CUCUR UDANG (PRAWN FRITTERS)

This is so yummy to have when you have friends over... Easily available ingredients for a simple appetizer in 15 minutes! Serve with sweet Thai chili sauce.

10 shrimp - peeled, deveined, and chopped
1 onion, chopped
1 potato, diced
1 ½ cups all-purpose flour
1 cup water
½ cup frozen corn
1 egg
1 teaspoon chicken bouillon granules
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
¼ cup hot water
vegetable oil for frying

Steps:

  • Combine shrimp, onion, potato, flour, 1 cup water, corn, egg, chicken bouillon, salt, baking powder, and baking soda in a bowl. Mix in hot water until well combined. Let stand for 5 minutes.
  • Meanwhile, heat oil in a wok over medium- to medium-high heat. Drop spoonfuls of batter into the hot oil. Cook fritters in batches, flipping halfway, until browned on both sides, 3 to 4 minutes. Drain on a paper towel-lined plate.

  • Prepare julienned carrots, sliced shallots, chopped scallions and bean sprouts. Add them into the batter and gently mix well.
  • Heat oil in a pan over medium heat. Once oil is heated, place a flat stainless steel ladle into the oil for 3 minutes. Scoop some batter onto the stainless steel ladle and place a prawn on top. Fry for about 30 seconds. Using another spoon, gently push the prawn fritter off the ladle. Fry both sides until golden brown.
