SAUSAGE QUICHE
Steps:
- In a skillet, brown sausages until no longer pink. Drain and cut into small pieces; place in the pie shell. Sprinkle with cheese. In a bowl, beat eggs; add cream and nutmeg. Pour over cheese. , Bake at 350° for 55-60 minutes or until a knife inserted in the center comes out clean.

DECADENT SAUSAGE AND CHEESE QUICHE (MAKES 2)
These are so delicious that even though the recipe makes 2, I have a hard time sharing because they freeze so well.

Steps:
- Preheat oven to 350 degrees.
- Brush pies shells with egg yolk and bake 10 minutes, according to package directions.
- Saute sausage and onions together until sausage is browned. Drain well.
- Combine eggs, milk, and nutmeg.
- Arrange layers. Sausage mixture, Swiss cheese then cheddar cheese in pie shells.
- Repeat layers.
- Pour egg mixture over all.
- Bake in the 350 degree preheated oven for 45 minutes.
- Combine Parmesan cheese and paprika.
- Sprinkle over quiches.
- Bake 15 minutes longer.
- Remove them from oven and let them (stand/rest) for 10 minutes before slicing.

- In a skillet, fry the sausage and drain. Put the sausage in the bottom of the pie shell. In a mixing bowl, mix together the green chilis, onion, green pepper, garlic and salsa. Spread over sausage. Sprinkle the cheese on next.
- In the same bowl whisk together the milk, sour cream, eggs, salt and pepper. Pour over the cheese evenly. Bake in preheated 350 degree oven 45- 50 minutes until center of pie is done. Sprinkle extra cheese on top of hot pie if you want. Let cool before cutting.
