ALMOND-CARAMELIZED DUCK BREAST WITH AMARETTO JUS

Almond-Caramelized Duck Breast with Amaretto Jus image

Make an easy and impressive duck breast dish for Valentine's Day dinner with this recipe from "Home Cooking with Jean-Georges," by Jean-Georges Vongerichten.

Provided by Martha Stewart

Number Of Ingredients 11

1/2 cup red wine vinegar
1/3 cup amaretto
1/3 cup ruby port
1/3 cup dry red wine
3/4 teaspoon fennel seeds
1 (1 3/4-to 2 1/2-pound) boneless skin-on whole duck breast, halved
Coarse salt and freshly ground black pepper
1 teaspoon grapeseed or other neutral oil
1 cup Jordan almonds, preferably all white
2 teaspoons honey
3 tablespoons unsalted butter, room temperature

Steps:

  • Preheat oven to 450 degrees with a rack set in the lower third of the oven and another rack set 8 inches from the broiler.
  • Place vinegar, amaretto, port, wine, and fennel in a medium saucepan and bring to a boil over high heat. Continue boiling rapidly until syrupy and reduced to 1/3 cup, about 20 minutes.
  • Meanwhile, heat a large ovenproof skillet over high heat. Season both sides of duck breasts with salt and pepper. Add oil to pan, swirling to coat; add duck, skin-side down. Transfer pan to lowest rack in oven. Cook until skin is dark golden brown and meat feels firm (for medium-rare), 10 to 12 minutes. Transfer duck, skin-side up, to a rimmed baking sheet. Let stand 5 minutes.
  • Preheat broiler to the lowest setting possible.
  • Using a heavy skillet, crush almonds; spread in a thin, even layer. Spoon 1/2 teaspoon honey on the skin side of each duck breast; press into almonds to adhere. Return to baking sheet, skin-side up and fill in any gaps with remaining almonds. The whole skin side should be evenly coated.
  • Transfer baking sheet to broiler and broil until almonds are toasted and sugar starts to melt, about 7 minutes, checking occasionally to make sure the almonds don't burn before the sugar begins to melt. Remove from broiler and let stand 5 minutes before slicing.
  • Meanwhile, reheat vinegar mixture over low heat until hot. Whisk in butter, a tablespoon at a time, until emulsified; season with salt and pepper. Divide sauce among serving plates and top each with a duck breast. Serve.

DUCK BREASTS WITH PORT REDUCTION SAUCE

Duck Breasts with Port Reduction Sauce image

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry

Number Of Ingredients 9

2 tablespoons minced shallots
3/4 cup ruby port wine
1/2 cup chicken stock
2 sprigs fresh thyme
2 tablespoons unsalted butter
Coarse salt
Freshly ground pepper
1 large Muscovy duck breast, about 1 pound
Coarse salt and freshly ground pepper

Steps:

  • Using a sharp knife, trim away excess skin from the duck (leaving enough to amply cover the breast). Using a sharp knife, score the skin, first cutting diagonally in one direction, and then the other, in a crosshatch manner. Cut all the way through the skin and most of the fat, but avoid the flesh. Alternatively, you can use a Jaccard tool to pierce the skin. On a small rimmed baking sheet or a plate, place a 1/4 inch layer of salt rough the size of the duck breast. Place duck breast skin-side down on bed of salt. Let stand at room temperature for 1 hour. Remove and brush off salt with a stiff brush. Line a small rimmed baking sheet or shallow dish with ice cubes and cover with plastic wrap. Place duck breast skin-side down on plastic wrap and weight it with a cheesecloth bundle filled with pie weights or dried beans for 25 minutes at room temperature.
  • Preheat oven to 350 degrees. Remove cheesecloth bundle and season flesh side with pepper, and place skin side down, in an unheated 10-inch skillet. Top again with cheesecloth bundle and cook over medium-low heat until a small pool of fat forms in the pan. As fat accumulates, spoon off into a heatproof bowl and reserve for another use; allowing it to cool before storing in an airtight container at room temperature. Continue to cook duck until the skin is nicely browned and crisp, about 25 minutes. Use tongs to turn breast over and top with cheesecloth bundle for 1 minute. Remove bundle and transfer skillet to oven and cook until duck is medium rare, 8 to 12 minutes. It should register 125 degrees on an instant-read thermometer inserted into the thickest part. Transfer to a wire rack set over a rimmed baking sheet to rest for 5 to 7 minutes. The duck will continue to cook slightly during this time.
  • Drain all of fat from the pan and place over medium heat. Add the shallots and cook until soft, about 2 minutes. Increase heat to medium high and add the port, chicken stock, and thyme, scraping the bits from the bottom of the pan with a wooden spoon. Bring to a simmer and cook until sauce is syrupy and reduced to 1/3 cup. Remove from heat and whisk in butter until fully incorporated. Season to taste with salt and pepper and serve.
  • Slice duck crosswise on a slight angle into 1/4-inch-thick slices, fan out on serving plates, and drizzle with sauce before serving.

