2 links mild Italian sausage
2 tablespoons olive oil
1 small onion, chopped
1 clove garlic, finely chopped
One 32-ounce can tomato puree
1/3 cup tomato paste
2 teaspoons sugar
2 teaspoons salt
1/3 cup fresh basil leaves
One 1-pound loaf fresh Italian bread
1/2 cup fresh parsley leaves, chopped
2 tablespoons grated Romano cheese
1 cup all-purpose flour
3 large eggs
A pinch salt and pepper
Four 6-ounce boneless, skinless chicken breasts
Olive oil, for frying
1/2 cup shredded mozzarella

Steps:

  • For the sauce: Preheat the oven to 350 F. Put the sausages in a small baking pan and poke each a couple times with a fork. Roast until cooked through, 12 to 15 minutes. Let cool and chop the sausages, reserve the pan drippings. Set aside.
  • Heat the oil in a large pot over medium heat, add the onion and garlic and cook, stirring, until soft, 3 to 4 minutes. Add the tomato puree, 2 1/2 cups water, tomato paste, sugar and salt. Bring to a simmer, adjust to a low simmer and cook for 10 minutes. Add the sausage and reserved drippings. Continue simmering until thickened, 20 to 25 minutes more. Stir in the basil. Keep warm.
  • For the cutlets: Cut the bread into pieces and pulse batches in a food processer until fine breadcrumbs. Mix together the breadcrumbs, parsley and Parmesan in a shallow bowl. Beat the eggs with the salt and pepper in another shallow bowl. Put the flour in a third shallow bowl.
  • Pound out the chicken breasts between two pieces of plastic wrap or wax paper until just less than a 1/4-inch-thick. Sprinkle each with salt and pepper.
  • Bread the chicken: Coat each breast in flour, shake off the excess. Then dip in the egg, letting excess drip off. Finely coat completely in the breadcrumbs. Set aside on a plate.
  • Coat the bottom of a large skillet in about a 1/4-inch layer of oil. Heat over medium. Once the oil is hot and shimmering, add the breaded chicken and fry until the cutlets are golden brown and completely cooked through, 3 to 4 minutes per side.
  • Ladle half the tomato sauce in a baking dish, top with the chicken cutlets and cover with the remining sauce and sprinkle the cheese over top. Bake until the cheese melts, 2 to 3 minutes.

4 cloves garlic, large, about ½ head of garlic
1/4 cup extra-virgin olive oil
kosher salt
1 teaspoon dried red pepper flakes (optional)
2 28-oz cans whole peeled tomatoes, puréed, preferably San Marzano DOP
sugar
2 sprigs basil
2 cups Italian-seasoned breadcrumbs, preferably Progresso brand
1/2 cup finely grated Parmigiano-Reggiano
1/4 cup finely grated Pecorino, preferably Pecorino Toscano
1 tablespoon granulated garlic
2 teaspoons dried oregano
1/4 cup potato starch
Kosher salt, divided
Freshly ground black pepper
4 skinless, boneless chicken breasts, about 2 lbs total
1 cup all-purpose flour
4 large eggs
1 1/2 cups Breading Mixture, from Step 3
1/2 cup vegetable oil, or any neutral oil
2 tablespoons extra-virgin olive oil
2 cups Marinara Sauce, from Step 1
1 cup grated Parmigiano-Reggiano
1/3 cup grated Pecorino, preferably Pecorino Toscano
1 cup shredded whole-milk mozzarella cheese
Basil leaves, for garnish

Steps:

