This creamy, dreamy Cottage Cheese Jello Salad is one of my favorite treats once the weather turns warm in the spring and summer. It's perfect for potlucks, backyard barbecues, and family reunions!

- Combine cottage cheese, pineapple, and gelatin in a bowl, stirring well.
- Fold the Cool Whip in with the other ingredients until combined. Try not to overmix and deflate the Cool Whip.
- Transfer to a clean serving bowl, then cover and refrigerate for 1 hour before serving.

EASY ELEGANT COTTAGE CHEESE AND PINEAPPLE SALAD
Individual servings of a very colorful starter or attractive salad on the side which can be made ahead of time. Super easy for a beginner cook and good for you too! Before you think, eeks, mayonnaise, give it a try, it works really well. Of course you could omit the mayonnaise if you prefer. When we were kids my mom used to make this for us for lunch or for salad at dinner and we all loved it! :)

- Line up 4 small plates on your work area and place a layer of nice green lettuce leaves on each plate.
- Spoon 1/2 cup cottage cheese in the center of the lettuce on each plate.
- Put 1 slice pineapple over the cottage cheese on each plate.
- Dollop 1 teaspoon mayonnaise in the center of each pineapple per plate (I like more).
- Dab excess juice from the maraschino cherries with a paper towel and place the cherry on top of the dollop of mayonnaise.
- Can be served immediately or covered with plastic wrap and refrigerated until ready to serve.
PINK FLUFF
My mother has been making this form of ambrosia salad for years. To make blue fluff, substitute Blue Raspberry or Berry Blue Jell-O for the raspberry gelatin.

- In a large bowl, dissolve gelatin in water. Drain fruits, reserving enough cherry and pineapple juices to measure 2-1/2 cups; add to gelatin with lemon juice. Set fruits aside., Divide gelatin mixture in half. Set aside one portion of gelatin at room temperature; chill the other portion until partially set. Fold pineapple into chilled gelatin; pour into a 13x9-in. dish. Chill until almost firm. , In a small bowl, beat the cream, mayonnaise, cream cheese and salt until light and fluffy. Spread over chilled gelatin layer. Refrigerate until firm. Chill reserved gelatin mixture until partially set. Fold in cherries and nuts; spread over cream cheese layer. Chill for at least 3 hours.

- Pour the Jello mix into a heat proof bowl, about 4 cups in size. Carefully pour in the boiling water and stir until gelatin is dissolved. Refrigerate about 50 to 70 minutes. You want the gelatin to be liquid enough to easily stir things in thoroughly, but stiff enough to suspend things evenly without separating into layers.
- When the gelatin is about the right consistency, stir in the cottage cheese and the pineapple with all of the juice. Stir until everything is evenly and thoroughly mixed together. Cover and chill until firm, about two hours.
