SOUTHERN FRIED CATFISH

Fried catfish is a Southern tradition, along with buttermilk hush puppies and buttermilk coleslaw. Try these traditional foods together.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1 tablespoon kosher salt
1/2 teaspoon cayenne pepper
1 (12-ounce) bottle amber beer
4 (6-ounce) catfish fillets
1 tablespoon salt
1 tablespoon cracked black pepper
2 tablespoons granulated garlic
1 lemon, juiced

Steps:

  • Preheat a deep-fryer to 350 degrees F.
  • In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine. Whisk in the beer, being sure to remove any lumps.
  • Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces. In a small bowl add the salt, pepper and granulated garlic. Season the fillets with some of the salt mixture. Reserve the remaining salt mixture for another use.
  • Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don't stick. Fry until brown and crispy, about 3 to 4 minutes. Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

DH has been catching so.. much catfish, that we've come up with another different tried and true. This one is fried in oil with lots of spice. Soaking in buttermilk is good, but if you're not into buttermilk, you may sub milk. Enjoy.

1 lb catfish fillet
1/2 cup buttermilk (or milk)
1/2 cup cornmeal (yellow)
1/2 cup flour
1 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
1/4 teaspoon paprika
1/8 teaspoon cayenne
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/2 cup oil (more if needed)

Steps:

  • Fillet and clean catfish (removing all dark meat); soak in buttermilk or milk for 1-2 hrs; drain well.
  • Spinkle fish with salt, pepper, and herbs.
  • Dredge in corn meal and flour mixture.
  • Cook in a small skillet of 1/2 cup oil, being careful not to overcrowd fillets, probably cooking in two batches.
  • Fry about 6-8 minutes, watching closely so as not to burn, turn once.
  • Serve with a lemon wedge if desired.

DAD'S FRIED CATFISH

Dad was a fisherman. This is a recipe we got from a cousin. Its very good, especially with fresh caught fish. The cayenne pepper is optional and Dad never used it but most people seem to like it. Use your own judgement on that according to what your family likes.

2/3 c yellow cornmeal
1/3 c all purpose flour
1/2 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
1/8 tsp cayenne pepper, optional
1/2 c prepared yellow mustard
2 Tbsp water
4 catfish fillets (1 1/2-2 pounds)

Steps:

  • 1. In a shallow bowl or pie plate stir together cornmeal, flour, salt, paprika, pepper and cayenne pepper (if using). Stir together mustard and water in a small bowl. Spread mustard mixture over both sides of fish fillets, using a knife or spatula. Dip fillets into cornmeal mixture coating both sides well.
  • 2. Fry fillets in an electric skillet or deep fryer set at 375 degrees. Cook fillets 3-5 minutes or until fish flakes easily with a fork. Drain on paper towels and serve hot with tartar sauce if you like.

DAD'S DELICIOUS FRIED CATFISH

My dad has spent many years perfecting this light, crispy breading for deep-frying catfish. He uses bags of frozen filets, and usually thaws them in the refrigerator 2 days ahead.

3 cups white flour
2 cups cornmeal
4 tablespoons paprika
1 1/2 tablespoons salt
1 cup skim milk
2 large eggs
8 lbs catfish, frozen filets

Steps:

  • fill large pot one third to half way with shortening and heat to 350 degrees.
  • rinse thawed catfish filets under cold water.
  • cut each filet into 2 to 3 pieces, keeping them relatively the same size so they will cook evenly.
  • add 1 cup milk and 2 eggs to a shallow dish and whisk together, then dredge the catfish pieces in mixture (this step is optional).
  • add white flour, cornmeal, paprika and salt to a seperate shallow dish and combine thoroughly.
  • bring a few pieces at a time from the milk/egg mixture into the dry mix and dredge and then drop carefully into hot oil.
  • do not overcrowd catfish in the pan!
  • cook until golden brown, they will start to float, maybe 3 to 4 minutes.
  • tip: you may have to flip catfish to cook evenly on other side.