SLOW-ROASTED BALSAMIC-GLAZED DUCK

Slow-Roasted Balsamic-Glazed Duck image

For an elegant and easy-to-make holiday meal, chef April Bloomfield of The Spotted Pig and The John Dory Oyster Bar favors slow-roasted Pekin duck paired with savory vegetables.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Yield Serves 8

Number Of Ingredients 11

2 (4 1/2-pound) Long Island or Pekin ducks, giblets and wings removed and reserved
Coarse sea salt and freshly ground pepper
6 tablespoons olive oil
2 heads garlic
4 bulbs fennel, trimmed, outer layers only, chopped (remaining inner layers reserved for Roasted Vegetables)
6 cups store-bought low-sodium chicken stock
1 lemon, halved crosswise
1 bunch thyme
1 cup balsamic vinegar
Juice of 1 lemon
Roasted Vegetables, for serving

Steps:

  • Preheat oven to 350 degrees. Fit a large roasting pan with a rack. Place ducks on rack and prick duck skin all over with the tines of a fork, taking care not to pierce the flesh. Season ducks all over with sea salt; let stand 30 minutes.
  • Meanwhile, chop duck wings and neck; set aside. Heat oil in a large heavy-bottomed saucepan over medium-high heat. Add duck wings and necks and cook, stirring, until browned. Separate and peel garlic cloves from 1 head of garlic; reduce heat to low and add fennel and garlic cloves. Cook, stirring, until vegetables are softened. Add stock and cook until reduced by half, about 40 minutes. Strain into a small saucepan; skim fat from surface. Set sauce aside.
  • Halve remaining head of garlic and crush slightly. Divide lemon, thyme, and garlic evenly between duck cavities. Transfer duck to oven and roast, turning every 25 minutes, until duck begins to brown. Meanwhile, mix together vinegar and lemon juice. Once duck starts to brown, begin basting with vinegar mixture and cook until duck skin is dark brown and meat begins to come away from the breastbone, 2 to 3 hours total.
  • Remove from heat and let duck stand for 15 minutes. Meanwhile, reheat sauce over medium heat until warmed through and reduced to desired consistency. Carve duck and serve with sauce.

MARINATED DUCK BREAST WITH SAUTED POTATOES

Marinated Duck Breast with Sauted Potatoes image

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes

Yield Serves 2

Number Of Ingredients 9

1/2 cup extra-virgin olive oil
1/4 cup red wine or balsamic vinegar
4 sprigs fresh rosemary, 1 needles removed, 3 whole sprigs
2 sprigs fresh thyme
Coarse salt and freshly ground pepper
1 boneless magret duck breast, halved, rinsed, patted dry, and skin scored in a 1-inch crosshatch pattern
2 medium Yukon gold potatoes, cut into 1-inch pieces
2 cloves garlic, chopped
4 cloves garlic, unpeeled

Steps:

  • In medium bowl, combine oil, vinegar, chopped garlic, 1 sprig thyme, 1 sprig rosemary, salt, and pepper. Add duck, cover with plastic wrap, and marinate, turning occasionally, overnight in the refrigerator.
  • Remove duck from marinade, and pat dry with paper towels; discard marinade. Set aside. Place a heavy-bottomed skillet over medium heat. Add duck, skin-side down, and cook until the skin is browned and crispy, about 8 minutes. As excess fat accumulates, drain into a heatproof bowl and reserve. Increase heat to medium-high; turn duck, and cook for 5 minutes. Transfer to cutting board; allow to rest for 10 minutes before slicing.
  • Meanwhile, pour reserved fat into a cast-iron skillet over high heat. Add potatoes; when just beginning to brown, add picked rosemary, thyme, and remaining unpeeled garlic. Saute until potatoes are crispy and golden, 6 to 8 minutes.
  • Just before serving, slice duck across the grain into 1/2-inch-thick slices. Fan out decoratively between two plates. Garnish each with a rosemary sprig; serve with potatoes.

SEARED DUCK BREAST WITH CHILI, HONEY, & GINGER GLAZE

Seared Duck Breast With Chili, Honey, & Ginger Glaze image

I love duck but haven't tried that many recipes for it because it's expensive and usually only available here during the holidays. I found this one in Bon Appetit and it has several rave reviews. Hope to try this next time I find some duck.

Provided by lazyme

Categories     Duck Breasts

Time 36m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 whole magret duck breasts, approximately 1 pound each, available from specialty meat markets
salt & freshly ground black pepper
1 small dried ancho chili pepper (soaked in 1 cup boiling water for 30 minutes, reserve soaking water)
1 small white onion, finely chopped
1 tablespoon grated ginger
2 tablespoons warm honey (dissolved in 1/2 cup port wine)
2 scallions, chopped, about 1/2 cup

Steps:

  • With the point of a knife, score the skin side of the breasts in crosshatch pattern, being careful not to pierce the flesh of the meat.
  • Season the duck breasts with salt and pepper.
  • Heat a saute pan over medium heat for 1 minute before adding the breasts, skin side down.
  • Cook skin side down over medium to low heat, for approximately 10 to 12 minutes to render the fat from the skin before turning the breasts over.
  • When the duck has rendered its fat and the skin has taken on a crisp exterior quality turn the breasts over and saute the flesh side for 3 to 4 minutes.
  • Carefully remove the duck from the pan, place on a platter to keep warm and pour the excess fat safely into a heat proof container. (The reserved duck fat may be chilled and used for another cooking use.).
  • While the duck is cooking (or even before you cook the duck), remove the chili pepper from the water in which it had soaked and reserve the liquid.
  • Place the chili into a blender and begin to puree, adding as much of the reserved liquid as necessary to create a smooth and thin paste-like texture.
  • This chili paste may be refrigerated for a day covered with plastic wrap or pour a tablespoon of olive oil on its surface and keep refrigerated for up to 1 week.
  • After removing the duck breasts from the pan add the onion to still hot pan and return to the heat.
  • Add a tablespoon or two of reserved duck fat.
  • Saute the onion briefly before adding the ginger and 2 tablespoons of the chili paste.
  • Add the honey and port to the ginger chili, stir to combine and cook for one minute.
  • The breasts have rested for several minutes and should now be medium rare.
  • They can be sliced lengthwise or cross-wise and several slices placed on each plate.
  • Drizzle the warm glaze over the duck or for more impact, brush some on the duck breasts before slicing, run the duck under a hot broiler for 1 minute, caramelize the glaze and then slice and drizzle.
  • If you desire, drizzle some around the duck breasts on the serving dish.
