Steps:
- Boil butter or margarine and syrup together. Add soda. You should end up with a frothy mixture after soda is added. Stir in coconut, flour, sugar, and oats, and stir well. Press mixture lightly into a large baking tray.
- Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool, and cut into bars.

MOM'S APPLE CRUNCH
I've been making this recipe for over 20 years! The autumn season just wouldn't be the same without it. A generous scoop of this dessert with vanilla ice cream on top is a heavenly delight. Peaches can used instead of apples. Either way, a favorite with our family.

Steps:
- Preheat oven to 350 degrees.
- Combine the first 5 ingredients.
- Mix well and place in a greased 9x13 baking dish.
- Combine oats, flour, brown sugar, baking soda, baking powder and melted butter.
- Crumble together well, and sprinkle over the apple mixture.
- Bake for 35 to 40 minutes.
- Serve warm with vanilla ice cream.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square tin and line with baking parchment. Stir the melted butter and vanilla together in a bowl. Mix the caster sugar, flour and cocoa together in another bowl.
- Pour the bowl of wet ingredients into the dry and beat together, then add the egg and beat again until combined. Press into the prepared tin. Brush the top with water and sprinkle over the granulated sugar.
- Bake for 30-35 mins. Leave to cool slightly in the tin for 5 mins before slicing into squares and transferring to a wire rack to cool completely.

- Melt butter over medium heat in a large, deep saucepan. Add cocoa powder and whisk until well combined.
- Unwrap 24 caramels and add them to the saucepan. Cook and stir until melted, about 5 minutes. Stir in condensed milk and vanilla.
- Add mini marshmallows and cook, stirring constantly until melted and smooth, about 5 minutes. Add salt and crispy rice cereal and stir until fully incorporated.
- Place a sheet of parchment or waxed paper on a flat surface. Lightly grease hands with cooking spray and press cereal mixture together to form sixteen 3-inch circular patties. Set aside until completely cool, about 30 minutes.
- Store cookies between layers of parchment or waxed paper in an airtight container up to a week on the counter, or up to 2 weeks in the refrigerator.
