This is a very tasty crustless quiche. You can substitute the filling for different ones you may like better, but these are my favorite. By the way, this is Atkins® induction-friendly.

6 ounces bacon, diced
½ pound asparagus, cut into 1-inch pieces
4 ounces baby bella (cremini) mushrooms, sliced
4 ounces shredded Swiss cheese
1 ½ cups heavy whipping cream
4 large eggs
¼ teaspoon salt
freshly ground black pepper to taste

Steps:

  • Position oven rack to center position. Preheat oven to 400 degrees F (200 degrees C). Butter a 10-inch pie plate.
  • Heat a large skillet over medium heat; cook and stir bacon in the hot skillet until crisp, 5 to 10 minutes. Remove bacon and drain all but 2 tablespoons grease from skillet. Cook and stir asparagus and mushrooms in the remaining bacon grease until asparagus is tender, about 5 minutes.
  • Remove skillet from heat and toss bacon into asparagus mixture. Spread asparagus-bacon mixture into the prepared pie pan. Sprinkle Swiss cheese over mixture.
  • Whisk cream, eggs, salt, and pepper in a bowl. Pour egg mixture over asparagus-cheese mixture.
  • Bake in the preheated oven until quiche is set and a knife inserted in the center comes out clean, about 30 minutes.

1/2 lb fresh asparagus, trimmed and cut into 1/2-inch pieces
1 1/2 cups shredded swiss cheese, divided
1 1/3 cups canned crispy French-fried onions, divided
6 eggs
1/2 cup milk
1/2 cup grated parmesan cheese
1 tablespoon all-purpose flour
1/4 teaspoon garlic powder
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven 350 degrees.
  • Grease a 9-inch deep-dish pie pan.
  • Arrange asparagus, 1 cup Swiss cheese and 2/3 cup French-fried onions in plate.
  • Beat eggs, milk, Parmesan cheese, flour, garlic powder and pepper in a medium bowl. Pour into pie plate.
  • Bake 30 minutes or just until center is set. Sprinkle with remaining 1/2 cup Swiss cheese and 2/3 cup onions. Bake 5 minutes more or until onions are golden.
  • Cut into wedges and serve.

This is a variation on a crustless quiche I found here at recipezaar. Since my boyfriend is a picky eater I used asparagus instead of spinach and we were very pleased! Feel free to add sausage, or pour into a frozen crust if you'd like more flavor.

1 tablespoon olive oil
1/2 lb asparagus, chopped
1 medium onion, chopped
12 ounces button mushrooms, roughly chopped
3/4 cup fat-free cottage cheese
1/2 cup fat-free cheddar cheese
3 eggs
2 garlic cloves
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Preheat olive oil in a large skillet over medium heat. Add asparagus, onion and mushrooms. Saute, stirring often, for 5 minutes, or until slightly softened. Remove from heat; allow to cool slightly.
  • Mix cottage cheese, cheddar cheese, eggs, garlic, salt and pepper in a large bowl. Incorporate cooled vegetables. Stir until well incorporated.
  • Spray a pie pan with nonstick cooking spray. Pour ingredients and distribute evenly.
  • Bake for 45 minutes or until knife inserted in the quiche comes out clean. Allow quiche to rest for 5 minutes before serving.

This is the best and CREAMIEST crust-less quiche I've ever eaten and I eat a lot of quiche! I asked my friend, Michele, to share her recipe with Zaar and she was kind enough to oblige. Thanks, girlfriend! Top this yummy quiche with tinned asparagus, chopped bacon, or tinned salmon. It makes it's own "crust" as it cooks. Very nice with a green salad on the side.

1 1/2 cups milk
1/4 cup butter, melted
1 cup cheddar cheese, grated
1 medium onion, chopped
1/2 cup self-rising flour
salt & pepper
325 g asparagus, canned drained (optional)
220 g salmon, canned (optional)
1/2 cup bacon, chopped and pre-cooked to half done (optional)

Steps:

  • Preheat oven to 180 degrees Celsius.
  • Beat eggs and milk.
  • Add melted butter and flour. Beat to combine.
  • Add cheese and onion, stir.
  • Pour into greased pie dish.
  • Arrange asparagus spears, salmon, or bacon on top.
  • Bake in center of oven for 45 minutes.

