The history of Black Tea goes back to the 1640s when Dutch Traders introduced tea to society patrons in The Hague and it became a fashionable range. Eventually, England came into the picture, and tea became an integral part of their community.

Steps:
- Place the water in a tea kettle and heat it between 200° and 212°F.
- Measuring the tea leaves, undoubtedly an important step. Up to two grams of black loose tea leaves can be added to make one perfect cup of tea.
- Pre-heating the teapot or cup in which the tea will be served (optional). It is always good to do so before you pour the boiling water into it because the temperature of the water may drop down immediately if the pot or cup is not warm.

- In a saucepan bring the sugar, water and ginger slices to a boil. Turn heat off and let sit 20 minutes to infuse the flavor. Use immediately or store with ginger left in, refrigerated. Make a pot of good first flush Darjeeling tea and sweeten it with the ginger syrup.

- Churpee. Churpees are local snacks made out of Cow’s or Yak’s milk. A Darjeeling original, Churpees are necessarily a milk snack and resembles cheese with coming in both versions of hard and soft.
- Momos. While Momos have become a popular snack in many metropolitan cities, it is one of the most adored plates of food in Darjeeling. Part of Tibetan cuisine, Momos are mostly dumplings made out of flour with vegetable or chicken/pork stuffing and can be cooked through the process of steaming or deep frying.
