HOMEMADE MAC AND CHEESE
This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

Steps:
- Cook macaroni according to the package directions. Drain.
- In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
- Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

DELICIOUS AND EASY MACARONI AND CHEESE

Steps:
- Boil the macaroni for 4 minutes or until half-cooked (salt the water!)
- In a medium saucepan heat the half-and-half with cayenne, salt and pepper. Add macaroni and 1 1/2 cups of the cheese and cook on medium heat until the cheese melts. Pour into a buttered casserole and top with remaining cheese.
- Bake in a preheated 350F oven for 15 minutes until the cheese melts.

Steps:
- Pre-heat the oven to broil.
- Cook the noodles, as directed.
- Cube about 3/4 of the block of sharp cheddar cheese, and 3/4 of the block of mild cheddar cheese.
- Cut the remaining 1/4 of the blocks of cheese into slices, set aside.
- In a large sauce pan, heat the egg and begin melting the cubed cheese.
- Stir constantly!
- Slowly add the cubed cheese and evaporated milk, until all the cubed cheese is melted and desired consistency is reached. (I usually don't use the whole can of milk, but if you like it creamier, feel free!).
- Mix cooked noodles into the sauce pan with the melted cheese sauce.
- Pour into a 9 x 13 casserole dish.
- Cover the dish with the remaining sliced cheese.
- Broil for about 5-7 minutes, or until the cheese on top is melted, bubbly & brownish.
- I give it a good stir before serving, so all the cheese is mixed together.

- Preheat the oven to 180°C/fan160°C/ gas 4. Cook the pasta in a large pan of boiling salted water for 8-10 minutes until almost cooked. Drain the pasta, reserving 2 tbsp cooking water. Return the pasta to the pan and stir through the reserved water. Set aside.
- Meanwhile melt the butter in a pan, add the flour and cook for 2 minutes. Gradually stir in the milk, making a thick white sauce. Season, then add the mustard, cheeses and parsley.
- Mix the cheese sauce with the pasta, then spoon into a 1.5 litre ovenproof dish. Top with the extra Gruyère, then bake for 20-25 minutes until golden. Rest for 5 minutes before serving.