4 asparagus spears (trimmed and cut diagonally into 1-inch pieces)
4 fresh mushrooms (thinly sliced)
1/2 teaspoon dried tarragon (I used 1 1/2 tsp fresh)
3 large eggs
1/3 cup whole milk or 1/3 cup half-and-half
2 ounces less fat Philadelphia Cream Cheese (softened)
1/3 cup baking mix (like Bisquick)
salt and pepper, to taste
12 grape tomatoes, cut in half

Steps:

  • 1. Butter two individual 5 or 6 inch tart pans. I used one 6 inch tart pan and one 14 ounce ramekin. Preheat oven to 375 degrees F.
  • 2. Divide asparagus and mushrooms evenly between the two pie pans. Sprinkle tarragon over the asparagus and mushrooms. (I strongly recommend fresh tarragon if you have it - it's a perennial herb, grows easily, and is delicious in particular on eggs and mushrooms).
  • 3. Beat eggs in a large bowl until foamy. Add half-and-half, cream cheese, Bisquick, salt, and pepper. Continue to beat until well mixed.
  • 4. Divide egg mixture evenly between the two pans. Top with grape tomatoes cut side up.
  • 5. Bake in a 375°F (190°C) oven for 30 minutes or until eggs are puffed and tops are golden brown.

I love scallops this way. Great brunch recipe. The cook time includes both the time to pre-bake the crust and the final baking time.

9 inches pie crusts
1 -1 1/2 cup raw bay scallops or 1 -1 1/2 cup sea scallops, cut into smaller pieces
1 -1 1/2 cup heavy cream
4 eggs
salt
fresh ground black pepper
thyme, to taste
3 tablespoons crumbled crisp bacon

Steps:

  • Bake the pie shell at 425F for 15-20 minutes, until the bottom is set and the edges are slightly browned.
  • Then brush with beaten egg yolk and bake another 2 minutes to seal the crust.
  • Arrange the scallops in the pastry.
  • Blend the heavy cream and eggs together to make a custard mixture and season with salt and pepper.
  • Add the thyme and bacon.
  • Pour over scallops.
  • Bake at 350°F until the custard is barely set, about 30 minutes.
  • A knife inserted at the center should come out clean.
  • Note: Do not overcook or the custard will curdle and become watery.

8 oz asparagus (cut in 1" pieces and cooked)
6 large eggs
2-1/4 c shredded mozzarella cheese, reserve 1/4 c.
2 clove garlic
salt & pepper to taste
2 c baby spinach leaves
2 Tbsp parmesan cheese, canned grated

Steps:

  • 1. Grease a 9-inch pie pan. Microwave asparagus pieces until cooked.
  • 2. Beat all six eggs and reserve 1/4 cup.
  • 3. Combine eggs, 2 cups mozzarella, garlic, salt, pepper, and spinach. Pour into prepared pie pan.
  • 4. Layer asparagus on top of egg mixture in pan. Pour reserve 1/4 cup egg on top. Sprinkle remaining 1/4 cup mozzarella and parmesan cheese on top.
  • 5. Bake at 375 degrees F for about 30 minutes or until edges start to brown.

1 cup canned miniature corn cobs, drained
1/4 cup instant potato flakes
1 cup chopped green onions or 1 cup scallion, 6-8
1/2 lb scallops, 1/4 in. slices if large
1/2 lb light jarlsberg cheese, shredded
6 large egg whites
1 cup evaporated skim milk
2 teaspoons soy sauce
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 deg.
  • Snap tips off asparagus. Cut off & discard any woody ends.
  • Chop spears in 1/4 inches slices.
  • Plunge, with tops, into boiling water 3 minute.
  • Drain.
  • Oil spray 9" pie plate.
  • Line with half the asparagus and half corn.
  • Cover with potato flakes then the onion.
  • Arrange scallops on top, about an inch from the rim.
  • Sprinkle on half the cheese.
  • Whisk egg whites. Whisk in milk, soy sauce, and pepper.
  • Pour half the egg mixture into pie.
  • Top with remaining asparagus, corn, & cheese. Pat down.
  • Pour on remaining egg mixture. Bake 40-45 minutes.
