STRAWBERRY-QUINOA SPINACH SALAD



Strawberry-Quinoa Spinach Salad image

We make quinoa with spinach and strawberries year-round, but it's most fun when we go to the farmers market to get the season's first berries. -Sarah Johnson, Indianapolis, Indiana

Number Of Ingredients 8

2 cups water
1 cup quinoa, rinsed
6 cups torn fresh spinach (about 5 ounces)
2 cups sliced fresh strawberries
1/2 cup chopped walnuts, toasted
1/2 cup reduced-fat red wine vinaigrette
1/4 cup shredded Dubliner or Parmesan cheese
1/4 teaspoon freshly ground pepper

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, 12-15 minutes or until water is absorbed. Remove from heat; fluff with a fork. Cool slightly., In a large bowl, combine spinach, strawberries, walnuts and quinoa. Drizzle with vinaigrette; toss to coat. Sprinkle with cheese and pepper.

1 cup arugula or 1 cup spinach
1 grilled chicken breast, sliced
4 strawberries, sliced
1 ounce goat cheese, crumbled
1 tablespoon honey-roasted pecans, chopped
2 tablespoons balsamic vinaigrette

Steps:

  • Place a bed of arugula in a bowl. Top with remaining ingredients in order. Drizzle with vinegrette.

  • To cook quinoa: Rinse quinoa with cold water in mesh strainer. In a medium saucepan, bring 1 ½ cups of water to a boil. Add in quinoa and bring mixture to a boil. Cover, reduce heat to low and let simmer for 15 minutes or until quinoa has absorbed all of the water. Remove from heat and fluff quinoa with fork; place in large bowl and set aside to cool for about 10 minutes. You should have a little over 2 cups of quinoa.
  • To make dressing: place olive oil, lemon juice, garlic, sugar/honey, basil, and salt in blender or food processor. Blend/process for 10-15 seconds; fold into quinoa.
  • Gently fold in strawberries and basil and any other add-ins you'd like such as chickpeas or chicken. Add salt or extra basil to taste. Place salad in refrigerator for few hours to let flavors marinate together. Once ready to serve, garnish salad with goat cheese, sunflower seeds and extra basil. I serve mine over a bed of spinach. Enjoy!
