Dosas are a thin, savory crepe-like Indian pancake traditionally eaten for breakfast, but I like them anytime. These may not be very authentic, but they are a tasty alternative that appeals to the typical American pancake.

1 cup brown rice flour
½ cup whole wheat flour
1 ½ cups water
1 red onion, finely chopped
1 clove garlic, minced
¼ cup fresh cilantro, chopped
¼ teaspoon white sugar
½ teaspoon ground turmeric
1 teaspoon ground cumin
2 teaspoons whole mustard seeds
1 teaspoon cumin seeds
1 teaspoon ground coriander
1 teaspoon ground ginger
1 pinch cayenne pepper
3 tablespoons rice vinegar
1 tablespoon vegetable oil

Steps:

  • Stir the brown rice and whole wheat flours together in a mixing bowl. Stir in the water to make a thin batter. Add the onion, garlic, cilantro, sugar, turmeric, cumin, mustard seeds, cumin seeds, coriander, ginger, cayenne pepper and rice vinegar until evenly blended. Cover, and refrigerate for at least 1/2 hour, or overnight.
  • To cook the dosas, heat the oil in a skillet over medium heat. Pour 1/4 cup of batter into the skillet, spreading it over the bottom in a thin layer. Cook 1 minute, turn, and cook 1 minute more. Remove from the pan. Repeat with remaining batter.

Dosas are popular all over the world. There are countless Udipi restaurants in India and abroad, and not one of them leaves out this iconic food from its menu.

3 cups white rice
1 cup urad dal (split, skinless black gram)
3/4 teaspoon fenugreek seeds
2 3/4 cups water (plus more for soaking)
Salt (to taste)
Ghee (or vegetable, canola, or sunflower oil)

Steps:

  • Gather the ingredients.
  • Wash the rice and urad daal well and drain. Add the fenugreek seeds to the mix and add enough water to the bowl to cover the mixture by about 2 inches. Soak overnight.
  • The next morning, drain all the water from the rice mixture. Add to a high-speed blender and process-adding 1 3/4 cups ice-cold water-until a smooth yet slightly grainy paste has formed.
  • Transfer to a large mixing bowl and gradually add another cup of water to make a batter. The consistency of the batter should be such that it thinly coats a spoon dipped in it.
  • Add salt (or salt to taste) and keep the dosa batter aside in a warm, dark spot, covered, for 12 to 24 hours. After this fermentation, stir the batter well. It will have thickened to coat a spoon thickly. It is now ready to make dosas.
  • Put some ghee or oil in a small bowl and keep ready. You will also need a small bowl of ice-cold water, a large, flat nonstick pan, paper towels, a ladle, a spatula, and a basting brush .
  • Fold 1 sheet of paper towel into a thick rectangle and dip lightly into the bowl of ghee or oil. Squeeze out any excess and then rub the paper towel all over the surface of the pan to lightly grease. The ghee or oil should barely be visible in the pan. Turn on the heat to medium-high.
  • Add a scant ladleful of batter to the center of the pan, much like you would for a pancake.
  • Begin to spread the batter in sweeping circular motions to form a pancake of roughly 8-inch diameter. Do not be alarmed if the dosa develops tiny holes as you spread the batter. This is normal.
  • As soon as you have finished spreading the batter out on the pan, dip the basting brush in ghee and drizzle all over the surface of the dosa and around its edges. Hold the pan by its handle, lift it up, and swirl it so that the drizzled ghee spreads all over the dosa.​
  • Cook for 1 1/2 minutes, or until the upper surface begins to look cooked (it will no longer look soft or runny).
  • Then, flip the dosa. By this time, the surface that was underneath should be light golden in color. Cook for 1 minute after flipping.
  • The dosa is almost done. Fold it in thirds like a parcel and allow to cook for 30 seconds more.
  • Before you start making the next dosa, fold another sheet of paper towel into a wad and dip it in ice-cold water. Squeeze to remove excess water and then rub it all over the surface of the pan to cool it slightly. This ensures your next dosa will spread evenly and not break because the pan is too hot.
  • Repeat until you've used all of the batter.

In response to a request, I haven't tried these, but they sound intriguing. This is an Indian lentil and rice pancake. The mixture needs to soften and set for sometime, you'll need at least 1 1/2 days to complete the process.

7 1/4 cups bottled water (chlorine interferes with softening process)
1 1/2 cups basmati rice
1/2 cup Urad Dal (skinned split lentils)
1 tablespoon sugar
2 teaspoons sea salt
4 teaspoons vegetable oil (divided)

Steps:

  • Combine 6 cups water, rice and lentils in a large bowl.
  • Cover and let stand 8 hours.
  • Drain and rinse.
  • Place the rice mixture, 1 1/4 cups water, and sugar in a food processor and puree until smooth.
  • Spoon batter in a clean bowl and cover.
  • Let stand for 12 hours (in a warm place free from drafts) or overnight.
  • Stir in salt.
  • Heat 1/2 tsp.
  • of oil in an iron skillet.
  • Spoon 1/3 cup into pan and heat over medium heat.
  • Turn pancake over when bubbles form and edges are cooked.
  • Repeat until batter is cooked.

ADAI DOSA (GLUTEN-FREE INDIAN PANCAKES)

¾ cup uncooked white rice
½ cup chana dal (split chickpeas)
½ cup urad dal (black lentils)
½ cup toor dal (pigeon peas)
¾ cup minced red onion
1 ½ tablespoons dried hot red pepper flakes, or to taste
12 leaves fresh curry
¼ teaspoon asafoetida powder
salt to taste
1 ½ cups water
1 tablespoon melted ghee, or as needed

Steps:

  • Combine rice and all dals in a bowl of cold water; soak for 45 minutes. Rinse several times and drain. Grind into a coarse meal.
  • Add onion, pepper flakes, curry leaves, asafoetida powder, and salt. Slowly add water and stir until smooth. Let sit in a warm place until is starts to ferment, at least 45 minutes, but ideally longer.
  • Grease a frying pan with melted ghee and set over medium heat. Ladle some batter into the pan; spread it thinly and evenly into a circular shape and drizzle with more ghee. Cook until golden brown, 5 to 8 minutes, flipping halfway through. Repeat to cook remaining adai dosa.

  • Ingredients Required and Preparation :- Wash / rinse all vegetable , greens and fruit in a bowl of warm water several times. Take all ingredients - spinach , carrots - Peel the outer skin of the carrots and chop it into small cubes , beetroot - Peel the outer skin of the beetroots and chop it into small cubes , blueberry , Eggs , turmeric , salt and idli / dosa batter (freshly made is better).
  • I used Indian Pressure cooker to pressure cook all the veggies and greens. Take all the chopped vegetables and spinach in a inner plate / vessel of the pressure cooker . "Do not add water or salt". Put the gasket on the lid of the cooker and close the lid. When the steam bubbles along with the water, Put the weight on the cooker and pressure cook for ONLY ONE WHISTLE on high flame. Switch off the flame and remove the cooker from stove. Let the pressure release naturally. Open the lid of the pressure cooker. Let the vegetables and greens cool down a bit.
  • Spinach Puree - Take the pressure cooked spinach in a mixer / food processor and grind it to puree - smooth paste . Do not add water while grinding. (leaves after pressure cooking will have enough water to grind)
  • Carrots Puree - Take the pressure cooked carrots in the mixer / food processor and first grind once or twice to break down the carrots cubes. Then add 1/2 cup water ( 90 ML) and grind to smooth paste -puree. (Add few tablespoons of water at a time to control the consistency - Puree should not be too watery ) .