  • Marinara Sauce: Trim root ends of the garlic cloves, then smash with the flat side of a knife. Peel off skins and set aside. In a 4-quart Dutch oven over high heat, add oil, followed by garlic. When the garlic begins to sizzle, add a pinch of salt. Stir and toast the garlic until deep golden brown, 3-4 minutes. Add red pepper flakes (optional, for heat), reduce temperature to low, and add tomatoes. Increase heat to medium, add two pinches of salt and two pinches of sugar, and bring sauce to a simmer, 10-12 minutes. When simmering, taste and adjust for seasoning. Turn off heat.In a large bowl, add two large sprigs of basil, then pour the sauce over the basil. Set aside to steep while making the chicken. (Makes 2 quarts. Once cool, remove and discard basil; store in an airtight container in the refrigerator up to 4-5 days or in the freezer up to 3 months).
  • Chicken: Place chicken breast on a flat surface lined with parchment paper. Carefully slice in half horizontally, into 2 equal pieces. Repeat with remaining chicken breasts to make a total of 8 cutlets.Place 1 chicken cutlet into a 1-gallon zip-top plastic bag. Use a small heavy-bottomed pan or meat mallet to pound the cutlet until it's ¼-inch thick. Remove cutlet, set aside, and repeat with remaining cutlets.
  • Breading: In a large bowl, add seasoned breadcrumbs, both cheeses, granulated garlic, dried oregano, potato starch, 1 teaspoon salt, and 13 grinds of pepper. Toss to combine, then set aside. In another large bowl, add flour. Season with 1 teaspoon salt and 6 grinds of pepper; mix to combine. In a third bowl, add 4 eggs and beat with a fork or whisk until combined. Season with 1 teaspoon salt and 6 grinds of pepper.
  • One by one, dredge chicken cutlets in flour, shaking off excess flour. (Don't worry if the pounding has left some holes in the chicken-they'll soon be covered by breading and cheese!) Dip dredged chicken in the beaten egg, then into the breading mixture, carefully pressing the breading into the chicken so it adheres. Set breaded chicken on a rack fitted over a baking sheet until ready to fry. (Note: Chicken can be prepared to this point several hours in advance. Store the breaded cutlets in the refrigerator in an even layer, covered with plastic wrap or foil.)
  • Fry chicken: In a cast-iron skillet over medium-high heat, add vegetable and olive oils. (There should be about ¼-inch of oil in the pan, so adjust amounts as needed.) Test the oil's temperature by adding a few drops of water: if the water sizzles right away, the oil is ready for frying. Gently lay the chicken into the oil away from you to avoid any splatters; the oil should reach a little more than halfway up the chicken. Let fry undisturbed for about 2 minutes. Use a spatula to check the underside of the cutlet for golden brown color. When it's ready to turn over, gently and carefully flip chicken away from you and cook the other side, about 2 more minutes. (Use a second spatula or spoon if necessary, but try to avoid using tongs, as they might tear the delicate crust.) Chicken is cooked all the way through when it's firm to the touch and both sides are golden brown. Drain fried cutlet on a baking sheet lined with paper towels, and sprinkle with salt while still hot. Repeat with remaining chicken cutlets, adding more oil as needed and keeping the temperature steady.
  • Assembly: Preheat broiler. In a large bowl, combine the three cheeses. Place chicken cutlets on a baking sheet in an even layer. (Depending on oven size, you can do this in batches, or use several baking sheets.) Remove basil and garlic cloves from Marinara Sauce and discard. Spread each cutlet with ¼ cup of sauce, leaving the edges uncovered, then top with a generous ¼ cup of cheese mixture. Place in the oven on a rack about 6 inches from the heat source. Don't step away-you don't want the cheese to burn! Broil 1 minute, checking after 30 seconds, and remove when cheese is fully melted and bubbly. Garnish with freshly torn basil leaves and serve immediately.

4 medium eggs

2 cups good quality seasoned dry bread crumbs
4 boneless chicken breasts
1/4 cup olive oil
1 (26 ounce) jar tomato and basil pasta sauce
1/2 cup freshly grated parmesan cheese
1 cup freshly grated mozzarella cheese

Steps:

  • One at a time, place the chicken breasts in a gallon sized freezer bag, and pound to about 1/2 inch.
  • Place the eggs in a large bowl and whisk with salt and pepper.
  • Place the bread crumbs in a large bowl and mix with the parmesan cheese. (If you run out of this when dipping the chicken, just make a little more).
  • Pre-heat the oven to 350°F
  • Dip each chicken breast in the egg, then the crumb mixture. Re-dip in the egg and then the bread crumbs for a second time.
  • In a large heavy (non-stick) skillet heat the olive oil over medium heat. Brown the double dipped chicken in the hot oil for about 4 minutes each side, until golden brown.
  • Remove the chicken and place in a large baking dish (glass). Divide the tomatoe sauce and spread evenly over each chicken breast.
  • Sprinkle each chicken breast evenly with the mozzarella cheese.
  • Bake on the middle shelf of the oven for 20 minutes until the chicken is cooked through and the cheese is hot and bubbling.

