CUBAN BEEF-AND-POTATO SANDWICHES



Cuban Beef-and-Potato Sandwiches image

Who can resist garlicky steak layered into hero rolls with spicy mayo, marinated onions and crunchy potato sticks? Known as pan con bistec, these sandwiches are incredibly satisfying and ready in no time.

Number Of Ingredients 12

4 beef cube steaks (about 1 pound), pounded to 1/8 inch thick
3 tablespoons extra-virgin olive oil
3 cloves garlic, minced
Kosher salt and freshly ground pepper
1/2 sweet onion, very thinly sliced
1 tablespoon white vinegar
1/3 cup mayonnaise
1 tablespoon green hot sauce
4 small hero rolls (about 6 inches long), split
3 cups potato sticks
2 tomatoes, sliced
Coleslaw, for serving

Steps:

  • Toss the steaks with 1 tablespoon olive oil and all but 1/2 teaspoon garlic in a large bowl; season with salt and a few grinds of pepper. Let sit at room temperature at least 10 minutes.
  • Meanwhile, toss the onion with the vinegar and a few pinches of salt in a medium bowl. Mix the mayonnaise, hot sauce, remaining garlic and a pinch each of salt and pepper in a small bowl. Heat a large nonstick skillet over medium heat. Add the rolls and place a heavy skillet on top of them; cook until browned and crisp, about 3 minutes per side. Wipe out the skillet and heat 1 tablespoon olive oil over medium-high heat. Add 2 steaks and cook until lightly browned, about 1 minute per side; remove to a plate. Add the remaining 1 tablespoon oil to the skillet and repeat with the remaining steaks.
  • Spread the mayonnaise mixture on the rolls. Place some potato sticks on the bottom halves, then top with the steak, cutting as needed to fit. Top with the tomatoes, a pinch of salt, the marinated onion, more potato sticks and the roll tops. Gently press down on the sandwiches. Serve with coleslaw.

1 1/2 pounds flank steak
1 cup olive oil
1 cup fresh cilantro leaves
1/2 cup fresh basil leaves
1/2 cup fresh flat-leaf parsley
1/4 cup fresh lime juice
5 cloves garlic
1 tablespoon kosher salt, plus more for seasoning
1 (14-inch) loaf ciabatta bread
2 tablespoons canola oil
1 medium onion, thinly sliced

Steps:

  • Cut the steak into 2 even pieces and place in a sealable plastic bag or container. Place the olive oil, cilantro, basil, parsley, lime juice, garlic, and 1 tablespoon salt in a blender and mix until smooth. Reserve 1/2 cup of the herb-oil mixture and refrigerate. Add the remaining mixture to the meat, distribute evenly, and marinate in the refrigerator for at least 3 hours.
  • Preheat oven to 375 degrees F.
  • Slice ciabatta loaf lengthwise and remove excess bread from inside, if desired.
  • Remove the meat from the marinade; discard marinade. Place on a paper towel, wiping off any excess marinade. Heat a grill pan over medium-high heat and add 1 tablespoon canola oil. Once the pan is hot, add meat and cook until medium-rare, about 4 to 5 minutes per side, depending on thickness. Place meat on a cutting board and cover with foil. Repeat with other piece of meat, only adding more oil if necessary.
  • Place bread directly on oven rack and toast, about 5 minutes.
  • Heat remaining tablespoon of oil in the grill pan over medium-high heat. Add onions and cook until just beginning to brown but still crisp, about 1 minute. Remove from heat and season with salt, to taste.
  • Take the reserved herb-oil mixture and brush the inside of both halves of bread. Slice steak thinly on the bias and place on the bottom half of the bread. Top with onions and then remaining bread. Slice into quarters and serve.

4 (4 ounce) cube steaks
2 eggs
3 cups dry bread crumbs
1 tablespoon dried oregano
1 teaspoon ground cumin
salt and pepper to taste
1 lemon, sliced
2 cups vegetable oil for frying

Steps:

  • In a shallow dish, combine the breadcrumbs with the oregano, cumin, and salt and pepper. Beat eggs in another shallow dish. Dip each steak in beaten eggs, and then in the breadcrumb mixture. Make sure to cover each steak well with the breadcrumb mixture.
  • In a large, deep skillet, heat 1inch oil over medium high heat.
  • Place the steaks in the oil when it's hot (so that the breading will not stick to the pan). Cook steaks, turning once, until brown for well done and golden brown for medium. Serve with lemon slices.

