SIMPLE CRANBERRY CHICKEN RECIPE
This moist, delicious chicken is full of flavor and uses just a handful of simple ingredients!

Steps:
- Chop onion and set aside.
- In large bowl whisk together cranberry sauce, dressing, chicken broth, soup mix, chopped onion, salt, and pepper.
- Divide chicken into two gallon size freezer bags. Be sure to label bags!
- Divide cranberry mixture into freezer bags over chicken. Freeze until needed.
- Thaw; pour contents into slow cooker. Cook on low for 4-5 hours or high for 2-3 hours, or place in casserole dish and bake at 400 degrees for 30-40 minutes.

- Place chicken in a 3-qt. slow cooker. In a small bowl, combine the cranberry sauce, barbecue sauce, onion, celery, salt and pepper; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Serve with rice. Freeze option: Cover and freeze cooled chicken and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Reheat in a foil-lined 13x9-in. baking dish in a preheated 325° oven until heated through, covering if necessary to prevent excess browning.

A nice easy dish for those busy days around the holidays. Put this on before going shopping and dinner is waiting when you get home! Serve with rice or couscous and a veggie. Boneless chicken thighs could be used also. EDITED TO ADD: The 6 hour cooking time is based on my very old crockpot, but I have noticed my newer crockpot cooks hotter, so 4 hours on low may be plenty.

CRANBERRY "DUMP" CHICKEN OAMC
I found this on another website and had to try it. I just made this up and put it in my freezer and here's my suggestion: Double the sauce/marinade. The recipe the way it is there is not enough sauce for 1lb. of chicken. If you double it, it is just right. The marinade as I made it smells wonderful. I used 1-14.5oz. can of whole berry cranberry sauce, that was enough to double the sauce and still have a little leftover. Go ahead give it a try, let me know what you think.