2 tablespoons olive oil, plus 1 tablespoon for the baking dish
1-ounce chopped pancetta
1 medium yellow onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 cup red wine
1 (28-ounce) can diced tomatoes
Pinch dried basil
4 boneless skinless chicken breast halves
1 teaspoon salt
5 cups dried Italian bread crumbs
1 tablespoon dried oregano
1 tablespoon dried thyme
Freshly ground black pepper
All-purpose flour, for dredging
6 large eggs, beaten
2 tablespoons whole milk
Vegetable oil, for frying
1 pound fresh mozzarella, thinly sliced
1/2 cup grated Parmesan

Steps:

  • Tomato Sauce: In a large skillet heat the olive oil, add the pancetta and render the fat. Stir in onion, garlic and dried oregano and saute until the onions are wilted. Add the wine and cook until reduced. Add the tomatoes, basil; partially cover pan and cook over medium heat until the sauce gets thick.
  • Chicken: Pound the chicken breasts, between 2 pieces of plastic wrap, to about 1/3-inch thick.
  • Mix the salt, bread crumbs, oregano, thyme, and season with pepper in a flat dish.
  • Put the flour in a large plate or bowl. In another bowl, whisk the eggs and milk together. Dredge a chicken breast in the flour (patting off excess flour). Dip it into the egg mixture, and dredge in the bread crumbs. Shake off any excess breading. Repeat with the remaining chicken.
  • Preheat the oven to 400 degrees F.
  • In a large skillet, add 1/2-inch vegetable oil. Heat the oil to 400 degrees F on a deep-frying thermometer.
  • Fry 1 breast at a time until golden brown on each side, about 6 minutes total. Transfer to a paper towel-lined baking sheet and season with salt, to taste.
  • Grease a 2 quart baking dish and ladle in 1/2 of the tomato sauce. Spread it out to cover the bottom of the dish. Arrange the fried breasts over the sauce in 1 layer, top with the remaining sauce, the mozzarella, and finally the Parmesan.
  • Bake until the sauce and cheese are bubbling.

3 1/2 pound frying chicken, cut into 8 serving pieces
2 cups buttermilk
1/4 cup water
2 teaspoons red pepper sauce
3 cups flour
1 tablespoon kosher salt
Fresh cracked black pepper, to taste
1 tablespoon dried oregano
1 tablespoon granulated garlic
1 teaspoon paprika
1 teaspoon cayenne
4 cups peanut oil, for frying

Steps:

  • Rinse the chicken pieces and pat dry with paper towels. In a shallow platter, combine the buttermilk, water, and red pepper sauce. Soak the chicken pieces, turn to coat, then cover, and refrigerate for at least 2 hours. If time allows, marinate the chicken for up to 24 hours because the buttermilk promotes tenderness. Place flour in a shallow platter. Season it by mixing in salt, pepper, oregano, garlic, paprika, and cayenne. Roll the marinated chicken pieces in the flour, a few at a time, until well coated. Then, dip chicken in the buttermilk bath again followed by another coat of seasoned flour. Allow the chicken to sit in the flour and dry out while preparing the oil, this will help the coating stay on better. The buttermilk will keep absorbing the seasoned flour, which then fries up to form a crunchy crust. Heat oil in a large electric skillet to 350 degrees F. There should be about 1-inch of fat in the pan. Carefully add the chicken pieces in a single layer, skin side down. Do not crowd the pan or the temperature will plummet; make sure the fat continues to bubble around the chicken. Fry for 5 minutes, then turn the pieces over and fry the other side 5 minutes. Turn again, frying a total of 15 minutes. The turning will produce a golden-crisp skin with even color. Remove chicken to a plate lined with paper towels to drain. Do not put hot chicken directly in a bowl or container, the air can not circulate and the steam will cause the crust to fall off. Serve immediately or cool to room temperature.

Steps:

  • Set out 3 disposable pie tins. Mix flour with paprika, poultry seasoning, cayenne, and allspice. Divide seasoned flour between 2 tins. Pour buttermilk into a tin. Line up tins as such: flour, buttermilk, and then flour.
  • Season chicken with salt and pepper. Coat chicken pieces in flour, then buttermilk, then a second coating of flour.
  • Cook chicken 6 minutes on each side, until deep golden brown and firm. Drain chicken on paper bags and cool before packing up for picnic basket.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
  • Mix flour and 2 tablespoons ranch seasoning in a shallow bowl. Beat egg in a second shallow bowl.
