2 lbs taro root, yam, breadfruit (or combination of )
1 tablespoon butter
2 tablespoons vegetable oil
1 inch fresh gingerroot, crushed
1 garlic clove, crushed
1 teaspoon ground cumin
4 cardamom pods
1/2 teaspoon ground cinnamon
1/4 teaspoon chili powder
2 teaspoons ground coriander
salt and pepper, to taste

Steps:

  • Peel vegetable(s), cut into pieces and steam or boil until half cooked.
  • Cool and cut into 1/2" cubes. Heat butter and oil in large pot or fry pan.
  • Add ginger and garlic and stir-fry over low heat for 2-3 minutes.
  • Add the prepared vegetables and spices, tossing the spices until well mixed before adding.
  • Put a lid on the pan and steam for a few minutes.
  • Season to taste.

I have a breadfruit tree in my backyard and never had any idea how to prepare them...it was all so simple once a friend of mine from Chuuk gave me this easy recipe.

1 mature ripe breadfruit
1 cup brown sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup butter

Steps:

  • Melt your butter, taking care not to brown or burn it, mix in nutmeg and cinnamon.
  • Place aside or better yet, place in a small bowl and place in the refrigerator to set up again.
  • Once you have your ripe breadfruit pull on the stem, it should give way with a tug and when the step comes off, the innards should come with it as well.
  • Sprinkle 1/2 cup of the brown sugar into the hollow breadfruit.
  • Take your hardened butter mixture and with a knife or spatula, place into the breadfruit followed by the rest of the brown sugar.
  • Cover the hole in the top of the breadfruit (I tried using about an inch of a plantain to stuff the hole and it worked pretty well).
  • Place in a baking pan with 2 cups of water and bake at 350 degrees for 1 hours.
  • Allow breadfruit to cool for 15 minutes.
  • Cut into quarters and dig inches.
  • Depending on the consistency of your breadfruit, it might not be a bad idea to prep up an extra 1/2 cup of butter to use once the breadfruit is quartered.

I did a mixture of yam and taro root. Taro has a brownish hairy skin with a white flesh with purple specks while yam has a brownish skin and white crisp flesh.

1 1/2 lbs taro and yams
4 tablespoons wheat starch (Tang Mein flour)
1/3 cup boiling water
4 tablespoons shortening
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon five-spice seasoning
1 teaspoon sesame oil
1/4 teaspoon pepper
2 tablespoons oil
6 ounces chicken meat or 6 ounces pork, diced
4 ounces prawns, diced
3 dried mushrooms, soaked & diced
1/2 cup green peas
1 tablespoon chopped garlic
1 scallion, sliced
1/2 tablespoon chicken bouillon powder
1/2 tablespoon oyster sauce
1/2 teaspoon soya sauce, black (thick)
1/2 teaspoon sesame oil
1/2 tablespoon cornstarch
1/2 teaspoon sugar
pepper
4 tablespoons water
5 cups oil, for deep-frying

Steps:

  • Wash taro and yam skin then pat dry, peel off skin, use towel to wipe any slime -- to prevent this do not wash after peeling) -yam to steam and mashed. Mix and stir wheat starch and water till you have a texture like thick glue, so control the hot water as you go along. Mix in shortening, sugar, salt, five spice, sesame oil and pepper. Divide into 24 balls and flatten set aside.
  • For the filling, heat up 2 Tb oil and saute scallion and garlic till fragrant. Add diced meat, prawns, and mushrooms and stir fry 2 minutes. Add green peas and seasoning (the last of the ingredients except for the oil). Cook till thick and almost dry.
  • Dish and leave to cool. Distribute evenly among the flattened pastry. Enclose the the filling and shape into puffs.
  • Heat up oil and deep fry puffs on the ladle to prevent sticking to the bottom of wok and cause tearing to the tender puffs.
  • Fry till golden brown. Drain on paper towels and serve hot.

This is taken from a cookbook from Barbados. My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish.

