3/4 pound thin boneless pork loin chops, cut into strips
1 tablespoon canola oil
1/8 teaspoon pepper
1 tablespoon Dijon mustard
4 multigrain tortillas (10 inches)
8 ounces sliced deli ham
8 slices Swiss cheese
4 thin sandwich pickle slices
1/4 cup thinly sliced red onion

Steps:

  • Preheat oven to 350°. In a bowl, toss pork with oil and pepper. Place a large skillet over medium-high heat. Add pork; cook and stir 2-3 minutes or until browned. Remove from heat., To assemble, spread mustard onto center of tortillas; layer with ham, cheese, pickle, onion and pork. Fold bottom and sides of tortillas over filling and roll up. Place on an ungreased baking sheet; bake 4-6 minutes or until heated through.

Fragrant, savory, and succulent pork roast the whole family will love. Serve with cumin scented black beans, and mashed sweet potatoes.

4 cloves garlic
2 teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon ground coriander
3 tablespoons lime juice
3 tablespoons orange juice
3 tablespoons olive oil
1 ½ teaspoons white wine vinegar
1 (4 pound) pork shoulder roast

Steps:

  • Grind garlic, salt, black pepper, cumin, oregano, and coriander into a paste using a mortar and pestle.
  • Transfer half of the garlic and spice paste to a bowl; add lime juice, orange juice, olive oil, and vinegar. Beat the mixture with a whisk until smooth.
  • Cut several inch-long, deep slits into the fatty side of the pork roast. Rub the reserved garlic paste into the slits.
  • Put rubbed roast into a gallon-size resealable plastic bag. Pour the liquid mixture over the roast, squeeze as much air from the bag as possible and seal; refrigerate, turning occasionally, 8 hours to overnight.
  • Remove pork roast from refrigerator, put into a roasting pan, and let warm at room temperature for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Roast pork in preheated oven for 30 minutes, reduce heat to 375 degrees F (190 degrees C), and continue cooking until pork is no longer pink in the center, about 2 hours more. An instant-read thermometer inserted into the center should read at least 170 degrees F (75 degrees C).

1 large onion, cut into wedges
3/4 cup reduced-sodium chicken broth
1 cup minced fresh parsley
7 garlic cloves, minced and divided
2 tablespoons cider vinegar
1 tablespoon plus 1-1/2 teaspoons lemon juice, divided
2 teaspoons ground cumin
1 teaspoon ground mustard
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1 boneless pork shoulder butt roast (3 to 4 pounds)
1-1/4 cups fat-free mayonnaise
2 tablespoons Dijon mustard
10 whole wheat hamburger buns, split
1-1/4 cups shredded reduced-fat Swiss cheese
1 medium onion, thinly sliced and separated into rings
2 whole dill pickles, sliced

Steps:

  • Place onion wedges and broth in a 5-qt. slow cooker. In a small bowl, combine the parsley, 5 garlic cloves, vinegar, 1 tablespoon lemon juice, cumin, mustard, oregano, salt and pepper; rub over pork. Add to slow cooker. Cover and cook on low until meat is tender, 6-8 hours., Remove meat; let stand for 10 minutes before slicing. In another small bowl, combine the mayonnaise, mustard and remaining garlic and lemon juice; spread over buns. Layer bun bottoms with pork, cheese, sliced onion and pickles; replace tops., Cook on a panini maker or indoor grill until buns are browned and cheese is melted, 2-3 minutes.

8 slices boiled no-sugar-added ham (about 1/4 pound)
8 slices Swiss cheese (about 1/4 pound)
8 slices Mojo Pork Roast, recipe follows
1 kosher dill pickle, thinly sliced lengthwise
2 teaspoons yellow mustard
4 outer leaves Boston lettuce
1 (5-pound) bone-in fresh pork shoulder half (preferably arm picnic)
1 (16-ounce) bottle no-sugar-added Italian dressing (recommended: Paul Newmans Olive oil and Vinegar)
2 limes, juiced
2 tablespoons chopped fresh cilantro leaves
1 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
3 bay leaves

