GLAZED HAM STEAKS
This Ham Steak is covered in a sweet glaze and served with mustard for a quick & easy dish!

Steps:
- Place ham steaks and butter in a large frying pan over medium heat. Cook 2-3 minutes per side.
- Combine remaining ingredients and brush over the steaks.
- Cook an additional 2-3 minutes per side or until heated through and glaze is sticky.
- Serve warm with mustard.

CRISPY FRIED PORK CHOPS
Crispy fried pork chops are on the menu tonight! Thinly sliced pork chops are coated in a flavorful buttermilk mixture and dredging seasonings and then fried in oil. You're gonna love these!

- Season pork chops with 1 teaspoon salt and 1 teaspoon black pepper.
- Pour buttermilk and hot sauce into a 9x13 pan and stir to combine. Submerge seasoned pork chops into buttermilk mixture and set aside. Refrigerate up to 6 hours, or use right away.
- In another shallow bowl, stir together flour, cornstarch, 2 teaspoons salt, paprika, 1 teaspoon black pepper, onion powder, and garlic powder.
- Working one at a time, remove pork chops from buttermilk mixture. Shake it gently to remove the excess. Place it in the dredging mixture and coat thoroughly. Tap off the excess.
- Place the breaded chops into the 350 degree oil. Fry 2 to 3 chops at a time. The meat will drop the temperature of the oil so keep it as close to 350 degrees as possible. Fry each piece for 4 to 5 minutes, per side, until golden brown and pork is cooked through to an internal temperature of 145 degrees F.
- Remove from the oil and place on paper towels. Let them rest for 5 minutes before serving.

- 1. Combine flour, baking powder a pinch of salt and corn starch blending well.Set aside. Sprinkle chops or ham pieces with Cajun seasoning on all sides. Dip the chops or ham into the buttermilk and then dredge into flour mixture.
- 2. Preheat oil in deep fryer to 350^ degrees. Once the oil is hot, slide the chops or ham pieces carefully into the deep fryer and cook about 6 to 8 minutes, or until nicely browned, making sure the chops are submerged. Do in batches if needed to avoid overcrowding the fryer.
- 3. Mustard Sauce: Mix all ingredients together. Drizzle over cooked meat just before serving, or serve on the side at the table.
AUNT JENNY'S DEEP-FRIED SEASONED PORK CHOPS
These chops are tender and juicy on the inside and crispy golden brown on the outside and so flavorful!! Serve with fried potato wedges for a delicious "finger-food" dinner or with mashed red-skinned potatoes, sweet corn and green beans for a bigger meal! - 1. Preheat deep fryer to 375 degrees.
- 2. Whisk together egg and milk.
- 3. In large bowl combine flour, salt, Lawry's, Garlic powder, pepper, Italian Herb Seasoning, meat tenderizer, Accent, Hungarian paprika and ground Cayenne pepper. Stir until mixed well.
- 4. Pound out pork chops with meat tenderizing hammer on both sides and cut in half along the width so that you have 20 halves.
- 5. Place half of the halves in the egg/milk mixture and let sit for 2 - 5 minutes.
- 6. Coat each piece well with flour mixture until completely covered and gently shake off excess.
- 7. Deep-fry chops, 5-8 pieces at a time (depending on the size of your fryer) for 4 - 5 minutes, until golden brown and crispy. Allow chops that are waiting to be fried to soak in the milk/egg mixture until ready to coat with flour.
- 8. Drain well. Repeat process for remaining chops until all are fried and serve!
- Note: Frank's Redhot sauce is an awesome flavor if sprinkled on top before eating!
DEEP FRIED PORK CHOPS

- Into a 13x9-inch baking dish, pour buttermilk. Add pork chops, turning to coat.
- In a large Dutch oven, pour oil to a depth of 2 inches, and heat over medium-high heat until a candy or frying thermometer registers 350°. In a shallow bowl, whisk together flour, seasoned salt, garlic powder, and chipotle chile powder.
- Working in batches, drain pork chops, and dredge in flour mixture. Carefully add to hot oil. Fry for 8 to 9 minutes or until chops are golden brown and an instant-read thermometer inserted into thickest portion registers 145°.
PAN-FRIED BREADED PORK CHOPS
Look for beautiful good-quality pork, such as Berkshire, and ask for center-cut loin chops with bone. For the bread crumbs, use day-old firm white sandwich bread or French loaf, cubed and whirled in a food processor, for about three cups of soft, fluffy crumbs. Dry, fine store-bought crumbs will not yield the same result. Make sure to fry these chops very gently over medium-high heat, to allow the bread-crumb coating to brown slowly, creating a crisp, golden crust. Serve with a tart salad or braised greens, such as broccoli rabe.

- Lay pork chops on a baking sheet, and season well on both sides with salt and pepper.
- Combine eggs and milk in a low, flat bowl. Season with salt, pepper and the small pinch of cayenne.
- Sprinkle flour generously over the chops on both sides, then shake off excess.
- Submerge the floured chops in the egg mixture, and turn them over several times to coat well. Leave chops in egg mixture for 5 minutes.
- Use your left hand to remove a chop from the batter and drain off excess liquid. Place chop on a baking sheet and, with your right hand, heavily sprinkle with bread crumbs on both sides. Repeat with remaining chops.
- Sprinkle each chop again with crumbs, patting with your hand to make sure crumbs adhere and coat well. Refrigerate, uncovered, until ready to fry.
- Set a wide cast-iron or other heavy skillet over medium-high heat. Add clarified butter to a depth of 1/2 inch. When butter is hot, lay in the chops without crowding, and let them fry very gently, about 4 to 5 minutes per side, until beautifully golden brown. (Turn down heat if they seem to be browning too fast.) If your pan is small, cook in 2 batches and keep finished chops warm in a 250-degree oven.
- Blot cooked chops on paper towels. Transfer to a warm platter or individual plates. Serve with lemon wedges.

- Thaw ham completely and pat dry.
- (When deep frying moisture on the surface will cause a lot of oil popping and splattering, be careful) Marinade (if using) Inject whatever marinade you want to use into several place throughout the ham (I recommend 10-15 spots).
- Place the ham in the steamer basket that comes with most turkey deep fryers and CAREFULLY and SLOWLY lower the ham into the hot oil (350-375 degrees).
- There is a lot of water in the ham!
- Since I couldn't put it in otherwise you must cook the ham about 3 1/2 to 4 minutes per pound depending on the size of the ham and how much it cools down the oil.
- Obviously a smaller ham will take less time if the oil is hotter and a bigger ham will take longer even with the oil hot.
- If when you start the oil cools down don't worry just watch the temp and adjust your cooking time.
- Also for a bigger ham you would want to use less oil in the deep fryer so it doesn't overflow when the ham is lowered inches.
