Steps:

• Cream shortening and sugar until fluffy.
• Mix in eggs.
• Add spices, and 4 to 5 cups of flour, to make a very thick dough.
• Mix in hot coffee and vinegar.
• Drop by spoonfuls onto cookie sheet (I line with parchment).
• Bake at 375 degrees for 10-12 minutes,

Steps:

• 1. In a large bowl, thoroughly combine the shortening and sugar. Add molasses, egg, salt, and spices; beat well until blended.
• 2. In a small bowl, stir together the boiling water and soda and add to the first mixture.
• 3. Stir in the flour and mix well. Drop from spoon onto a greased baking sheet. Bake in a preheated 350-degree oven for 10-15 minutes. Cool on wire rack.

• To Make Glaze: Combine the confectioner's sugar, 1/4 cup cocoa, and enough water to achieve a desired spreading consistency. Beat until smooth.