8 garlic cloves
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon ground cumin
fresh ground black pepper
3/4 cup fresh lime juice (from 4 limes)
1/2 cup orange juice
1 1/2 lbs round steaks or 4 cube steaks
1 tablespoon olive oil
1/2 sweet white onion, sliced thin
1/2 red pepper, sliced into thin strips

Steps:

  • Smash and peel garlic and place in a mortar; sprinkle with salt and let sit for 5 minutes to soften the garlic.
  • Use the pestle to form the garlic and salt to a paste; in a small bowl, combine the garlic paste, oregano, cumin, pepper, lime juice and orange juice.
  • Place the steaks in a single layer in a baking dish; pour the marinade over and let sit about 20 minutes.
  • Heat a skillet over high heat, add oil, and cook the onions and peppers, while stirring, until softened, anout 2 minutes; remove to a bowl.
  • Place steaks into the skillet and cook for 2 minutes, then flip and cook another 2 minutes.
  • You will probably have to do this in two batches.
  • Return the onions and peppers, along with the steaks, to the skillet, cover, and cook another minute.
  • Place steaks on a serving plate covered with the onions and peppers.
  • If desired, you can cook the marinade for a couple of minutes and spoon that over the steaks.

½ teaspoon cumin seeds
¼ cup orange juice
2 tablespoons vegetable oil
2 tablespoons Montreal-style steak seasoning
2 ¼ teaspoons lime juice
1 ½ teaspoons dried oregano
1 ½ pounds beef rib-eye steaks

Steps:

  • Place cumin seeds into a small skillet over medium heat; stir constantly until seeds turn dark brown and smell toasted, about 1 minute. Immediately pour seeds into a bowl to stop the cooking. Mix cumin seeds with orange juice, vegetable oil, steak seasoning, lime juice, and oregano in a bowl.
  • Place steaks into a large resealable plastic bag, pour orange juice marinade over the meat, and squeeze out air. Seal bag and turn it over several times to coat meat with marinade. Refrigerate at least 30 minutes, or longer for extra flavor.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove steaks from marinade, shaking off any excess. Discard used marinade. Grill steaks on the preheated grill until seared on the outsides and still slightly pink in the centers, 6 to 8 minutes per side. An instant-read meat thermometer inserted sideways into the center of the thickest steak should read 145 degrees F (65 degrees C). Let steaks rest for 3 minutes before slicing.

1 lb top sirloin steak (cubed)
2 tablespoons olive oil
1 1/2 cups brown rice
1/2 cup flour
12 garlic cloves
2 cups broccoli
2 carrots
2 cups fat-free chicken broth

1/4 teaspoon pepper
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon nutmeg

Steps:

  • Cook rice. Heat olive oil in non stick pan. Cut cubed steak into bite size pieces and coat with flour. Toss in pan until browned on all sides. Slice garlic very thin and chop carrots and broccoli into bite size pieces. Add these to the steak along with all the spices. slowly add the chicken broth. Simmer until thicken stirring regularly. Add the beans and heat through. Serve over rice. Enjoy the taste and aroma!

1/4 cup vegetable oil
2 pounds cube steak, cut into 6 pieces
Salt
pepper
1/2 cup flour plus 1 tablespoon
3 large onions, sliced thinly
2 cups low-sodium chicken stock or water

Steps:

  • Heat oil in large, heavy-bottomed skillet over medium heat. Sprinkle both sides of steak with salt and pepper.
  • Put 1/2 cup flour on a plate, and coat each piece of meat. Shake off excess flour and add steak to pan, working in batches. Cook about 3 or 4 minutes per side, or until browned, and remove to a platter.
  • Add onions to skillet and cook about 3 minutes or until wilted. Stir to help loosen browned bits from bottom of pan. Lower heat, then sprinkle with 1 tablespoon flour. Stir constantly, cooking for about 4 minutes.
  • Gradually add water or stock, continuing to stir to keep lumps at bay. Bring mixture to a boil, then turn heat to low and add steaks to pan. Simmer, partly covered, for 45 minutes. Remove to a platter and taste pan sauce, correcting for seasoning.
