Pesto-Rubbed Baked Salmon with Smashed Cucumber and Green Apple Salad image

Unsalted butter, softened, as needed
Kosher salt and freshly ground black pepper
Six 6-ounce skinless salmon fillets, preferably wild
3 tablespoons prepared pesto
2 tablespoons Dijon mustard
1 teaspoon fresh lemon juice
1 English cucumber, peeled
Kosher salt and freshly ground black pepper
1/4 cup finely diced pitted Medjool dates (about 6)
2 green apples, cored and cut into 1/4-inch dice
1/2 cup toasted pine nuts
3 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh mint
Juice of 1 lemon

Steps:

  • For the salmon: Preheat the oven to 300 degrees F.
  • Brush a baking dish with a thin coat of softened butter and sprinkle a little salt and pepper over the surface. Set the salmon fillets upright (flat-side down) on the baking dish, brush a little soft butter over each fillet and sprinkle them with salt and pepper.
  • In a small bowl, whisk the pesto, mustard and lemon juice together and season it with salt and pepper. Spoon the mixture evenly over the salmon, covering the top surface only. Bake until the desired doneness, about 14 minutes for medium rare for 1 1/2-inch-thick fillets (cook longer for thicker pieces).
  • For the salad: Meanwhile, put the cucumber into a clean towel on a cutting board and smash it with the heel of your hand. Unwrap the cucumber and slice it crosswise into 1/2-inch pieces; transfer them to a mixing bowl and sprinkle a little salt over them. Add the dates and apples and stir to mix. Add the pine nuts, olive oil, mint and lemon juice; season with salt and pepper, and toss until evenly combined.
  • Serve the salmon fillets on warm plates with the salad on the side.

1/4 cup fresh parsley (finely chopped)
1/4 cup Dijon mustard
1 tbsp lemon juice
1 tbsp avocado oil
3 garlic cloves (finely chopped)
salt and pepper

Steps:

  • Preheat your oven to 375 degrees Fahrenheit. Mix together the mustard, parsley, lemon juice, oil, and garlic in a small bowl.
  • Place the salmon on a parchment lined baking tray and generously coat the top of the salmon with the herbed mustard mix.
  • Bake the salmon for 18-20 minutes (depending on size and thickness), then slice it into individual portions and serve immediately.

¼ cup butter, melted
3 tablespoons Dijon mustard
1 ½ tablespoons honey
¼ cup dry bread crumbs
¼ cup finely chopped pecans
4 teaspoons chopped fresh parsley
4 (4 ounce) fillets salmon
salt and pepper to taste
1 lemon, for garnish

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
  • Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
  • Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

One 2 1/2-pound center-cut skin-on salmon fillet, cut into 6 equal pieces
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 English (hothouse) seedless cucumbers, peeled and cut into 8 pieces
3/4 cup finely sliced fennel, feathery fronds reserved for the garnish
6 Medjool dates, pitted and cut in slivers
1/3 cup coarsely chopped walnuts
2 tablespoons minced fresh chives
2 tablespoons fresh lemon juice (1/2 a large lemon)
6 tablespoons fruity olive oil (preferably from Spain)
Medium-coarse sea salt (preferably Maldon from England)
Fresh ground black pepper

Steps:

  • Prepare the salmon: Prepare a charcoal fire in an outdoor grill (alternatively, cook the salmon indoors on a grill pan); the coals should be medium-hot and the rack should be positioned about 6 inches from the fire. Place the salmon fillets on a cutting board, skin-side down. Cut down the center of each fillet lengthwise along the center seam. Cut through the flesh but not the skin. Draw the salmon flesh apart at the incision, flattening the fillets, leaving them skin-side down. Fold each fillet into a horseshoe shape, bending it back onto itself, so it resembles a boneless salmon steak. Brush each piece of fish lightly on both sides with extra-virgin olive oil and sprinkle with kosher salt and pepper.
  • Grill the salmon just until the flesh firms and grill marks appear, about 2 1/2 minutes on the first side and about 1 1/2 minutes on the second side. Rotate each fillet one quarter-turn (90 degrees) and grill just long enough to mark the fillets, completing a cross-hatch pattern, less than 1 minute. Turn the fillets over and repeat the grilling and rotating procedure until the other sides show the cross-hatch grill markings. Remove the fish from the grill and reserve. (The salmon can be grilled up to 1 hour in advance of the meal.)
  • Prepare the salad: Roll the cucumber pieces up in a clean linen napkin or towel, and then smash them, pressing down hard with the heels of your hands while ensuring the towel doesn't unroll, to release the juices. Transfer the crushed cucumbers to a cutting board, and then coarsely chop. Combine the cucumbers, sliced fennel, dates, walnuts, chives and some of the fennel fronds in a salad bowl and mix gently.
  • Finish cooking the salmon and dress the salad: Preheat the oven to 350 degrees F. Arrange the salmon fillets in a baking dish, brush each one lightly with extra-virgin olive oil and roast about 3 1/2 minutes for medium-rare.
  • Meanwhile, dress the cucumber salad with the lemon juice and 4 tablespoons of fruity olive oil. Then season with sea salt and pepper. Toss the salad lightly, and then arrange equal portions on each of six plates. Top each portion of salad with a grilled salmon fillet. Drizzle a little fruity olive oil on top of each portion, garnish each plate with fennel fronds and serve.

3/4 lb. center-cut salmon fillet, 1" thick
1 Tbs. olive oil, plus more for oiling the fish
Kosher Salt
freshly ground black pepper
1 1/2 tsp. dried thyme
1 Tbs. unsalted butter
aged balsamic vinegar or balsamic vinegar reduction, for drizzling

Steps:

  • Cut salmon fillet into two equal portions and brush both sides of each piece with olive oil. Sprinkle flesh side with salt, pepper and dried thyme. In a large skillet, heat one tablespoon olive oil and butter on medium-high until butter foams. Carefully place fillets flesh-side down in skillet. Cook without moving until edges begin to crisp, about 2 minutes. Decrease heat to medium and cook until fillets are golden brown, about 1 minute more. Turn fillets so they are skin-side down and continue cooking until medium-rare and skin is crisped, 5-7 minutes depending on their thickness. Add a few additional drops of olive oil as needed to prevent sticking. Remove fillets to serving plates and drizzle with balsamic vinegar. Serve immediately.
