SLOW-COOKER HONEY GRANOLA



Slow-Cooker Honey Granola image

It's so simple to put this granola together, and it really helps with breakfast on busy mornings. Change up the fruits to fit your preferences or the seasons. -Arisa Cupp, Warren, Oregon

Number Of Ingredients 8

4 cups old-fashioned oats
1 cup sunflower kernels
1 cup sweetened shredded coconut
1/2 teaspoon salt
1/2 cup canola oil
1/2 cup honey
1 cup chopped dried pineapple
1 cup chopped dried mangoes

Steps:

  • In a 3-qt. slow cooker, combine oats, sunflower kernels, coconut and salt. In a small bowl, whisk oil and honey until blended. Stir into oat mixture. Cook, covered, on high 2 hours, stirring well every 20 minutes., Remove granola to baking sheets, spreading evenly; cool completely. Stir in pineapple and mangoes. Store in airtight containers.

2/3 cup honey
1/4 cup vegetable oil

Steps:

  • Place all ingredients into your slow cooker and mix well.
  • Cook on low for 4 or more hours. Stir occasionally and leave the lid ajar.
  • Store in an airtight jar.
  • Customize this recipe with your favorites by adding raisins, any kind of nut or sesame seeds.

In a large measuring cup or small glass bowl, combine the honey, oil, peanut butter, cinnamon and vanilla. Microwave for a minute, stir and microwave an additional 30 seconds as needed, to melt everything and allow it to combine smoothly. (In lieu of a microwave, this can easily be done in a small saucepan over medium heat, stirring frequently.)
  • Pour the liquids over the oats in the crockpot and stir well to thoroughly coat. Place the lid on the crockpot, leaving it slightly vented. Cook on HIGH for about 2 hours, stirring every 30 minutes. Stir in the dried fruit right at the end. Spread the granola across a large baking sheet and let it cool before transferring to an airtight container. Enjoy!
