SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

Steps:
- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

- In a large skillet over low heat, melt cream cheese and butter; stir until smooth. Add the milk, garlic powder, salt and pepper. Cook and stir for 3 minutes or until thickened. , Add the chicken, broccoli, zucchini and red pepper. Cook over medium heat for 3 minutes. Reduce heat; cover and cook 5 minutes longer or until vegetables are tender. Serve with fettuccine.

CREAMY CHICKEN ENCHILADAS WITH ALFREDO SAUCE

Steps:
- Lightly brown chicken in skillet with oil.
- After chicken has a light brown color, add chopped onion, 1/2 cup water and 1/2 jar of salsa to pan and bring to a boil.
- Reduce heat and let simmer on low-medium heat for about 15 minutes, stirring and breaking up chicken as it cooks. Stir often.
- Add in spices while it is cooking.
- Preheat oven to 385.
- Spray a baking dish with non-stick cooking spray or coat with a light coating of oil.
- Add 1/2 jar of alfredo sauce to chicken mixture and stir to combine.
- Add in sliced jalapenos and 1/2 the cilantro.
- Shredd the chicken with 2 forks.
- Spoon equal amounts of the chicken mixture into the 6 tortillas, rolling the tortillas and placing them open side down into the baking dish.
- In a bowl, mix the rest of the alfredo sauce, the rest of the salsa, and 1/2 cup water.
- Pour that over the top of all of the enchillada rolls.
- Sprinkle with the mozzarella cheese and cover with tin foil.
- Bake for 30 minutes.
- In the last 5 minutes, remove the tin foil and allow to brown in oven.
- Top with shredded lettuce, tomatoes, cilantro and sour cream.

- Turn your instant pot to the saute setting so it can start heating up while you add the ingredients into it. Add in your water. Then add in the chicken pieces. Pour in the penne, alfredo and half of the picante sauce. Don’t stir.
- Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When the time is up, move the lid to venting and let the pressure release. Open the pot and stir in the other half of the picante sauce.
- If there is too much liquid in the pasta you can turn the pot to saute and stir in a cornstarch slurry. Mix 1 Tbsp cornstarch with 1 Tbsp of water and stir until smooth. Add the mixture into the Instant Pot and the sauce will thicken up instantly.
- Scoop the pasta into bowls and enjoy. You can top it with some parmesan cheese or mozzarella cheese.