Steps:

  • On a microwave proof plate, layer 2 slices ham, 1 slice cheese, 2 slices roast pork, 1 pickle slice and 1 more slice of cheese. Heat in the microwave for about 30 seconds--just long enough to melt the cheese. Spread 1/2 teaspoon mustard on the inside of a lettuce leaf, top with the layered meat and cheese, and roll it up. Secure with a toothpicks. Repeat to make 4 total.
  • Preheat oven to 325 degrees F. Score the fat and skin on the pork shoulder in a hatch mark fashion. Place the shoulder in a roasting pan lined with a rack, and pour the dressing over it. Rub the shoulder with the remaining ingredients and roast uncovered for 1 hour. Tent the shoulder loosely with aluminum foil and continue roasting while basting occasionally, until the meat starts to easily pull apart from the bone, about 1 1/2 hours more. Transfer the shoulder to a cutting board and let rest for 15 minutes. Trim off any excess fat and cut into thin slices. Juice of 8 lemons
Juice of 8 limes
12 cloves garlic
1 bunch fresh cilantro sprigs
2 cups kosher salt
2 tablespoons ground cumin
1 (8-pound) pork shoulder butt
2 ounces freshly ground black pepper
12 whole wheat tortillas
Yellow mustard, to taste
1/2 pound sliced ham
1 pound sliced Swiss cheese
Pickles, to taste
1 head lettuce, finely chopped
2 tomatoes, sliced

Steps:

  • Preheat oven to 375 degrees F.
  • In a blender mix the lemon juice, lime juice, garlic, cilantro, salt, and cumin, until well combined and a paste forms. Place the pork in a large roasting pan and rub the paste all over pork. Place the roasting pan in the oven and roast the pork for 4 hours. Remove the pork and let sit for 10 minutes. Once a bit cooled, using 2 forks, pull the pork into shreds.
  • Heat the tortillas on stove for 30 seconds each side. Spread mustard on each warmed tortilla, add some pulled pork, a slice of ham, a slice of Swiss cheese, some pickles, lettuce, and a slice of tomato. Wrap up the tortilla and serve.

I was tired of the same old, same old doings with a leftover pork roast, so tried this out one night for dinner. Now we're hooked on 'em!

½ pound cooked pork roast, shredded
2 (10 inch) flour tortillas
¼ cup barbeque sauce
4 slices Cheddar cheese, halved
½ small onion, thinly sliced into rings
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spoon 1/2 the shredded pork onto each tortilla; top each with 2 tablespoons barbeque sauce, 4 Cheddar cheese halves, 1/2 the onion rings, salt, and pepper. Fold opposing edges of each tortilla to overlap the filling. Roll 1 of the opposing edges around the filling into a burrito-shape. Wrap each tightly with aluminum foil and place on a baking sheet.
  • Bake in the preheated oven until cooked through and cheese is melted, 15 to 20 minutes. Cut each wrap in half to serve.

  • Heat a large skillet over medium heat. Add olive oil and onions to skillet and cook 3 to 4 minutes, until soft and translucent. Add garlic and 1/4 teaspoon each salt and pepper and cook another minute. Remove to the slow cooker.
  • Bump heat to medium high heat. Rub boneless pork butt with remaining 1/2 teaspoon kosher salt, 1/4 teaspoon pepper, cumin and oregano. Sear all sides of the pork (add more olive oil if needed). Place in slow cooker. Add 1/4 cup water to the skillet that the pork was cooked in and scrape all the browned bits off the bottom. Pour into the slow cooker.
  • Add orange juice and lime juice to the slow cooker and stir to combine. Cook on high for 4 hours or low for 6 to 8 hours. Remove from slow cooker and shred. Add back to the slow cooker and stir around in the remaining juices.
  • In a small bowl, combine the mustard and mayo. Spread evenly on the tortillas. Layer each tortilla with 3 slices of ham, 2 slices of swiss, 3 pickles and a portion of the pulled Cuban pork. Fold in short edges then roll tightly. Slice in half and enjoy.
