DIANE'S SALISBURY STEAKS WITH MUSHROOMS AND ONIONS
I saw this in a magazine. Salisbury steak was a favorite of mine, but I never knew how to make it. I tried this recipe and loved it. I pared it down to reduce the sodium. I hope you enjoy it as much as we do.

- Start with a medium bowl. Add the potato flakes and milk. Stir to combine. Add the ground chuck, salt and pepper. Stir well to distribute.
- Divide the meat into four sections. Pull out a dinner plate, cover it with parchment paper. Scoop one quarter of the meat and form it into a patty. Round or oblong shape, whichever you prefer. Repeat with the rest of the meat. You should have four patties. Cover with plastic wrap and chill in the fridge for at least 30 minutes and no more than 4 hours.
- Time to cook: Heat a large frying pan over med. high heat. Melt 1 TBS butter in the pan. Cook the patties until browned, about 5 minutes per side. Remove patties, cover and keep warm. (I cover them with a piece of foil. They're going back in the pan in a few minutes.)
- While the patties are cooking, peel and slice the onion into strips. Clean and slice the mushrooms. (To clean the mushrooms, wipe them with a damp paper towel. You want to remove the flecks of dirt. I trim the stem just to cut off the dried edge, and then slice them.)
- Do not wipe out the pan. You want those brown bits to flavor the onions and mushrooms. Add remaining butter to the pan. (still over med. high heat.) Add the onions and saute' until the onion is softened, about 5 minutes. Sprinkle with a little salt and pepper, just a couple of shakes each. Add the mushrooms.
- Mix the gravy packet into 1 C of water. Return patties to the skillet. Pour the gravy mixture over the patties and veggies. Bring to a boil, then reduce heat to med.-low and simmer until cooked through, 12-15 minutes. Stir gravy occasionally while it simmers and thickens. Spoon the gravy over patties from time to time. Turn the patties at least once during the cooking time.
- Notes: I only listed the minimum amounts of salt and pepper. You are free to increase it as you wish. I prefer fresh cracked black pepper, which is difficult to measure. I use 12 twists of cracked black pepper, in the meat mixture and 4 more twists over the onions. Sometimes I sprinkle a pinch of dried thyme and/or rosemary into the gravy.
MUSHROOM & ONION SALISBURY STEAK
I know there are a lot of salisbury steak recipes out there but this is one my daughter makes a lot and I really enjoy it and don't want to lose the recipe. The gravy is delicious over mashed potatoes or noodles.

- Combine beef, bread crumbs, egg, onion, garlic salt, pepper and worcestershire sauce.
- Shape into 4 patties about 3/4 inches thick.
- Cook patties in skillet in a little oil for 10 minutes, or until both sides are brown.
- Add stock, onion slices, mushrooms and garlic to skillet.
- Heat to boiling, then reduce heat, cover, and simmer for 10 minutes.
- Remove patties from skillet. Keep warm.
- Bring onion mixture to a boil.
- Combine water and cornstarch.
- Add to onion mixture, bring to boil, stirring constantly, for 1 minute.
- Put meat back into pan to warm up and cover with sauce then put on a platter and serve.

SALISBURY STEAK WITH MUSHROOMS
A great from-scratch salisbury steak and gravy recipe I found a long time ago. The mushroom and onion gravy is wonderful over mashed potatoes or rice. The gravy is still good without mushrooms. I've made it for my husband that way.

- Combine ground beef, bread crumbs, chopped onion, egg, salt, and black pepper in a bowl until evenly mixed. Shape beef mixture into 4 patties, about 3/4 inch thick.
- Fry patties in a large skillet over medium heat until browned on both sides, about 10 minutes. Add beef broth, onion, and mushrooms; bring to a boil. Reduce heat to low, cover, and simmer until patties are no longer pink in the center, about 10 minutes more. Transfer patties to a platter and keep warm.
- Bring onion mixture to a boil. Mix cornstarch and water in a small bowl; stir into onion mixture. Cook and stir until onion gravy is thickened, about 1 minute. Pour over patties to serve.

These are delicious steaks my mom used to make when I was growing up. They are easy too! They go great with mashed potatoes or white rice and have a flavorful sauce left over, almost like a gravy.

- Mix ground beef, bread crumbs, egg, and onion soup mix together in a bowl; shape into 6 oblong patties.
- Heat oil in a large skillet over medium-high heat. Cook patties until browned, about 5 minutes per side.
- Stir golden mushroom soup and water together in a bowl; pour over the patties in the skillet. Turn patties to coat in the liquid. Bring liquid to a simmer, reduce heat to medium-low, place a cover on the skillet, and cook until steaks are very firm, hot, and grey in the center, 10 to 15 minutes. CREAMY MUSHROOM STEAK DIANE

- For the Steaks.
- Heat a small amount of oil in a pan until the pan is quite hot. Season steaks on both sides with salt and pepper. Place in pan sear 2-3 minutes each side. For medium rare cook for a further 2-3 mins on each side.
- Of course longer cooking times apply for more well done meat and it does depend on how thick the meat is.
- For the Sauce.
- Melt butter in a pan and saute the shallots and garlic until soft add Worcestershire and mushrooms continue to cook over medium heat until mushrooms start to soften.
- Add the mustard, lemon juice, beef stock and brandy, stir to combine, cook for 2-3 minutes add both the creams and thyme. You want to cook until sauce reduces slightly and thickens. if the sauce becomes to thick just add a little more of the half fat cream.
- Finally add chopped parsley and chives.
- Now you can either be cooking the steaks at the same time as making the sauce or it is fine to leave on a low heat while you cook the steaks just stir occasionally.
KITTENCAL'S SALISBURY STEAK WITH MUSHROOMS AND ONION GRAVY
This is total comfort food at it's very best! ---to save time this may also be made using store bought frozen hamburger patties ---the yield amount for this is six if you like lots of gravy then increase amounts to 3 cups beef broth and 6-7 tablespoons flour --- this is a must served with mashed potatoes :)

- In a bowl combine all hamburger mixture until combined.
- Shape into 6 patties.
- Heat oil in a large skillet over medium-high heat.
- Add in hamburger patties, cook until browned on each side (about 3-4 minutes per side, the burgers do not have to be cooked all the way through as they will finish cooking completely in the gravy) remove to a plate.
- To the same skillet add in sliced onion and mushrooms; cook stirring scraping up any browned bits that have accumulated on the bottom of the skillet; cook for about 8-10 minutes or until the onions are softened (adding in more oil if needed).
- Add in flour and cayenne pepper; stir for 2 minutes.
- Add in beef broth, Worcestershire sauce and black pepper; bring to a simmer stirring continuously until bubbly and thickened (at this point you may add in the beef bouillon powder).
- Add in the patties back to the skillet.
- Reduce heat to low and simmer uncovered for about 25 minutes turning the patties over once halfway through cooking.
