. It wasn't until I was full grown that I found out it isn't referred to as borscht by anybody else! LOL This, like all other soups, tastes better reheated. When storing this soup, keep broth and potatoes in one container, kielbasa in another, and hardboiled eggs separately from both. I couldn't put number of servings because it depends on your appetite! P.S. I finally found 2 others, here on Zaar, who also refers to this as borscht! Yeah!

Steps:
- Boil kielbasa link in 3 quarts of water, occasionally piercing it to release juices, for 30-45 minutes.
- While kielbasa is cooking, peel and dice potatoes and boil eggs to hard-boiled stage.
- Keep potatoes in cold water in bowl after rinsing them well.
- Cool eggs in cold water before peeling.
- Remove kielbasa from water.
- Drain and add cut up potatoes to the water in which you cooked the kielbasa.
- Add salt and cook.
- When potatoes are done, add pepper and vinegar to taste.
- *Don't use balsamic vinegar.
- To thicken soup, add flour to cold water in a jar with lid or shaker.
- Shake vigorously to combine.
- Add to simmering soup through a fine strainer to remove any lumps.
- Stir to incorporate.
- Simmer a few minutes to slightly thicken soup.
- Adjust seasonings at this point. More vinegar? More thickening?.
- When ready to serve, slice kielbasa, approx 1/4-inch slices.
- Add some to each soup bowl with one chopped egg.
- Ladle in broth with potatoes.
- Serve with a good thick-crusted bread like Polish sisel bread.
- At Easter when there is baked ham we add pieces of chopped ham, and, of course, a dollop of horseradish(white)!

- Mix the pork, salt, spices and bread crumbs well.
- Form 4 cylinder-shaped rolls.
- For each roll, place 2 slices of bacon parallel on the counter.
- Roll the bacon slices around the meat roll, then fold a third slice of bacon lengthwise around the meat roll to cover the ends.
- Fasten this slice with 2 toothpicks, 1 at each end.
- Place the bacon rolls on a cookie sheet. Bake in a preheated oven at 350 degrees F.
- for 1/2 hour.
- Remove toothpicks and serve. - - - - - - - - - - - - - - - - - - NOTES : Slavinken are traditionally served with boiled potatoes and vegetables such as cauliflower, peas, spinach or endive and, of course, a Dutch-style salad.

DUTCH SLAVINKEN # 1
Simple but very good comfort food. Normally made with just some salt, pepper and nutmeg in the meat filling but I make them different these days and with many variations (just don't tell my mother!). Slavink translates as beatfinch (yes I know its weird) they are wrapped in bacon and another version is blinde vink= blind finch (even weirder) that is the same meat filling but then wrapped in a thin slice of veal. These days often replaced with a slice of beef. Some still name it blinde vink but the right name is runder vink=beef finch. I have tried very hard over the years to understand why they are named like this since I can honestly not see the resemblance of a bird in these sausages and I've never seen one fly away! No Dutch person in their right mind makes them at home since you can buy them ready made from every butcher and in every super market. Now that information should tell you something about the poster of this recipe, who is Dutch.... My excuse is that I lived many years abroad and that is when you crave for the simple dishes of your home country. We eat them here with vegetables and potatoes but they are also good cooked on the barbeque and served on buns with ketcup and mustard.

Steps:
- Mix all ingredients together, except for the bacon.
- With the blunt side of a knife stretch the slices of bacon.
- Form the meat mixture into 6 sausages, wrap then a slice of bacon arround them.
- Melt the butter in a frying pan on high heat until brown, brown the slavinken on all sides.
- You can secure the bacon with a wooden skewer but it will usually stay on.
- Lower the heat, add approx 1/2 cup of water and let them simmer for about 10-15 minutes until done.
- Note: Double or triple the recipe and after completing step 3 freeze them, seperate or in portions.
