My family and I love really beefy tasting stew but with rising cost I wanted to create the same great taste without having to use a lot of stew beef. This resulted in such a great crock pot stew that my kids think is better than my previous meat laden stews! Bonus: There were leftovers for my husband and my lunch!

1 lb stew beef, cut into bite size pieces
1 lb baby carrots
6 medium washed unpeeled potatoes, quartered
1 medium onion, sliced
1 small bag frozen corn
1 pkg lipton beefy onion
1 can(s) beef broth
1 can(s) beef gravy
1 c water
1/4 c all purpose flour
salt and pepper to taste

Steps:

  • 1. Put the flour, salt and pepper in a bowl or zip lock bag for dredging the stew meat. Add stew meat and toss to coat.
  • 2. Heat 2 tablespoons of oil in a frying over medium heat. Shake off excess flour from the stew meat and place in frying pan.
  • 3. Cook until all sides are golden brown. Transfer beef to crock pot. Add quartered potatoes, carrots, corn and onion.
  • 4. In a medium bowl combine the Lipton Beefy Onion, beef broth, beef gravy and water. Pour over meat and vegetables, stir well.
  • 5. Cover with lid, set crock pot to low and cook for 8-9 hours. When serving add additional salt and pepper to taste.

2.5 lbs stew meat
(1) 16 oz frozen green beans
3 whole carrots ((peeled and sliced))
3 russet potatoes peeled and diced ((peeled and diced into large pieces) )
1/2 onion ((chopped))
2 bay leaves
(1) 14 oz can of crushed tomatoes
1/4 cup Worcestershire sauce
2 cups water
1/2 tsp Salt
1 tsp Pepper

Steps:

  • In a 6 quart crock pot, place the stew meat and the potatoes on the bottom.
  • Place the green beans, onions, and carrots on top.
  • Pour the crushed tomatoes, Worcestershire sauce and the water on top. Season with the salt and pepper.
  • Cover and cook on low for 7-8 hours, or high for 3.5-4 hours.
  • Allow it to sit for a few minutes before serving.

¼ cup all-purpose flour
½ teaspoon salt

1 clove garlic, minced
1 bay leaf

1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

1-1/2 pounds potatoes, peeled and cubed
6 medium carrots, cut into 1-inch lengths
1 medium onion, coarsely chopped
3 celery ribs, coarsely chopped
3 tablespoons all-purpose flour
1-1/2 pounds beef stew meat, cut into 1-inch cubes
3 tablespoons canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) beef broth
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1/2 teaspoon browning sauce, optional
Minced fresh thyme

Steps:

  • Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. This beef stew has a tomato based sauce, giving it a little different flavor. Cooked it up one day and got rave reviews from my husband, who is not a stew fan usually. It's also very, very easy and low in calories. I put it in a calorie calculator and it's only about 100 calories per cup. I like to put it together the night before and put the whole crock in the fridge, then in the morning I just pop it into the warmer and let it go!

1 lb baby red potato (leave them whole)

2 (1 1/4 ounce) packages Lipton beefy onion soup mix
1 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Brown the meat in a few tablespoons of olive oil over high heat. Just enough to sear it and seal in the juices.
  • Combine the meat and all the ingredients in the crock pot, cook on low at least 6 hours, but can go for 10 or more.