1/2 breadfruit, peeled, cored, and sliced into 6 chunks
1/4 cup butter
2 onions, thinly sliced
2 cups milk
2 tablespoons flour
1 cup cheddar cheese, grated
nutmeg, grated, to taste
salt & pepper, to taste

Steps:

  • Preheat your oven to 375 degrees F.
  • Boil the breadfruit in lots of salted water until tender; this takes about 20 minutes.
  • Heat the butter in a saucepan. Add the onions & cook until golden. Remove the onions and set aside.
  • Add flour to same saucepan and cook,stirring for 1-2 minutes. Slowly add the milk, whisking until the mixture begins to thicken. Remove from the heat.
  • Add the grated cheese, nutmeg, salt, & pepper.
  • In a buttered casserole dish layer the breadfruit, onions, and cheese sauce, ending with the cheese sauce.
  • Bake for 25 minutes.

ASARO (YAM AND PLANTAIN CURRY)



Asaro (Yam and Plantain Curry) image

This recipe is an adaptation of asaro, the Yoruba word for a dish of starchy root vegetables simmered in a seasoned tomato- and chile-based sauce. Regional versions of asaro are served all year round across the south of Nigeria and in other parts of West Africa. Traditionally, the dish is made with the West African yam, but you can also use white or purple taro root or unripe plantains. Here, firm, green plantains are combined with white yams in a sauce rich with caramelized shallots, garlic and ginger. There is a slight but welcome heat from a single red habanero dropped in whole to infuse the stew. Coconut milk and an optional spoonful of red palm oil - a floral, slightly smoky oil that is pressed from the fruit of oil palm trees - round out the flavors, and hearty greens cut the richness. Serve topped with crunchy shallots, fresh herbs and a wedge of lime.

1/4 cup neutral oil, such as canola or grapeseed
4 medium shallots, peeled and thinly sliced (about 1 cup)
Kosher salt
4 garlic cloves, smashed and peeled
1 (2- to 3-inch) piece fresh ginger, grated (about 2 tablespoons)
2 teaspoons ground turmeric
2 tablespoons tomato paste
1 whole red habanero or Scotch bonnet chile, pierced all over with a knife
1 (14-ounce) can whole peeled tomatoes with their juices
1 1/2 pounds white or orange yams, peeled and cut into 1 1/2-inch pieces
2 green (unripe) plantains (about 1 pound total), peeled and cut into 1 1/2-inch pieces
1 (13-ounce) can full-fat coconut milk
1 tablespoon red palm oil (optional)
4 cups julienned hearty greens, such as dandelion greens, collards or lacinato kale, tough stems removed
1/4 cup fresh basil leaves, torn
1/4 cup fresh cilantro leaves and tender stems
1 lime, sliced into wedges for squeezing

Steps:

  • Heat a medium pot, large saucepan or Dutch oven over medium. Pour in the neutral oil, add the sliced shallots and cook, stirring frequently, until shallots are caramelized and golden brown, about 5 minutes. Remove shallots from the oil and allow to drain on paper towels or a cooling rack. Season with salt and set aside.
  • Drain all but 2 tablespoons of the cooking oil out of the pot. (Reserve extra oil for another use.) Over medium-low heat, add the garlic, ginger and turmeric to the pot and sauté until softened and fragrant, about 2 minutes. Add the tomato paste and cook, stirring constantly, for an additional 2 minutes or until it begins to stick to the bottom of the pot.
  • Drop in the chile and add the whole peeled tomatoes with their juices, crushing the whole tomatoes with your hands as they go in. Stir to combine ingredients and dissolve the tomato paste, then add 3 cups water and bring to a boil over high heat.
  • Once boiling, season with salt, reduce heat to medium, add the yams and simmer until the yams are just beginning to soften, about 10 minutes. Add the plantains and cook until both are tender but hold their shape, and the liquid is slightly reduced and thickened, 15 to 18 minutes.
  • Stir in the coconut milk and red palm oil, if using, season with more salt and let simmer for another 10 minutes. Add the greens and cook until tender, 2 to 3 minutes.
  • To serve, remove and discard the cooked chile. Ladle the curry into bowls, top with the caramelized shallots, a scattering of basil and cilantro, and several squeezes of lime juice.
